Is "Uh, nope" a frequent US response to lamb?
Or is US lamb somehow different?
This is just a vaguely mystified response to some comments here.
I'm guessing the "G-word" is gamey. I've smelt gamey meat, I don't like it, and Irish lamb definitely isn't that. Also, most people I know don't need to screw up their courage before cooking or eating it.
Mutton, mature sheep-meat, has - or so I've been told, because I've never found it in any local butcher - a much fuller flavour, still not gamey, but more ... robust, pronounced, emphatic, choose your descriptor. It is, after all, a more mature meat.
For terminology reference (though this may not be current any more), "lamb" is up to one year old, "hogget" - remember the farmer's name in "Babe"? - is up to two years old, and "mutton" is over two years.
*****
As I said, I haven't seen mutton anywhere, and haven't HEARD of hogget.
This might be, as I hinted, because terminology has been simplified and all meat from sheep is now "lamb" - and that may answer my own question. Sometimes US lamb has a fuller flavour than, say, Wicklow lamb in Ireland, because sometimes US lamb is hogget or mutton instead.
If so, it restores a possible original meaning to "mutton dressed as lamb". That's now best known as "an older woman dressed inappropriately young", and though the meaning has been around for a long time (this Rowlandson print is dated 1810)...
Tumblr media
..."dressing" is also the term for preparing meat for sale.
And THAT makes me wonder if the critical phrase goes beyond fashion into the fine old tradition of adulterating food, and wily butchers transforming elderly sheep into the semblance of younger lamb then charging undiscerning customers accordingly.
I don't know how they might have done it, but if they could then they would. The ways in which 18th-19th century foods were fiddled with is amazing, and more than a bit Yuck.
Or in this case, Ew.
Comments, corrections, criticisms and all the rest are cordially invited.

Side-note; in keeping with the way nicknames get attached to surnames - "Chalky" White, "Dusty" Miller etc. - anyone called Curry usually ended up as "Mutton".
Two brothers at my school had this happen; Tom Curry, the older one, had been "Mutton" for a couple of years, and when his kid brother Will started school he became, of course, "Lamb".
Oh, how we laffed...
*****
ETA: @bellyoftheblast just messaged me this:
It turns out, and I only learned this very recently (I think it's in Hannah Glasse) that "dressed" used to mean "cooked" rather than "prepared for sale". Which would mean "mutton dressed as lamb" would be fast-cooked and thus greasy, unpleasantly tough and decidedly stringy. (Meanwhile I'll never waste good lamb on stew again now that I have a source for mutton -- MUCH better flavour for slow cooking).
Thanks for this snippet! We've got the Prospect Books facsimile of Hannah Glasse 1st ed, so I pulled it down, blew off the dust - it's been a while - and yes indeed, I found the following recipes in just four successive pages:
"To dreſs a Leg of Mutton à la Royale",
"To dreſs a Leg of Mutton to eat like Veniſon",
"To dreſs Mutton the Turkiſh Way"
"To dreſs Veal à la Bourgoiſe"
Mutton dressed (or dreſsed) as Lamb doesn't get mentioned, probably because Mistress Glasse knew better, though that business of Mutton to eat (taste) like Venison is interesting.
It involves cutting the leg of mutton "in the shape of a Haunch of Veniſon" then steeping it in the sheep's blood "for five or six Hours" before wrapping it in layers of buttered paper and roasting it, basted frequently with butter or beef dripping.
Not quite mutton as lamb, but still mutton disguised as something more expensive...

I believe in the healing power of dairy for food that Tastes Too Hard.
Coffee too bitter? A bit of cream will take the edge off of it a lot more than sugar does (those I'll admit to liking a bit of both)
Curry too spicy? Throw some sour cream or plain yogurt in to turn down the mouth-pain and keep the actual flavour
Accidentally put too much sugar in your bread? Toss some more butter in it and now it's French Pastry.
Potatoes too starchy? Cheese and/or butter and/or sour cream and now it's delicious and has all of the major vitamins and minerals you need.
Lactose-intolerants, I am sorry but this post is not for you.

Had wanted to buy the newest burger from McDonald’s Singapore on the day it was launched but mum called to say she had already bought dinner. So on Singapore’s 59th birthday, I decided to treat myself to the Ha Cheong Gai Chicken Burger Special (S$9.90) set meal with Crisscut Fries but proceeded to change my gassy drink to a medium Mocha Frappé (S$1.80). I also added an Apple Pie which was offered to me at S$1.40.

Yeah, two Ha Cheong Gai Chicken Burgers (虾酱鸡汉堡) because mum wants to try it too, so I got an ala carte burger for her at S$7.95. Maybe you are wondering what on earth is Ha Cheong Gai. In plain English, it means prawn paste chicken (虾酱鸡), a Singaporean fried chicken dish consisting of fried chicken wings in a batter with fermented shrimp paste. The burger form came with a crispy chicken patty and a prawn paste-infused dressing, so you get a savoury and umami-laden flavours. Between the sesame seeds buns, you also get crisp cucumber slices and lettuce. The Crisscut Fries is crispy and nice, especially when you dipped it into the garlicy chilli sauce that McDonald’s customized for us Singapore. Overall, I find this new burger a better eat than the Satay Burgers.

So, we have confirmation that Bellara and Lucanis take over cooking because they fear the others would either starve or poison themselves otherwise. Now they must come to that conclusion from experience, and I can't wait to discover why everyone else is banned from the kitchen.
How many people put the kitchen on fire?
Who can cook only the most basic bland food, offending Lucanis's delicate sensibility ?
Who accidentally poisoned the food ?

dean winchester and autism because this man is autistic and i will not accept otherwise:
his reaction to sam giving him the giant slinky at the end of 7x14 'plucky pennywhistle's magical menagerie'
actually physically stimming when he enters the bunker with sam in 15x14 'last holiday' and sees the christmas decorations
the boxing episode, 11x15 'beyond the mat', where dean spends the entire episode fanboying and (for lack of a better word) plays in the boxing ring
wearing the same thing (flannel, jeans, in earlier seasons the leather jacket) almost all of the time while not in disguise to work cases
eating the same thing (cheeseburger with extra onions or pie) at almost everywhere they go, as often as he can (about dean winchester and food, i could talk about that for hours he has so many issues with it and it's all john winchester's fault)
his ability to recite movies line for line, and his tendency to communicate almost entirely through references and movie quotes, and expecting people to understand what he means
about references, he makes jokes and references when it's not appropriate, he doesn't understand that something isn't appropriate in a situation where it isn't specifically pointed out to him, and he generally has a pretty messed up sense of empathy and inability to 'read the room'
‘you’re always calling me a geek, but you know every word to every led zeppelin song, backwards and forwards. you can discuss in detail every major rock drummer between ’67 and ’84… and you watch ‘jeopardy!’ every night.’ - directly quoted from sam winchester in 14x20 'moriah'
in 13x06 'tombstone' when they go into the motel and dean talks about the cowboys, identifying all of them and going into quite a bit of detail about a few of them, even though nobody asked him about it and he is absolutely infodumping. 'he really likes cowboys.' 'yes. yes, he does.'
his knowledge of cars, particularly baby, and how he takes her for a ride when he's sad because of the comfort she provides him. also about baby and comfort, the way he offers to let people drive baby when he realises that they're sad, thinking it'll make them feel better as she makes him happy and he doesn't understand how else to help
in 1x03 'dead in the water' he talks to lucas about how he didn't speak as a kid, he plays with the toy soldiers and it doesn't come across as playing with them to make lucas trust him, it actually comes across as him finding genuine enjoyment in it
in 1x15 'the benders' when he's talking to the kid who mentions godzilla, dean brightens immediately and goes off topic talking about his favourite godzilla film, and has to be reminded that he's working a case by sam
the entirety of 14x04 'mint condition', how dean gets to express his interests and be himself and how a lot of people have mentioned that he seems to be genuinely himself in that episode instead of the act he puts on
larping with charlie, no explanation needed
he shuts down when things go badly, often blasting music and ignoring everything and everyone around him
he always picks scissors when playing rock, paper, scissors, and it's actually something that comes up multiple times within the show - in 2x17 'heart', sam says, 'dean, always with the scissors,' and along the same lines, his excitement both times he actually wins the game
in 1x04 'phantom traveller', dean is terrified because of the plane and sam points out that he's humming metallica. he replies that it calms him down, and that just seems very autistic
