Yes it's Saturday morning, yes there is snow and yes I am skiing today, but no teaching this weekend... this is a relax and play weekend, skiing with my wife and enjoying the winter wonderland in the Laurel Mountains just east of Pittsburgh. All this means a more relaxing start to the day, and I'm thoroughly enjoying a frothy mug of bulletproof coffee. Black coffee with 2 tablespoons of MCT oil, frothed until creamy and smooth, is my new keto-friendly self-indulgence. However, it's not just a treat to be enjoyed for those of us on a ketogenic diet (vegan ketogenic in my case)... the healthy fats in the MCT oil (refined coconut oil), also known Medium Chain Triglycerides, are quickly processed by the body and go straight to the liver to be converted into energy (ketones) and the coffee helps with some calorie burn as well. The MCT oil is a great alternative to putting dairy (or worse, non-dairy!) creamers in your coffee, as it doesn't trigger any systemic inflammation, nor does it trigger any insulin spikes (nobody wants to start the day riding the blood sugar rollercoaster!!). After an intense travel and work schedule where despite my best efforts to eat clean and vegan and get the exercise I need and desire to thrive, I have spent the last week dialing in the diet, ramping up on the intermittent fasting, changing my workouts and today I slipped back into ketosis. For me, a side from the numerous physical and metabolic benefits, the greatest part is the light that literally comes on in my head as my brain shifts into overdrive, but is running so efficiently that it doesn't even seem like its working. Not that I feel older today than I did yesterday, or last year or 5 years ago... quite the opposite, I can't remember feeling this good since I was in my late 20's.
