These St. Patty's Day goodies turned out so cute! I just love them. The gnome theme is going to stick around for the entire year, I think. It will be interesting to see how many different ones I can make by the end of 2023.

Dear Gus & Magnus,
Erin's grandmother came over to America from Ireland, so she takes St. Patty's Day a little more seriously than we do. She invited the Ridgeway kids down to eat cookies and play in the front yard after work today. We played (and ate cookies) until Mom had dinner ready. You two didn't want to leave and Magnus shouted "Matt Erin Matt Erin Matt Erin" as I carried him back to our house.

I grabbed some corned beef a few days after St. Paddy's Day and decided to make it on a weekend day. Unfortunately, I forgot that the last recipe I chose required hours and hours of cooking. So, with my family being hungry and my time being short, I decided I'd do the corned beef in the IP.
I decided I'd do mashed potatoes rather than putting them in the IP, but I did carrots and cabbage in there. Looking through the tips and the recipe comments, I didn't put the carrots in with the corned beef, and I cut the beef's cook time down by 10 minutes to make up for the extra time it would cook with the veggies.
At 80 minutes, the beef wasn't fully cooked and looked a little pale on the top side. I added about 2 lbs carrots and cooked for 7 minutes. Then I added the cabbage and cooked for 3 more minutes. The extra time helped the meat finish cooking and the carrots and cabbage were a good doneness for me.
I liked the oven-cooked version better but this worked in a pinch.

We've been furious here on the island regarding almost all the politicians leaving to pander to a genocidal administration.
I humbly request that when you see those fools shaming us abroad to remember that they have expressly ignored the will of the people. We marched in our hundreds of thousands for weeks and still they ignore our every request.
Ireland stands with Palestine always, those stooges from the Dáil do not represent us and will be removed in the upcoming General Election. They needed their last free holiday on the taxpayer given they'll never have power again.
If you are to engage in the festivities this weekend I request you utilise the black shamrock, and not the green. That is what we're doing here.
