Corn Tomato Chowder
Delicious and a beautiful presentation…yellow corn, amber broth, golden rutabagas, orange carrots, and red tomatoes.  Warm colors for a great hot soup.
1 - 12 oz. pkg. frozen corn, defrosted
3 T. margarine or olive oil
1 med onion, chopped
1 clove garlic, minced
1 stalk celery, chopped
1 lg. carrot, scraped, chopped
1 rutabaga, scraped, chopped
3 med. tomatoes, chopped
1 t. salt
¼ t. white pepper, black will do too
½ t. dry basil
3 c. vegetable stock
1 c. half and half
In a large soup pot, saute onion, garlic, celery, carrot and rutabaga in margarine until soft.  Add tomatoes, salt, pepper, basil, stock, and corn.  Reduce heat, cover and simmer until vegetables are fork tender, about 30 min.  Add half and half, heating through without boiling.

My first attempt at making vegetarian chili is a success! Thank you @synystersparrow & @raynakingstonauthor for the assistance with chopping and taste testing. I’m so excited for my new getting healthy and meat free (and not going back this time) journey! This was a simple to make food too! It’s two diced medium yellow onions, 2 cans diced fire roasted tomatoes, 2 cans black beans, 2 cans dark red kidney beans, 4 beef bouillon cubes, and 2 cups hot water mixed with spices (garlic, chili powder, and some different types of ground pepper). This is easily made vegan by leaving out the bouillon. I sent this to a good friend of mine today who is looking for simple ideas for quick vegan recipes, and thought I might share it with you all also: Sautee a bunch of veggies with dash of salt, pepper, garlic powder, red pepper flakes, and throw in with some pasta. Done. (Foundation veggies for me are onion, garlic, bell pepper, mushrooms, spinach). Spinach and mushrooms have a lot of protien (portabella are perfect for extra, otherwise baby bella will do). Zucchini and eggplant are filling too if you have it. In this case I used vegan parmesan which is just ground walnut/sunflower seeds, nutritional yeast which gives it a cheesy flavor, salt, pepper, onion and garlic powder (pasta sauce could be used also). If you don't want pasta do the same, but put in a wrap. (If I do that then I add some red wine vinegar for flavor), if you like avocado, add that. Or you can put over brown rice or quinoa. Peas are also a good addition for protein as well if putting over rice/quinoa. (Again, whatever is on hand).
