Easy Weeknight Dinner - One Pan Chicken Fajitas
Recently, I’ve started a new workout routine that includes more cardio because I gained a few pounds over the holidays and really want to get in shape before it’s time to put on a swimsuit! I know that diet is 80% of loosing those pounds, so high protein, low carb is the way to go! With the increased cardio, I’ve had an increased appetite and this recipe for One Pan Chicken Fajitas satisfies my hunger, but is still fairly low in calories and healthy…plus, cleanup is easy and leftovers are delicious!! It’s nice to have something in the refrigerator for lunch the next day as well…so I’m not snacking on something unhealthy! I think this recipe is a win/win and everybody loves fajitas! Make it for a weeknight dinner or your next casual get together!
These fajitas are so colorful and make a gorgeous presentation served right on the sheet pan, so make things even easier by serving them right on the pan you roasted them on!
I have a collection of large boards that are great for arranging a sheet pan meal along with little bowls to hold condiments and toppings. I love fresh jalapeno peppers, so I added a few on the side with the tomatoes and avocados! I’ll admit that I didn’t have any cilantro when I got ready to make these, but if you like cilantro, it would be a delicious and healthy addition. As always, make these fajitas your own…you really can’t mess them up!

My favorite local mexican joint is closed for renovations, so I am making do. Also I need to find ways to use all this cilantro I'm growing. I used canned refried beans because it's a tuesday night and I refuse to exert myself, and because I am out of sour cream to thicken them with I stuck a big spoonful of the dill-ranch cucumber spread (which is what I used up the sour cream making) and tbh it's...super good??? I did not expect that to actually pan out.
Also no one is allowed to judge me for the number of limes. I love limes. I will literally squeeze a lime onto a taco and then eat it like I'm taking shots, with bites of lime between bites of taco. I will eat limes whole with little to no provocation.

Taco potatoes/ Spiced fried eggs and potatoes
Olive Oil in a pan let it get hot while you chop potatoes, tomatoes, and white onion. Add in your chopped potatoes I’d suggest letting them get brown while you’re chopping the veggies, toss the potatoes add in the tomato and onions, season with adobo, black pepper, sea salt, garlic powder, onion powder, cumin, chili powder, and paprika. And a squirt of tomato paste. Mix them around and let it cook! Make some pockets in the vegetables crack in some eggs, put a cover on the pan, let it cook! Congratulations now you have some egg fried potatoes thing, top with salsa or chili oil or hot sauce, whatever you like! It’s fine! Yes it tastes good!
Make it as dinner, a side, add in any meat or tofu do what you want with it, it’s your food. Don’t like runny yolk? Scramble the eggs, cook the yolk, don’t even have to use eggs.

this is so boring but probably flatbreads with various accompaniments 💥💥
one of my actual favourite meals is like curried chicken with salad on a flatbread and i often get some nice pre made flatbreads from a supermarket, but since theyre pretty quick to make i just make some and fry em in a pan sometimes.
flour, water, oil, with a bit of garlic power and melted butter in the pan when u fry, an it goes super well, i usually fill with salad and dry fried tikka spiced chicken, but sometimes i do it with a paprika/cumin based coating what goes really well if u put some mozzarella on the flatbread
