Cajun pasta;
Spice mix; 1 teaspoon each of the following.
Smoked paprika
Onion powder
Garlic powder
White pepper
Black pepper
Sea salt
Oregano
This will be used to season any chicken, sausage, shrimp or tofu You’re adding to the dish as well as the sauce.
In a large skillet cook and season your choice of protein, cook fully and set aside. While your choice of pasta boils, finely dice a shallot.
Roughly Chop and de-seed whole yellow or red bell pepper along with a fresh tomato, I remove the core, seeds and skin from my tomato before chopping.
Drain your pasta and set aside to cool. In a LARGE heated skillet melt some butter about tea-tablespoons worth along with a teaspoon or a squeeze worth of tomato paste and the diced shallot. Let it cook down for five to ten minutes depends on how hot your pan is.
Add in a cup and a half of heavy cream, your protein, and your vegetables. Let the heavy cream come to a steady bubble stirring occasionally before adding 2/3 cup of Parmesan cheese and the rest of your spice mixture. Mix and let it come to a bubble again before adding in your pasta and mixing it very well together.
Boom baby it’s literally that easy! Pro tip I used pre cooked grilled chicken from the grocery store and just seasoned it up in a pan at home.

Vegan/Vegetarian shopping list:
Pre Made salad bags (it’s a lot cheaper to just buy bagged salad and add to it, then buying a bunch of ingredients that will go bad if not used)
Make a list of fruits and vegetables that you like and get them (some times if you get the funky shaped ones you get a few cents off, even if you don’t that stops the funky shaped produce from being tossed)
Nut butters (most almond and peanut butters are vegan, jelly and Jams aren’t because they’re made with gelatin)
Bread, check the ingredients because a lot of breads are accidentally vegan/vegetarian ( Vegetarian/Vegan (link) Sandwiches will be your best friend)
Pasta (like bread a lot of pasta is accidentally vegan, CHECK THE INGREDIENTS)
Rice and beans are some of the cheapest things to buy, buy them dry and you can have them for a while in your pantry
Google vegan ramen, (if you’re like me and love spicy ramen then you’ll be happy to know Samyang 2x spicy hot chicken flavor Ramen in the red pack is VEGAN they use artificial chicken flavor rather then animal products. Vegan Kimchi regular and spicy is a lot easier to find then you may think just look for ones without fish sauce and shrimp)
Tofu (tofu is very versatile and it’s great source of vegan/vegetarian protein made from soy, it takes flavor beautifully and it’s relatively cheap firm/extra firm is best)
Cheese (there are so many vegan cheese options, for grated parmigiana follow your heart has both grated and shredded, Violife has a block. Violife has the best shredded substitutes, and singles. Daiya is a little weird in my opinion however they’re cheddar dairy free Mac and cheese is amazing (you just gotta use different pasta then it comes with)
Meat substitutes ( We’ve come a long way with decent vegan meat substitutes, beyond meat makes a whole variety of plant based meat substitutes that are very tasty especially if you’re still craving that meaty texture. Impossible meat substitutes also has amazing plant based meat substitutes, Impossible also has vegan chicken nuggets that tastes like McDonald’s and even have dino shaped ones. Light life has everything from vegan sausage crumbles to Bacon, the vegan bacon and hot dogs are amazing)
Eggs (just egg and simply egg are planted based substitutes for eggs, they’re liquid like an egg beater but can be used in place of eggs from a scramble to a baking ingredient)
Dairy (Vegan milk/coffee creamer you got options coconut, almond, soy, oat, pea protein. Pick what you like best. Personally California farms Oat milk in original and California farms oat vanilla creamer are my favorites. I’ll throw cream cheese and Yogurt in here as well Kite Hill regular and Strawberry cream cheese are my favorite, Kite Hill blue berry, and Strawberry vegan yogurt are my favorite. MIYOKO’S vegan butter)
Snacks (Lenny and Larry’s plant based chocolate chip cookies, Spudsy sweet potato puffs they have a million different flavors I like the hot fries. Vegan rob’s dragon puffs these are the vegan equivalent to hot Cheeto puffs but without the red dye 40. Vegan rob’s also has cheese puffs)
Sauces (Anne’s goddess dressing is very tangy, Diaya blue cheese and Caesar dressings are amazing, can be thick though, they also have ranch but I got a vegan homemade ranch recipe. Hot sauce, Franks, Cholula, Tabasco, and Tapatío are vegan. Ketchup& mustard are vegan. Hellmans and follow your heart have vegan mayonnaise,Sir Kingston’s and Follow your heart also have chipotle Mayo. Follow your heart also has vegan sour cream)
Seasonings (seasons you should have in your cabinet click here, the dollar tree sells all these for a dollar and most grocery stores sell adobo)

VEGAN TACO BELL/ CHIPOTLE BOWL:
Starting off with the potatoes first;
Peel and cube however many white potatoes you want, toss them on a baking tray with olive oil, cumin, onion powder, garlic powder, chili powder, smoked paprika.
Bake at 350 for 20 minutes
Rice;
Your choice of washed white or brown rice, season the rice water with the same seasonings you used for the potatoes. Olive oil, cumin, onion powder, garlic powder, chili powder, and smoked paprika. Cook the rice for as long as your rice says too.
Protein;
I used tofu, but you can use your favorite vegan or non vegan meat or replacement. In a frying pan brown up some green bell pepper, your GROUND protein of choice, and once again the same seasonings for the rice and potatoes sans olive oil. Onion powder, garlic powder, cumin, black pepper, smoked paprika, and chili powder. Cook until done.
Taco Bell sauce;
Plain vegan or non vegan yogurt - use however much you’re gonna need. Vegan or non vegan Mayo - Sour cream would work too. Couple spoon fulls of salsa. Chili powder, onion powder, garlic powder, smoked paprika and cumin. Mix together and put it in the refrigerator.
Toppings;
Anything you want! I used tomato, lettuce, onion, and vegan Mexican cheese, and hot sauce.

Vegetable soup
I’m back with another soup recipe that’s vegan this time cuz ofc it is :)
Crock pot or stove pan is up to you.
Ingredients:
Potatoes
Black beans
Kidney beans
Chickpeas
Stew tomatoes or fresh tomatoes
Corn
Vegetable broth
Seasonings;
All purpose adobo
Black pepper
Sea salt (if you need salt)
Serve it over cooked wild/purple rice or white rice. You could also add cooked tofu or something for extra protein if you wanted or needed

Taco potatoes/ Spiced fried eggs and potatoes
Olive Oil in a pan let it get hot while you chop potatoes, tomatoes, and white onion. Add in your chopped potatoes I’d suggest letting them get brown while you’re chopping the veggies, toss the potatoes add in the tomato and onions, season with adobo, black pepper, sea salt, garlic powder, onion powder, cumin, chili powder, and paprika. And a squirt of tomato paste. Mix them around and let it cook! Make some pockets in the vegetables crack in some eggs, put a cover on the pan, let it cook! Congratulations now you have some egg fried potatoes thing, top with salsa or chili oil or hot sauce, whatever you like! It’s fine! Yes it tastes good!
Make it as dinner, a side, add in any meat or tofu do what you want with it, it’s your food. Don’t like runny yolk? Scramble the eggs, cook the yolk, don’t even have to use eggs.

Lazy girl “Horchata”
This is the lazy version of horchata and not traditional but Yk what it tastes the exact same and it’s easier and vegan shut up
I used a plastic cup for measurements that’s how lazy this recipe is;
One cup milk (I used cashew)
Half cup vanilla creamer (I used oat)
Few healthy shakes of ground cinnamon
And I made a strawberry version so I added some sliced strawberries
Blend that shit, strain that shit in a fine strainer with a paper towel in it and enjoy
Longer and more or less traditional version;
Two cups washed white rice , one cup water, two cinnamon sticks. Soak it three hours or overnight
Add it to the blender, blend and strain with a fine mesh strainer!! Back to the blender, add in one cup of milk, one can of sweetened condensed milk, and evaporated milk (if you want to make it vegan just use a vanilla plant based creamer). Splash of vanilla extract. Blend that bitch (add strawberries if you’re making a strawberry flavor. And strain)
Serve on the rocks (over ice) with a sprinkle of cinnamon on top.

Mamì Vida’s Taco Soup Recipe;
This is my mami’s taco soup recipe, I’m just veganizing it for this recipe but follow it to your own liking.
This is made in a crockpot/slow cooker. It cooks for five hours on high then around 4-8 on low, basically let cook all day while you’re at work or something.
Browned ground beef or cooked chicken seasoned with taco seasoning(if you’re veg use impossible beef or chicken)
Add two cans of stew tomatoes, two cans of drained black beans, two-three cans of drained corn, one can of rotel chilies, and the meat to the crockpot.
Top it with cheese, sour cream, avocado, hot sauce, tortilla chips basically anything you like it’s super good.

I made this rice recipe last night and honestly I don’t know what to call it, it’s sorta Mexican/Spanish inspired but not so call it what you will;
Mexican/Spanish Inspired rice recipe:
Rice of choice (I used white minute rice)
Olive oil
Chopped white onion and garlic (optional)
Jar tomato sauce/pasta sauce
Onion powder
Garlic powder
Black pepper
Salt (I didn’t use any but I don’t like to salt 75% of things I eat)
Ground cumin
Paprika
Chili powder
Adobo (original)
Start by washing your rice, (You don’t have to but you should), then follow the directions on your rice. Once your rice is cooked add to a bowl and heat up the same pot/pan you used to cook the rice. Add in a little bit of olive oil like a 1/2-1 tablespoon, let it heat up and now is when you add your chopped onion and garlic, I used onion and garlic powder for this cuz I was lazy and didn’t feel like chopping. Let that brown/get hot then add your rice back in and let a crust form on the bottom of your rice before mixing it up and letting the rest get a little crust. Some parts will burn a little bit that’s good we want that. Once your rice has a crust add in all the seasoning listed above, there’s no measurements for this because I don’t use any but DONT SKIMP on the seasoning!!!. Once it’s seasoned mix making sure to distribute the seasonings properly, now add in about a cup-cup and half of sauce (depending on how much rice you’ve made) and stir, cover and let it sit for 10-15 minutes.
I put a little bit of hot sauce on mine when I eat it but that’s my business. Rice is a dish that makes a lot and you can have it as a side, or the main dish, you could add your choice of protein to this as well, even some vegetables.

You should always have olive oil, lemon juice, and lime juice on hand

Asian inspired PeanutButter garlic soy sauce noodles:
So I made this for dinner just how just playing around with what I had and it came out better then expected, it’s not authentic hence Asian inspired but it’s still really good.
Ingredients:
Sesame oil, green onion, two garlic cloves, onion powder (optional), ground ginger or Fresh, cooked pasta, soy sauce, crushed red pepper, peanut butter. 1 to 1/2 cup of reserved pasta water
Pre cook your pasta, heat a pan with sesame oil over med/high heat, once sizzling toss in your chopped green onion (I didn’t have one so I subbed onion powder, chopped garlic, ginger, and red pepper. Mix and let it simmer.
Add in a spoon full (a tablespoon) maybe two, of peanut butter, I used smooth. Let that cook down and mix it in with the oil, after a few minutes it’ll start looking like cooked tomato paste this is when you add in your water, mix together and let it sit for a second and bring down the heat to low, add your pasta and mix, then add a generous amount of soy sauce (I used low sodium) and mix it well again. Then serve and enjoy.

Asian inspired tofu/chicken/rice sauce!!
Sesame oil in a hot pan, be generous with it. Fresh or powdered ginger and garlic, let that get to know each other and get fragrant, add in onion powder, half a cup of honey and mix constantly is gonna bubble let it do that! Add in red pepper flakes, a little bit of water to thin it out. Constantly stir and adjusting the heat you want bubbling not boiling or burning! Mix 1:1 ratio of corn starch and water add it in and whisk to thicken! Add in hot sauce and ketchup about a tablespoon this is gonna cut the sweet and bring heat. If too thick add in some water, a little bit! Whisk and let it heat for a few minutes and boom baby it’s that easy

Vegan/Vegetarian homemade tomato sauce:
This is a basic red sauce that’s absolutely delicious and it’s a lot simpler then you may think;
Start by heating some olive oil in pan over medium heat, throw in some chopped white onions and garlic, cook until fragrant. Add in some diced tomatoes and cook down for about 5-10 minutes, Add in 1 cup of tomato paste OR 1 cup jar sauce and let it come to a bubble, now’s the time to add in fresh basil leaves if you have them on hand, Reserve a half cup or a cup of pasta water, half cup if you used jar sauce, a cup if you used tomato paste. After you’ve drained your pasta add in 1 tablespoon of vegan butter if you used tomato paste, add in 1/2 tablespoon of vegan butter if you used jar sauce. Stir in the butter and let bubble, drop the heat to low so it doesn’t burn and add in 1/2 teaspoon of paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, optional 1/2 teaspoon crushed red pepper flakes. And black pepper and sea salt to taste. Toss the sauce with your pasta and enjoy

Vegan spicy blush pasta/Vegan Gigi Hadid Pasta:
Start by heating a frying pan with a splash of olive oil over medium heat, and Start boiling water for your pasta (pro tip add sea salt to your pasta water)
Add chopped onion and garlic to the pan and cook until brown and fragrant, add 1/2 cup tomato paste or you can use plain jar sauce (these measurements don’t matter use your heart). Let the paste cook down and come to a slow bubble, add in a cup of vegan heavy cream (Silk and Violife have vegan whipping cream, that’s a fancy way of saying heavy cream), mix tomato paste and cream together and let it simmer and bubble again. Once bubbling add in 1/4 OR a 1/2 cup vegan Parmesan (follow your heart makes vegan grated Parmesan), mix together and let it melt and bubble a little, now turn the heat on low and let it cook as you reserve a half cup of pasta water and drain your pasta. Add in one tablespoon of vegan butter, and a 1/4 teaspoon of lemon juice and the Pasta water, mix and let it bubble. Once bubbling add in two teaspoons of paprika, two teaspoons of crushed red pepper, one teaspoon of onion powder and one teaspoon of garlic powder. Black pepper and sea salt to taste. Mix in your spices and add your pasta, mix to combine and keep on low heat and enjoy.

Grocery’s are expensive however, being vegan/ vegetarian can be a lot more expensive especially if you’re buying a bunch of ingredients and have no idea what to make or even where to start with a vegan/vegetarian shopping list
Vegan ranch recipe:
There’s ranch then there’s ✨ranch✨
1/4 cup vegan mayonnaise (follow your heart and Hellmans make vegan mayonnaise)
1/4 cup vegan sour cream (follow your heart makes vegan sour cream)
2 tablespoons pickle juice (optional) I use dill
1 tablespoon buttermilk (Vegan butter milk is your choice of plant based milk and lemon juice ie. Cup of milk and 1/2 cup of lemon juice)
1/8 teaspoon salt
1/4 teaspoon dried parsley
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
A shake of black pepper
Put Mayo, sour cream, and pickle juice in a bowl, add in buttermilk and seasonings stir together and chill for 30 minutes before serving. Keeps for a week in the fridge, store in a mason jar or squeeze bottle
