Slice zucchini and yellow squash (you can get fancy with the slicing- longitudinal, transverse etc). Add 1/2 - 1 table spoon of olive oil (or cooking spray), garlic powder and rosemary, and mix until vegetables are coated. Bake covered in foil, at 350 degrees for 15-20 minutes. This is honestly one of the easiest side dishes ever!

Turned out better than expected. Shrimp Coconut Pesto Zucchini Pasta. WHAT A MOUTHFUL. Used one serving (1/8 to 1/6 box) of whole wheat spaghetti and one very large zucchini (spiralized). Marinated shrimp in some coconut milk, blended basil leaves, threw in habanero, scallions, grape tomatoes and something else I know I'm missing. Cooked over medium heat. Added spaghetti and zucchini at the end. I know this is not a recipe but...It's almost midnight, and it'd have to do. Ha! Nigerian stew in the oven? Every lazy cook's dream, biko! Zero oil and fall-off-the bone chicken for the win! ○ Blend peppers, tomatoes (my ratio of peppers to tomatoes- 3:1, I'm not a fan of tomatoes), habanero, onions and garlic. ○ Season chicken (be sure to stab it with a knife several times, and force that seasoning in!) with salt/adobo/maggi, rosemary, garlic, all spice (and whatever else you deem fit). ○ Pour pepper blend over chicken, mix and let sit in fridge overnight. ○ Bake covered at 400 degrees for 90 minutes. ○ If needed, add tomato paste to thicken. Breakfast of champions. Crustless quiche (thank you to my FBFF @ntigirl !) Four servings: 4 eggs, 1 cup of almond milk, spinach, feta cheese crumbles, mushrooms, tomatoes, onions, bell and habanero peppers and garlic. Pan fry vegetables (except for spinach) for a few minutes (I do this to extract excess water, so my quiche isn't soggy. In addition, be sure to dry off the spinach after washing). Add seasoning. Place vegetables evenly in pan. Add feta cheese. In a bowl, mix eggs, almond milk, rosemary and thyme. Pour mixture into pan. Bake at 375 for 45 minutes. Wings and meatballs! #meatlover I'm all about spending as little time in the kitchen as possible (ain't nobody gat time), so these staples help keep my prep time to a minimum (well the chicken sits in the oven forever). I decided to experiment with the chicken marinade: sunflower seeds, unsweetened apple sauce, maggi, all spice, jerk seasoning, thyme, garlic, onions and habanero peppers. Let it sit overnight, placed mixture in a foil pan, covered, and let bake for 90 minutes between 375 and 400F. Around the 80th minute, I added cornstarch (one tsp to two tsps of water depending on desired thickness) to thicken the mixture. I like my wings a little browned so I turned the temperature up to 450 and baked it uncovered. Meatballs: 1lb of ground beef/turkey, 1 egg, breadcrumbs (optional), herbs (thyme, basil, rosemary), salt, minced garlic, diced onions and bell peppers. Combine ingredients and roll into balls (the smaller, the easier it is to cook evenly). Spray pan with cooking spray, or coat with oil. Place balls evenly on pan. Bake for 20 minutes at 350, flipping at the 10 minute mark. Phew. Have a great week folks! Busy schedule?? Doesn't mean your waistline (and wallet) have to suffer, spending money on crappy (albeit delicious) food. ● Jerk chicken breasts with green peppers, red onions and mushrooms. ● Chicken curry (made in the oven- it's been a hit since the first time I made it two weeks ago). Season chicken with spices and herbs of choice. Marinate chicken in coconut milk (look for lower calorie options, and don't use the entire can!). Add onions, bell & habanero peppers to mixture. Add curry powder and mix evenly. Let sit overnight. Bake covered, at 350-375 for 90-100 minutes. Mine might have hit the 120 mark. SPOTLIGHT: Farmer's Walk
I know, I know! Where have I been right? *awkward silence*
In order to avoid that conversation, I'm going to carry on like I never left.
Where were we?
Ah ha! New exercise!
How many of you like walking? Do you find it challenging?
Let's just say I never imagined walking would be this difficult...until I discovered the farmer's walk.
I curse the day I discovered it! I wish I never had!
By definition, the farmer's walk is really just holding a heavy weight and walking for a specified distance. Sounds easy? WRONG. Don't let the walking fool you, man. Don't. It fooled me.
The crazy thing about the farmer's walk is EVERYTHING BURNS. Legs, arms, glutes, my fingers, my teeth, my toes (okay now I'm exaggerating, but you get the point)...just errthang on fire! Just imagine, holding onto weights for the entire duration of your incline walk? Yeah. I did mine on a treadmill...to the highest incline. 
The farmer's walk is a great total body exercise, and I would recommend it for those who have little time to spare for exercises, those who want to try something new, and those who want to test their limits. I'd recommend it to any and everyone, really.
During my first attempt, I HAD to swap my 15 lb weights for 10s after the first 12-15 minutes. I wasn't trying to end my life surrounded by a bunch of sweat-stained machines, and heavy breathing people. 
My advice to anyone attempting the farmer's walk is to use weights that are challenging, but not so that you are unable to hold for a considerable amount of time (yeah, put down those 30s, will you?). This is unless you are doing interval training, which would mean shorter bursts of high intensity exercise. In that case, go heavy! You'll have plenty of time to recover. 
Yesterday, I interspersed incline farmer's walking with running on a slight incline. It was TOUGH. Using the songs as my markers, I'd walk on an incline (11-15) with weights and then run on a much, much, much lower incline (3.0) and moderate speed (5.5 -6 mph). It was KILLER.
Here's hoping my legs will forgive me.
