Really quite simple. The pastry is straightforward and turned out great:
Jacques Pépin's Apple Galette 
Yields 6 servings
Pâte Brisée
Yield: Enough pastry for one 14 by 16-inch crust
Ingredients:
1 ½ cups all-purpose flour (measured by dipping the measuring cup into the flour, filling it, and leveling it off with your hand) ½ cup (1 stick) cold unsalted butter, cut into thin slices ¼ teaspoon salt 1/3 to 1/2 cup very cold water
Filling:
5 large Golden Delicious apples (2 pounds) ¼ cup sugar 3 tablespoons unsalted butter, cut into small pieces 4 tablespoons apricot preserves 1 tablespoon Calvados or Cognac (optional)
Preparation:
Preheat the oven to 400 degrees.
For the pâte brisée:
To mix by hand, put the flour, butter, and salt in a large bowl, and mix them together very lightly with your fingertips, so that small pieces of butter remain visible throughout the dough. Add the cold water, and mix it in quickly with your hands, stopping as soon as the dough coheres. Gather the dough into a ball; the pieces of butter should still be visible. Refrigerate the dough, wrapped well, for 1 or 2 hours, or use it right away. (If using it immediately, the butter will be soft, so you may need a little extra flour in the rolling process to absorb it.)
To mix by food processor, put the flour, butter, and salt in the bowl of a food processor. Process for about 5 seconds. The butter should still be in pieces. Add the cold water, and process for about 5 seconds more, just until the dough starts gathering together. The little pieces of butter should still be visible in the dough. Remove the dough from the food processor, and gather it into a ball. Refrigerate, or use right away.
On a lightly floured surface, roll the pate brisée until the dough measures approximately 14 by 16 inches and is 1/16 to 1/8 inch thick. Using a rolling pin, transfer it to a cookie sheet of approximately the same size as the dough rectangle.
Peel and cut the apples in half lengthwise, core them, and, placing each apple half flat side down on a cutting board, cut it into 1/4-inch slices. Set aside the large center slices of about the same size, and chop the end slices coarsely. Sprinkle the chopped apple over the dough. Then, beginning about 1 1/2 inches from the dough edge and working inward, arrange the apple slices on top of the chopped apple, staggering and overlapping the slices so they resemble the petals of a flower.
Cover the dough (except for the border) completely with a single layer of apple slices, arranging smaller slices in the center so they imitate the heart of a flower. Carefully lift the border or dough, and fold it over the apples at the edge. Sprinkle the apples with the sugar, dot them with the 3 tablespoons of butter, and bake the galette in the preheated 400-degree oven for 65 to 75 minutes, until it is very brown and crusty.
Slide the galette onto a cutting board. In a small bowl, mix the apricot preserves with the Calvados or Cognac (or, if you prefer not to use spirits, add 1 tablespoon of water instead). With the back of a spoon, carefully spread the preserve mixture on the galette, lightly coating the crust edge as well, if you like.
Serve the galette lukewarm, cut into wedges.

Today I had class which was followed by my weekly zoom meeting for work then this class. I had brought a packet of cookies for snack in between my two classes. The brand of cookies is La Grande Galette which my dad gets for me from Costco. We both are a big fan of the cookies as they come in little packets with three cookies inside. They taste like sugar cookies with hints of sea salt and usually I will eat them alongside a cup of Nepali chai tea. Since I ate these in school I paired them with just water, they were still delicious. In my work meeting we discussed an event I am planning for the BIPOC Student Design Collective. We decided to order pizza and drinks for our informational meeting on Thursday. After all my of classes I went back to my apartment and worked on my paper which is due tomorrow. I spent most of my evening working on this with a break to eat dinner, which was a Trader Joes frozen butter chicken with rice. I like having a couple of the Trader Joes frozen meals, especially the Indian ones as sometimes I will crave my mom's cooking and they will be the closest thing to it at the cheapest price. With classes, work, and the paper I was working on, I did not have much time to spend on my phone. My screen time today was at 3 hours with my most used apps being Messages, Clock, and Instagram. I'm not sure as to how Clock made the top three, let alone, be my second most used app of the day but I was constantly setting timers for reminders throughout my busy day.

Butter Cookie Gallete
I wanted to make a graham cracker galette this weekend to bring to a dinner party, but I didn’t have any graham crackers on hand, just butter cookies. So I used them instead of the graham crackers. It’s okay to experiment with your baking. In the end the guests didn’t mind at all. They liked that the dessert was not overly sweet. The butter cookies gave the galette a lighter texture. I served this galette with freshly whipped cream. You can use ice cream if you choose.
One other note: if your galette leaks it’s perfectly fine to still eat.

Recipe Tin Eats - This is my go-to for Asian food- not just East Asian, but all Asian food, from Vietnamese to Indian. This is where I usually go when I’m trying to replicate asian takeout. Claire Saffitzs’ Dessert Person - I highly recommend checking out the Dessert Person cookbook from the library/buying it, as it’s a great resource for improving your baking skills, but the YouTube channel is also really good. This isn’t the type of recipes you make every day or even that I would bother copying down for the most part, because they tend to be very involved and not very intuitive if you’re relatively amateur like I am, but the basic recipes, like the Pie Crust (which is amazing) and the Tart Crust, or the Olive Oil Dough (both also fantastic) are actually not as hard in practice, despite how many steps they seem to involve. It’s intimidating to read a recipe where all the steps are really thicc, but the truth is it’s all relatively simple, just explained in extreme detail (which is wonderful for beginners). Immaculate Bites - I’m literally obsessed with Imma, the woman who runs this site, she’s so iconic. I’ve made the Trinidad Chicken Roti, Beef Empanadas, Jamaican Beef Patties and Tourtiere from this site and they all go so hard??? Williams Sonoma - The Williams Sonoma cookbook collection was what initially got me hooked on cooking. If you can, I would 1000% recommend snagging a copy of the Williams Sonoma Cookbook and Williams Sonoma Baking Book/taking them out from the library. Those two specifically are game-changers, though the rest of the extremely extensive Williams Sonoma cookbook collection tends to be rather inconsistent in quality. (the other ones I would recommend is the Williams Sonoma ones that focus specifically on one course/type of food or the FoodMadeFast collection). Their website also has a bunch of their recipes, though. I’d like to start logging some of my cooking here, since I do it almost every day now. I might share things I eat out (when I do, which is rare), eventually!
brown butter gnocchi with Brussels sprouts / leftover fruit galette (peach and blueberry) / romantic little picking dinner (ft Campari and my keys) / homemade pasta! / tomato and mozzarella galette / pilaf topped with roast chickpeas and (overdone) boiled egg / gnocchi with blue cheese sauce, fried zucchini and crispy sage (my birthday dinner) / not very pretty but very tasty brown butter chocolate chip cookies / tagliatelle al limone (and peas)
