A traditional French beef stew with soft beef chunks, flavorful veggies, and creamy garlic mashed potatoes that is simmered in red wine.

Ingredients: 2 lbs beef stew meat, cubed. 1 bottle 750ml red wine preferably Burgundy. 3 cups beef broth. 1 onion, chopped. 2 carrots, sliced. 3 cloves garlic, minced. 2 tablespoons tomato paste. 2 tablespoons all-purpose flour. 2 tablespoons olive oil. 1 teaspoon dried thyme. 1 bay leaf. Salt and pepper to taste. 4 large potatoes, peeled and cubed. 1/2 cup butter. 1/2 cup milk. Salt and garlic powder for mashed potatoes.

Instructions: In a large bowl, coat the beef cubes with flour and season with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown the beef cubes in batches until seared on all sides. Remove and set aside. In the same pot, saut chopped onions, sliced carrots, and minced garlic until softened. Deglaze the pot with red wine, scraping up any browned bits. Add beef back to the pot. Stir in beef broth, tomato paste, thyme, and bay leaf. Bring to a simmer, then cover and cook on low heat for 2-3 hours until the beef is tender. While the stew is simmering, boil peeled and cubed potatoes until tender. Drain and mash with butter, milk, salt, and garlic powder to make garlic mashed potatoes. Serve the French beef and red wine stew over a bed of garlic mashed potatoes. Garnish with fresh parsley if desired. Enjoy!
