INGREDIENTS:
• 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
• 1/2 tsp dried thyme
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 Tbsp avocado oil or olive oil
• 2 cups fresh pineapple chunks (divided)
• 1/2 cup fresh pineapple juice (blend a few pineapple chunks with a little water, then strain)
• 1 Tbsp arrowroot powder
• 3 Tbsp Dijon mustard
• 2 Tbsp raw honey
• 2 garlic cloves, minced
• 3 cups cooked brown/wild rice or cauliflower rice
INSTRUCTIONS:
1. Heat oil in a large skillet over medium heat. Season the chicken with thyme, salt, and pepper.
2. Add chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes.
3. In a small bowl, whisk 1/4 cup fresh pineapple juice with the arrowroot powder and set aside.
4. In another bowl, mix the remaining 1/4 cup pineapple juice with Dijon mustard, honey, and minced garlic.
5. Pour the Dijon mixture into the skillet, stirring to coat the chicken. Reduce heat and let simmer for 5 minutes.
6. Stir in the arrowroot mixture and cook for 1-2 minutes until the sauce thickens.
7. Add 1.5 cups of the pineapple chunks to the skillet, stir, and let them warm through for 2 minutes.
8. Use the remaining 1/2 cup pineapple chunks as a fresh topping when serving.
9. Serve over brown rice or cauliflower rice.

A quick and easy stir-fry with a sweet and savory sauce that is full of chickpeas and colorful vegetables. You can serve it over rice for a full meal.
Ingredients: 1 can chickpeas, drained and rinsed. 2 cups mixed vegetables bell peppers, broccoli, carrots, snap peas, etc., chopped. 3 tablespoons soy sauce or tamari. 2 tablespoons maple syrup. 1 tablespoon sesame oil. 2 cloves garlic, minced. 1 teaspoon grated ginger. Cooked rice for serving.
Instructions: Put sesame oil in a large pan or wok and heat it over medium-high heat. Grate the ginger and mince the garlic. Saut for one minute. Stir-fry the chickpeas and mixed vegetables for 5 to 7 minutes, or until the vegetables are soft but still crisp. Mix soy sauce and maple syrup with a whisk in a small bowl. Toss the stir-fry to coat it with the sauce. Keep cooking for two to three minutes more, until everything is hot. Serve hot on top of rice that has been cooked.

📍大碗丼 at 五道口购物中心 🍚日出千层猪花套餐, stacked pork slices rice bowl set meal with miso soup, salad with sesame dressing, onsen egg and tsukemono (💸48 RMB/$7 USD).
🍲 I wish I could geotag this place properly because the food here is really good. The pork was well seasoned and paired well with pretty much everything, not too fatty but still had a good texture.
🥚 The egg was cooked to perfection, holding its shape until burst, letting the runny yolk out. The only issue I had was that the salad wasn't as cold as expected, but that might have been because I waited until after I finished the other food to eat it. If you are around Wudaokou, try this place out!

Experience the art of vegan sushi with this recipe featuring Vegan Sushi 101 and Golden Avocado Rolls. Fresh vegetables, creamy avocado, and seasoned rice combine for a delightful sushi experience.
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/2 cup rice vinegar. 3 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. 2 ripe avocados. 1 cucumber, julienned. 1 carrot, julienned. 1/2 red bell pepper, julienned. 1/4 cup sesame seeds. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Make sure the water runs clear before you eat the sushi rice. Use water to cook rice in a rice cooker. Put rice vinegar, sugar, and salt in a small saucepan and mix them together. Warm it up until the sugar melts. Allow to cool. Place the cooked rice out on a flat surface. Pour the vinegar mixture over the rice slowly while folding it in gently. Allow to cool. On a bamboo sushi mat, put a sheet of nori. Cover the nori with rice, leaving a 1-inch border at the top. Lay out slices of avocado, cucumber, carrot, and bell pepper on top of the rice. Use the bamboo mat to roll the sushi up tight. Wet the edge of the nori with water to seal the roll. A sharp knife can be used to cut the roll into 6 to 8 pieces. Do it again with the rest of the nori sheets and ingredients. In a dry pan, toast the sesame seeds until they turn golden brown. Toasted sesame seeds should be used to cover the edges of the cut sushi. Soy sauce, pickled ginger, and wasabi should be served with it.

Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 200g mushrooms, sliced. 2 tablespoons oyster sauce. 2 tablespoons soy sauce. 1 tablespoon vegetable oil. 1 garlic clove, minced. 1-inch piece of ginger, minced. 1 red bell pepper, sliced. 1 onion, sliced. Salt and pepper to taste. Cooked rice for serving.
Instructions: Combine the soy sauce and oyster sauce with the sliced chicken in a bowl. Give it fifteen minutes to marinate. In a big skillet or wok, heat the vegetable oil over high heat.
