Back on my mando sw shit for a sec, but the writing potential for Din was just so good. He's being framed as a knight for the whole series, from fighting dragons to wearing the shining armor. It would have been so nice to have seen that knight character transition into a king arthur type storyline. He's already found excalibur (the darth saber) he has merlin (Luke and/or Grogu), it wouldn't be hard to have a night sister or a sith play morgana. Star wars is already so heavily inspired by fantasy, it would have been so interesting to see a modern retelling of king arthur through Din.

I also feel Din's character lacked a lot of character development throughout the series. I would have liked to have seen his character develop from being a father to being a king. Both require the same mindset and responsibilities. I feel that would have made him an incredibly compelling character. His kindness, willingness to care, and force of will that he developed would have made him a great king. He doesn't want the responsibility of being king, but who else is going to do it. So he works to live up to his responsibility, and gets what needs to happen done.
