I made some quick & easy Spanish rice as a side dish to complement my leftover Chile Relleno. Delicioso! #saltfree #sugarfree #oilfree #healthyfood The boxes of boil-in-the-bag rice conveniently enable me to quickly whip up some perfect rice (I don’t own a rice cooker). After cooking the rice, I rinse out the pot, open the bag and place the rice back in the pot. (I like to minimize dish washing by making #onepotmeals . I continue heating the rice with about 1/4 cup of salsa and 2 teaspoons each of onion powder, garlic powder, and cumin. As an optional tasty bonus this time, I chopped and roasted some fresh bell peppers and jalapeños (#airfryer at 350 for 8 minutes) to add at the end. Heute gibt es mal wieder Ofenkartoffeln. Und bei der Gelegenheit zeige ich euch einfach mal wie ich sie mache.😊 Ich schneide die Kartoffeln immer in ungefähr gleich große Stücke und dann kommen diese einfach nur bei 180 Grad für 30 Minuten bei Umluft in den Ofen. Wenn man möchte kann man vorher noch Gewürze darüber machen, ich mag es lieber später mit einer etwas scharfen BBQ-Sauce. Growing up in Texas gave me a love of Mexican food. These days I enjoy creating healthy Mexican-inspired dishes. They usually start with a Vegan "Cheezy" sauce with Rotel tomatoes and jalapenos; check out yesterday's post for that recipe. CHILE RELLENO = stuffed roasted Poblano peppers. It is typically a Vegetarian dish that includes cheese and a fried batter with eggs, flour, and oil. However, it can easily be made in a super healthy way using only whole (no highly processed food products), plant-based ingredients, while staying just as delicious. The following #recipe makes 5 hearty servings. 5 large poblano peppers   “Stuff”: · 2 cups cooked black beans (or 1 can) · 1 cup corn · 2 cups Vegan cheezy sauce · 1/3 yellow onion · 1 tsp cumin · 1 tsp chili powder · 1 tsp black pepper   Sauce: · 6 tomatoes, cored · 6 garlic cloves · 3 jalapenos, de-seeded · 2/3 yellow onion · 1 Tbsp tomato paste · 1/4 cup fresh cilantro · 1 tsp cumin · 1 tsp coriander · 1 tsp chili powder · 1 tsp oregano   1. Roast the veggies: Spread the poblano peppers, jalapeños, garlic, and onion on parchment paper on a baking sheet. Spray with water and bake at 425 F for 25 minutes. 2. Make the “stuff”: Mix the filling ingredients together. 3. Blend the sauce: In a blender, blend the tomatoes, roasted jalapeño, roasted garlic, roasted onion, and the other sauce ingredients. 4. Prepare the dish & bake: Spread a layer of sauce in a baking dish. Place the peppers on top of the sauce. Cut a slit in the poblano peppers. Remove the seeds. Spoon the black bean filling into each pepper. Add the remaining sauce on top. Cover and bake at 425 for 25 minutes. Mmm. CHEEZY. I made a big batch of healthy and yummy Vegan “Cheezy” sauce this week. I added a can of Rotel tomatoes and 2 roasted jalapenos to HALF the batch to make a spicy, chunky Mexican “queso” version. You may remember seeing it in my most recent Taco Tuesday post. Extra Vegan queso will come in handy when I make tacos again this weekend, plus I used it to top a couple of baked potatoes. I used the basic Cheezy sauce (plus a bit of the spicier queso for a kick) to make a healthy Cheezy Broccoli Rice Casserole using easy recipe that provides a yummy and filling meal. Here are the #recipes for both the sauce and the casserole. CHEEZY SAUCE: Add all the following I ingredients into a blender. Blend for 1-2 minutes or until your sauce is smooth and creamy. For more of a chunky Mexican cheezy “queso” version, add Rotel tomatoes and jalapeños after blending. Store in refrigerator to use in recipes, or heat when ready to serve as a dip or topping. · 3 cups water · 1 medium white potato, cooked · 1 medium sweet potato, cooked · 1/4 cup rolled oats · 1/4 cup nutritional yeast · 2 tsp garlic powder · 2 tsp onion powder · 2 tsp smoked paprika · (Optional addition: up to 2 cans Rotel tomatoes + 4 diced roasted de-seeded jalapenos) CHEEZY BROCCOLI RICE CASSEROLE: Combine the following ingredients and bake in a casserole dish at 375 for 45 mins. · 3 cups Cheezy sauce · 2 broccoli crowns, chopped into florets · 4 cups cooked brown rice · 1 tsp rosemary · 1 tsp thyme · 1 tsp paprika · Optional: grilled onions, mushrooms, and garlic Isn't it wonderful that we can enjoy delicious meals like this, while achieving optimal health and maximum weight loss?!?
