‘One pot’ Pasta Chicken Florentine

Ingredients (4 people):

4 kleine kipfilets of 6 kippenboutjes

2 tenen knoflook

200 g babyspinazie

150 ml droge witte wijn

2 à 3 el mosterd

500 ml kippenbouillon

300 g verse linguine

200 ml room

2 el Parmezaanse kaas, geraspt

bindmiddel voor witte saus

olijfolie

peper en zout

Zo maak je het:

1. Kruid de kipfilets of kippenboutjes met peper en zout en bak ze in een diepe pan met olijfolie rondom goudbruin en gaar. Schep uit de pan en dek af met aluminiumfolie.

2. Pers de look en bak zacht in dezelfde pan, met extra olijfolie. Blus met de wijn en voeg de mosterd toe. Schraap de aanbaksels los en laat de wijn voor de helft inkoken.

3. Voeg de bouillon en de room toe en breng opnieuw aan de kook. Leg er de pasta in, voeg de spinazie in delen toe en laat rustig slinken. Bind de saus eventueel met enkele eetlepels bindmiddelvoor witte saus. Leg de kip terug in de saus en serveer met geraspte kaas.
