Recipe for Creamy Chicken Enchiladas with White Sauce The basic ingredients for this quick and easy chicken enchilada recipe are canned chicken, condensed soup, and Cheddar cheese. not bl related but I was too curious. What dishes can you whip up for 10-12 people!?

Cheesy potato casserole (I do mine with a rosemary rarebit-based cheese sauce) + whatever meat or veg is lying around.
Chicken (or veg) enchilada casserole - made with corn tortillas.
Any kind of noodle casserole (chicken, mushroom, tuna).
Thai drunken noodles. Pretty much any basic Thai curry (red, green, yellow, panang).
A full roast chicken + stuffing, gravy, and potatoes.
This fun one-pot Spanish dish I picked up when I was living there. It's chicken, chorizo (or whatever spicy sausage), mushrooms, gravy and white wine (although I can do a cream and stock version instead)
Shepards pie (usually mixed meat, but I can do a veg version)
Lamb stew (and, frankly, most stews, they are super easy).
Lamb vindaloo
Whatever salad is needed to go with any of the above.
I'm also pretty good at crepes, omelets, Bismark pancakes, and these "egg in cups" that are made in muffin tins, so I can do a breakfast for 10-12 pretty fast too.
Oh and I can pretty much always bake: gf orange chocolate cake, banana bread, and fruit crisps.
When I am in any one place for any length of time I tend to become the party house host and I love feeding people. So I've developed a back catalogue of quick reference feeds a lot foods.
I've also lived off the land and weird stuff like that, so I'm basically a "make it work" kinda cook. I'm one of those who can walk into a kitchen, assess the state of the canned goods, carbs, condiments, fresh & frozen food, and the pans/heating elements and come up with something. More art than science.

1 is one of my favorite personal recipes. its not really a recipe its just combining ingredients but its personal to me bc im too avant garde for normal spaghetti.
2 it feels like lying to call these things enchiladas its basically a casserole but its very cheesy and delicious its a family recipe and once my aunt made it for a potluck and a guy proposed to her after he ate it
3 this IS my recipe this is the most cooking involved but sooo good... white sauce with white beans and leeks and chicken and tofu and just kind of everything i like in a chili style pot. incredible. i add a block of cream cheese for sauce thickness and also mash up some of the beans to increase thickness i love thick chili

Spinach White Bean Enchiladas from Budget Bytes
I usually don't bother with the sauce on these and just make them with green enchilada sauce because I'm lazy. They also make a great quesadilla filling!
Best Lentil Soup from Cookie and Kate
I have had so many meh lentil soups and this one really stood out to me, though of course there's always personal taste involved!
Smoky Black Bean Beet Burgers from Minimalist Baker
I personally find about 1/3 cup of mix is the right amount for 1 burger
And a couple personal "recipes":
Baked Sweet Potato + Black Beans + Queso Fresco and/or Sour Cream + Pico de Gallo + Fried Egg (optional)
Polenta + Black Beans + Sauteed Kale w/Garlic + Tempeh/Tofu/Chicken w/BBQ Sauce (good with side of cherry tomatoes)
Roasted Root Veg (Carrots, Beets, Squash, etc) + White Beans + Italian Dressing (serve with bread or grain for added heft)

I need ideas since I can't really eat most of what my family makes lol
i like to cook from scratch so i don't know how helpful I'll be but I'll lay out some of my favorites
i eat a lot of pasta tbh. fettuccine alfredo, meatless spaghetti (or if i can find the tofu meatballs, that), pasta primavera. I'm trying some mac and cheese with gochujang in it, I'll let you all know how that is.
easy as hell feta tomato pappardelle
not to be cliche and say salad but the nashville hot pickle and spinach dijon make me (a salad hater) like salad. they sell these at walmart or raley's.
i make a vegetarian noodle soup with vegetable broth sometimes. depending on where you are, there's an amy's brand one that's canned. zuppa toscana is a fun one to make if you have veggie italian sausage (i wouldn't put white wine in it. i rarely put wine in anything.)
also korean and indian food is usually vegetarian by default. japchae is really good. it's very vegetable-heavy. i make a cold soondubu (it's usually hot but this is a very good cold for hot days version). this is kong-guksu, which is a peanut sauce ramen dish (better than it sounds).
my favorite indian dishes are palak paneer, tikka masala (i make it with cauliflower or tofu depending), chana masala, basmati rice, and naan.
falafel is vegetarian, and you can make yellow jasmine rice vegetarian easily by making it with vegetable broth instead of chicken broth. and of course, there's hummus and baba ganoush
if you like mushrooms, they're a good substitute for steak on philly cheesteak and this recipe for vegan po' boys is phenomenal.
i make black bean burgers from time to time (i usually buy them bc I'm lazy but they're fun to make). also, black bean and corn tamales are very good. quesadillas are easy too. or cheese enchiladas. they sell vegetarian refried beans too. if not, pre-boiled (or canned) whole pinto beans + vegetable shortening.
we have decent vegetarian sections at the stores i go to. i find safeway and sprouts (I'm not sure if this is a national chain or not) have the best options. i wish i lived in la or sf where all the vegans are.
when in doubt, you just buy nacho fix ins. not healthy but fun and everything that needs to be hot goes in the microwave.

The moment I learned about the latino!Jason hc, I haven't been normal about it since......
Cultural tidbits of my life that I gleefully pass on to Jason:
I'm giving him a community with outlandish tales to share and lots of gossip. A small corner of Crime Alley where everyone knows everyone and everybody's business.
Jason is mostly white [In my head Willis was the biracial one and with Ms. White-McGee Sheila Haywood = Our precious] - tho I mean, he's probably pretty ethnically ambiguous lookin' if he thought Lady Shiva could've been his mom, right? I'm trying to make too much sense of this -
Anyways!
A latina!Catherine who raised him in a mostly Spanish-speaking household, who used to sing him that one odd lullaby I can't recall the entirety of but started like "Duérmete mí niño, duérmete ya....." that's just as weird and creepy as any other lullaby "Que viene el coco, y te llevará"
Putting him to bed with a kiss on the forehead and a sign of the cross.....depending on how religious they were.
She made him sopitos and other warm homemade dishes [Though Idk how much they could afford before things went especially bad - they'd probably only afford premade things] he taught himself to make:

Homemade tortillas [Cause in my ma's opinion the ones in stores over there suck]. He probably has his own tortilla press sitting in the corner of his kitchen that the others think looks like a torture device - would they know what one looks like???
Chilaquiles and Enchiladas [Though I imagine they could only afford to make enfrijoladas]
The music he listens to [Tho to be fair, the things I listen to are mostly pre!2020 Luis Fonsi, Sin Bandera, Reik, and Alejandro Fernandez - and of course, band music]. And like all things in my world of imagination: I make my blorbo a good singer who would sing to these songs with abandon.
I want to immerse him in culture.

The highlight of my week was eating racks of BBQ Ribs... followed by meatballs... and Chicken Enchiladas... I probably should not of... but I did.

The Good:
Had some enjoyment reading - read a slew of Digital Comics and been burning through a hardcover book. Feels were that I made that distinction - "hardcover" book - but hey, I had to go all the way to local library for it.

With the end in sight - I am getting incredibly snacky... thus hurting my resolution to "finish the year strong".
The Ugly:

Casserole is in the oven. I hope it turns out good but I have my worries.
At the bottom I put in a layer of seasoned rice. Unfortunately I put in too much cayenne and it's really spicy. It's just tolerable for me.
On top of that I put a large can of whole pintos. It looked like it had green chilis and onions mixed in. A fairly thin layer of beans but it works.
Then came the chicken. 9 thighs deboned and chopped up just about filled the rest of the pan so I ate the last thigh. (10 pack)
After that I poured on 2 small cans of enchilada sauce. It's kinda hot so hopefully between that and the rice it won't be too hot.
Then I did the white people thing and added half a can of sliced olives because that sounded good. Finally I added shredded cheese until I couldn't see the sauce anymore. Godspeed digestive tract. May the odds be forever in your favor.

Viva Vegeria in San Antonio 👌🏼
One of the best Mexican meals I’ve had & bonus, it was an all vegan, gluten free menu of fresh food made from scratch 😻 The entire meal was $44 before tip!
🥑 Classic Vegan Nachos: (this was a half order!) A mountain of tortilla chips, piled high with vegan queso, quinoa, pico de gallo, guacamole, beans & rice, drizzled with homemade avocado ranch
🌮 Mushroom Chicharron Street Tacos: Three street tacos filled with grilled onions and carefully battered mushrooms, fried till crisp. Paired with cabbage, carrots, cilantro, and homemade cream with a limon wedge on the side
🫔 "Chicken" Mole Enchiladas: Three vegan "chicken" enchiladas topped with mole sauce and sprinkled with white cheese
🥣 Tortilla Soup: Vegetables with fried corn tortillas, rice and avocado

After like three days of thinking, if you're still open to offering adulthood advice, the plague of my existence: how the fuck do you decide what to make for dinner (including the 'what should I put on my meal plan list?' step)?
this is a hard one, because the short answer is basically just "vibes"
let's try to break it down at least into some tips, though.
in my house, any time we try a new meal or version of a recipe, everyone casts a vote: "I would do it again" or "I wouldn't do that again". this is usually done in a melodramatic way and turned into a playful fight. strict democratic majority doesn't always win if the cook is in the minority, but it's a start. meals that people would do again get added to the List.
the List has abso-fucking-lutely every communally edible meal on it. meals that are close variations on each other are all included. the List is sorted by categories like "chicken", "beef", "pork", "vegetarian", "pasta", like a cookbook. sides and desserts are not on it. you could make a separate list for them but it's not as important and wouldn't be a capital L List.
if you're looking at your List and it's pitiful, try out some of your favorite meals' cousins! not just white people taco night, but enchiladas! different stir-fry sauces! and then try some terrifying american casseroles with too much cheese and some canned cream soup!! they ain't bad!!!! look at different crockpot meats for ciabatta sandwiches, french dip et al! stuff your chicken breast with something!! go nuts!
do not consult the List when you have just eaten a full meal. do not consult the List when you are in the process of cooking a meal and your whole house smells deliciously like that food, so that the question "What would everyone like to eat this week?" is inevitably met with "idk the thing I'm smelling right now"
pose the question, "What would everyone like to eat this week?" take suggestions. write them down.
supplement these suggestions (or your blank sheet of paper if people are feeling unhelpful) with meals from the List. in my house, we cook...a lot.....like...six days a week. so when we're making a list we aim for one meal with pasta, one with rice, one Asian, one Mexican, one soup (or two in winter), a grilled meal in summer, with no more than two beefs. we try not to repeat anything sooner than three weeks, or we'll get tired of it and ruin it for much longer than three weeks. depending on what AcTiViTiEs we've got planned for the week we'll plan a crockpot meal or a sauce/soup we have in the freezer for that night. you want to balance your weekly plan with some less intensive meals so you don't get overwhelmed.
we arrange our meals into a Plan, but it's not set in stone. we were supposed to have sloppy joes on Tuesday but the meat accidentally was frozen and we didn't have time to thaw it out so we had chicken fajitas instead. not the end of the world.
and the true tip from the Cate Clan: always have pancake/waffle mix in the pantry and a frozen pizza in the freezer, so if you can't bear to make a full meal you have easy options.

It’s basically Tortilla with a sauce you make out of green chili and idk what else. You add chicken inside the tortilla and roll it up until it looked like a burrito, then put all your green sauce on top of it and add cheese, then you must put it to bake until it’s all warm and the cheese is melted. Personally I like to have orange rice with it but you can also try white rice or beans!

No, those are not chicken nugget. These are tacos with fried shrimp! To make it taste good, you must add Mayonnaise to the tortilla and then put your fried shrimps, then on top of that, add some Avocado, lemon, or even add some sauce that you can easily make with only mayonnaise and chipotle!

I really like the pasta and how it looks ngl.I've had Enchiladas before but not those kind and I didn't really like it but that was when I was 8 so idk.
