I celebrated my second Vegan-versary this past weekend (March 3rd) and combined it with a post-birthday celebration with my family since I was out of town on my birthday - I sliced up this @cocobellacreamery cake with Honeecomb on top and Chocolate Fudge on the bottom and served it to my entire non-vegan family AND THEY LOVED IT! 🎉🎉🎉 This photo doesn't do the cake justice. I planned a @pbfit.official recipe for you all for #nationalpeanutbutterloversday yesterday but I didn't have enough time to test and perfect it 💔 To make up for it, I'm sharing one of my favorite powdered peanut butter tricks: •Step one: take a shot glass •Step two: scoop shot glass about 80% full with PB Fit •Step three: trickle filtered water into PB Fit filled shot glass •Step four: stir with mini spoon ~Voila! I'm a firm believer in having multiple breakfasts - I didn't have ingredients to make vegan cream cheese so I topped some crackers with my carrot lox 🥕😋 Also sipping on this @popandbottle I found at the store yesterday, I think I like this Vanilla Bean more than the Cacao! If I can restrain from drinking the whole thing, I might try it with some coffee ☕👌🏽 I'm taking it slow this morning with the intention to workout in the evening after work. My schedules are varying daily and weekly so I have to figure out the best times to fit in errands and workouts without overworking or underworking myself, even if my workout ends up being simple walks and hikes.
