When you only want a little onion...

Here are a selection of intriguing dry onions that were calling to me from the shelves of my local produce department. These work great if you're cooking for one or really just only want a little onion literally in the dish you're fixing. They taste just like their full size counterparts but don't result in a cut raw onion leaving it's pungent scent throughout your refrigerator. These little fellas got my cooking juices flowing as far as how to use them in soups, stews, salads, sandwiches, tiny thin slices on hors d'oeuvres with a toothpick stuck through...the possibilities are limitless. To think this started with wanting just a little onion...

Epazote

Basil...Sage...Mint...nope...it’s epazote which is an herb that is used when you’re cooking dry beans/dried peas/lentil dishes.  This herb has a strong scent that does not transfer to the dish you’re cooking.  It heightens and intensifies the flavors.  This year I’m planting their seeds to add this to my herb garden.  Fingers crossed...

I toss a generous handful in when I’m boiling beans/dried peas/lentils in a covered pot.  Then, I take the beans/epazote off the burner to finish cooking in the residual heat from the pot and hot water.   Leave the epazote leaves in the bean dish or pluck them out - either way works.  Continue making the bean dish as you would normally.  I found epazote in the hanging packaged herbs section in my local grocers produce department.  It does well dried if you have more than you’ll get through quickly.  Just wrap a rubber band around the stems of the excess and hang in the kitchen to let the drying preservation take place.

Panko crusted burgers. A crunchy experiment that was a lot of fun. I rarely have ingredients for experimental cooking and I like what I landed on. It took a few variations before we sorted what cooks the beef through without burning the crust. Now I have a different way to enjoy a burger that can be pairs with sauces and more for a meal!
