JUST Egg vs. Egg
My stomach doesn't always react well to eggs, which limits both my breakfast and ramen topping options. I've seen JUST egg in just about every supermarket I go to, so I finally decided to give it a try. I chose their frozen folded egg, thinking it would make an easy, filling breakfast. And it does! When I'm in the mood for something savory, or an egg sandwich, I toast it and voila, breakfast is ready.
But it's also great in other dishes where eggs are usually found. I've just started experimenting, but I really enjoy it on my ramen. Here's how I make it for two:
Two ramen cakes (I like Lotus Foods' Rice Ramen)
One packet of instant miso soup
Two JUST folded eggs, toasted and sliced
One sheet of nori, torn into small pieces
Green onions, chopped
Cook the ramen according to the package directions.
While the ramen is cooking, split the miso soup powder into two bowls.
When the ramen is finished, before draining, ladle the hot water into the bowls.
Drain the ramen and divide it between bowls.
Top with JUST eggs, nori, and green onions. Add seasoning and sauces if you'd like.

Cacio e Pepe!
Cook a pasta (spaghetti, linguine, casarecce, gemelli, cavatappi all work well here) in just enough water to keep the pasta cooking without sticking to the pot
While the pasta is cooking, melt a few tablespoons of butter over low heat in a pan or pot that can fit the pasta plus stirring room (important)
Grate a few ounces of hard Italian cheese into a small bowl (Parmesan, Asiago, pecorino Romano, or any blend of those)
Add a fuckton of black pepper (a half-teaspoon or so)
When the pasta is cooked, remove the pasta pot from heat and use a slotted spoon or other noodle-grabbing utensil to move the pasta from the cooking pot to the butter pot. The melted butter pot can either be removed from heat or turned to the lowest setting on the stove.
Add the cheese and pepper to the pot with the butter and cooked pasta, add about 1/2 a cup of the water the pasta was cooked in, and stir the shit out of it. It will eventually develop into a creamy sauce. More pasta water can be added to loosen the sauce if needed.
(Tip: add some cloves of garlic and a tablespoon of miso to the melted butter for an incredible variation on this dish)
PEANUT BUTTER NOODLES!
Cook up any Asian wheat-based noodle (rice noodles are fine here too I’ve just got my preference) this recipe is 4-6 ounces of pasta
As the water is coming to a boil, mix in a small bowl (measurements here are a best-guess starting point, I don’t measure shit when I cook):
2 tbsp of peanut butter
One teaspoon soy sauce
Half teaspoon vinegar (apple cider, rice, or Chinese black vinegar)
Some toasted or black sesame oil
A clove of crushed garlic
Optional grated or ground ginger, chili oil whatever
Stir until combined into a dark brown paste
Once noodles are cooked, transfer noodles to a bowl, collect two teaspoons of the hot noodle-cooking water and whisk into the peanut butter mixture to loosen the sauce, pour the sauce over the noodles and toss, serve with whatever you want. This recipe is open to all kinds of adaptation, augmentation or whatever. I’ve cubed up chicken breast, marinated it in soy sauce, cooked that up and added it to the mix, incredible. It’s amazing with egg, with chili crunch, with stir-fried bell pepper or mushrooms, play with the ratios.
Do any of u have decent recipes that are like 5 ingredients (not including spices) and take 45 mins or less to prepare i gotta stop eating sandwiches for dinner

I'm looking back at what worked and what didn't for dinner this year.
Spaghetti pie vs. meat sauce

Instant pot spaghetti with meat sauce is a recipe I make regularly. It's very easy, can be customized, and comes together quickly on a weeknight. I decided to try making spaghetti pie for a change, which is basically the same thing but cooked separately and then assembled in a pie dish. It was okay, but not worth the extra effort.

I've really tried to love zoodles, I swear. I spiralized zucchini after zucchini last summer. And there is something satisfying about how crunchy and flavorful they are after just five minutes in a pan with some sesame oil, garlic, and ginger. But noodles still win every time, especially chickpea pasta mac and cheese (usually Banza). And Rice Ramen bowls with tofu, broccoli, and globs of peanut sauce. Bonus gluten-free egg roll from Feel Good Foods.

This is a tough one, because I've had some delicious soups this year. But my perfect meal, while saucy, is substantial. I can't wait to make chickpea tikka masala again. I make Best Ever Instant Pot Beef Stew at least once a year. Instant pot mushroom risotto is also both creamy and filling. That said, there's a magic to Instant Pot French onion soup that makes it perfect for a chilly evening (especially with subbing apple cider for the red wine and an Against the Grain baguette).
