Lazy girl “Horchata”
This is the lazy version of horchata and not traditional but Yk what it tastes the exact same and it’s easier and vegan shut up
I used a plastic cup for measurements that’s how lazy this recipe is;
One cup milk (I used cashew)
Half cup vanilla creamer (I used oat)
Few healthy shakes of ground cinnamon
And I made a strawberry version so I added some sliced strawberries
Blend that shit, strain that shit in a fine strainer with a paper towel in it and enjoy
Longer and more or less traditional version;
Two cups washed white rice , one cup water, two cinnamon sticks. Soak it three hours or overnight
Add it to the blender, blend and strain with a fine mesh strainer!! Back to the blender, add in one cup of milk, one can of sweetened condensed milk, and evaporated milk (if you want to make it vegan just use a vanilla plant based creamer). Splash of vanilla extract. Blend that bitch (add strawberries if you’re making a strawberry flavor. And strain)
Serve on the rocks (over ice) with a sprinkle of cinnamon on top.

How long have you studied mushrooms and what's your favorite one?
I've studied mushrooms outside of academia since 2014 (a little before then too but I remember getting more serious about being self-taught that year). I have a bachelor's degree in studio art but while I was getting my degree, I would mushroom hunt every day on campus walking to & from class. So I started to photograph and identify what I found and eventually joined my local mycological society to attend free educational lectures/events. I'm committed to learning more about mushrooms every day, and will probably continue to do so for the rest of my life.
I don't necessarily have a favorite; like I literally love all species because they're all so different. BUT I love to cook with Candy Cap mushrooms (Lactarius rufulus/Lactarius rubidus) and share them with other people. This mushroom has an aroma chemically similar to maple syrup when it's dried. The fresh mushroom has the chemical compound, quabalactone III, that becomes sotolon when it's dried...which is the same compound found in maple syrup and fenugreek. I've added them to cookies, horchata, and coffee...even in small amounts the aroma is pretty potent. The taste isn't remarkable or sweet but the aroma is persistent; if you dried these mushrooms in say, a hat, or basket, it's going to smell like maple syrup forever/until you scrub it down with soap. It also changes your body odor temporarily. I've made my own Vegan Candy Cap mushroom cookie recipe & if you're interested I can repost it.
Anyway, every mushroom species is different, unique, and beautiful!

I still have a sweet tooth. This place I’ve moved to has a ton of vegan options, and I LOVE getting vegan milkshakes, donuts, and scones. I get them too often. During the summer I get horchata constantly. Come get some sweet treats with me and we can share them with each other 🤗🤗

I'm finally meal planning
This week I made some really good dishes! Only one of them I have made before. I'm trying to get out of my comfort zone and cook more from my wonderful cookbooks.
Monday, I just whipped up a stroganoff!! I'm trying to like tempeh, but the texture is so off to me.
I ended up making horchata on Tuesday and it was so fun and so worth it. I will be making horchata CONSTANTLY now.
Wednesday, I made cashew kibbeh from my North African cookbook!!
On Thursday I was so tired and had a lot of homework to do so we ordered out. :/
Yesterday I made the char kway teow (炒果条) and it was SO DELICIOUS. I will be making this more often. I got the recipe from a vegan cookbook.
For dinner today I'll probably make the kapusta z grochem, which is a Polish comfort dish. It's super good and I made it for a polish friend one time, and they loved it.

Ok, we have taken Rugal out on the porch for natural sunlight and exercise because he was getting restless. We have retrieved ALL the packages from the lobby. We have consumed BREAKFAST (chicken maple sausage patty things, banana, energy drink). We are finishing up OVERDUE EDITING. Then we will send TWO EMAILS (cousin, work). Then we will REFILL OUR WEEKLY PILL CASE. Then we will SHAVE OUR HEAD, APPLY PSORIASIS TREATMENT, & SHOWER. After that we will TAKE MORE TRASH DOWN TO THE DUMPSTER. Then we will HANG UP OUR CLOTHES and CLEAN until friends get here with bedframe this evening. Oh! We will also walk to that Mexican place and pick up AN ASSORTMENT OF VEGAN TACOS & HORCHATA for friends. Also we need to order a new cane lol

What are some of your favorite things to do in the summer time? 💖💖💖
Summer has meant very different things to me at different times in my life, and different geographic locations.
Sometimes it was hiding inside and staying near ac. Sometimes it was hiding inside and suffering the heat lol.
Nowadays, it’s a big road trip, a few smaller road trips, it’s embracing the sun and heat, it’s riding bikes on cool days, it’s not taking enough time to breathe and self care (😥 honestly), it’s hiking, it’s flirting with friends in the sunshine, it’s tank tops and short shorts alllllll the time.
It’s (vegan) milkshakes and Horchata constantly. Unreasonable , god destroying, heathen praising amounts.
