Bob didn't know John was Captain America (news that definitely would've been global especially with him killing someone on foreign soil) and it's been 3 years since TFATWS in Cap 4 which takes place a few months before Thunderbolts, so he was definitely under for a pretty long time. Ideally, he went Void when they first gave him the serum, they somehow knocked him out, and then they sealed him away and tried to hide the fact that the sentry project worked.

Yes, it is a plausible scenario

However, I am not always a fan of the paradigm "America does something and automatically the whole world finds out and it has the same impact all over the world". In a hyper-connected way, news travels, but in the MCU we have already seen that around the rest of the world we have other superhumans, so it is plausible that different states could have internal problems more relevant than those caused by America.

(Although America is good at making its problems, everyone's problems, like a capricious child.)

Returning to Bob, he was traveling, but we do not know where he was before Malaysia, we can assume that he was in countries where drug use is less controlled by the police, or that he traveled in a group, or that he had a wife, like in the comics.

If the MCU does not reveal the details to us, we can assume anything about the pre-Malaysia period, in Malaysia and hibernation.

Are we gonna talk about the way the mcu timeline definitely points to Bob having been kept in that box for at least a few years?

I thought about it, I think it's plausible that he was inside the cryostasis sarcophagus for at least a couple of months. Because from what I understood the laboratories in Malaysia had been closed recently, but the section chief, (the guy killed by Yelena), seems to have hidden the success of the project from Val. The section chief in fact thought that Yelena was there for the discovery, not to destroy the data. Also John says that he eliminated some people who knew about the Sentry project, but he doesn't specify when, but probably in the last few months, exactly like Yelena. So it's plausible that he had been asleep for a couple of months, or at least a year.
