Prep Time: 20 minutes
Cook Time: 10 minutes
Ice water bath: 30 minutes
Total Time: 1 hour

Author: Tracy
Equipment
Mandoline
Deep skillet for shallow frying
Slotted Spoon
optional instant read thermometer
Ingredients
2 lbs Russet potatoes
3 cups vegetable or canola oil
1-2 tablespoons salt
Instructions
Peel potatoes and use a mandoline at one of it's thinnest setting, 1/16 - 1/8 of an inch, and slice potatoes.
Add all of the potato slices to a large bowl, add water so that it just covers all slices. Add a handful of ice cubes to pull out the surface starch. Let sit for 30 mintues.
Meanwhile, line a large casserole dish with a clean terry cloth (or other absorbant) kitchen towel.
After 30 minutes, rinse potato slices in a colander and shake as much of the water out as you can. Then line a single layer of potatoes on the cloth-lined dish. Use either another clean absorbant cloth or paper towels to pat the top of the potato slices dry. Remove the dry slices from towel and add to a bowl or plate for frying. Repeat with the rest of the slices.
Heat oil in a large deep skillet to about oil reaches 350 to 365 degrees.
Working in batches, add potato slices to hot oil - one layer - and cook for 3-4 minutes stirring consistently with a slotted spoon until they begin to brown.
Once browned, remove chips and add to a paper towel lined cooling rack or plate and sprinkle with salt. Be sure to let them cool in a single layer to ensure that they do not become soggy as they cool.
Let completely cool before storing in an airtight container - if they last that long!

Dry Aloo Chips

Today, I'll share a fantastic recipe for homemade potato chips, ie, Dry Aloo Chips, that are not only delicious but also hygienic, free from artificial flavorings and preservatives. These sun-dried chips have an impressive shelf life of up to a year, making them perfect as a delightful side dish or a quick, crispy snack for kids.
Ingredients
Potatoes
1 tbsp Salt
Oil (For deep frying)
Instructions
To begin, it's best to choose good quality, large-sized potatoes for this recipe.
Start by peeling and washing the potatoes thoroughly.
While a slicer works well, you can also make thin slices using a knife.
Heat a pan of water and add approximately 1 tablespoon of salt.
Once the water begins to simmer, carefully add the sliced potatoes and cook them for about 1 minute.
Remove the partially cooked slices from the boiling water.
Next, spread the potato slices on a cloth and allow them to dry for at least a day.
Afterward, transfer them onto a plate and place them under the sun for an additional day.
Observe how the potato slices become wonderfully crispy and hard during this process.
Store the chips in an airtight container to maintain their freshness.
Now, let's move on to frying them!
Heat oil in a pan and carefully drop the chips into it.
After a few seconds, remove the chips from the oil.
Voila! Your homemade dry aloo chips or potato chips are now ready to be served and enjoyed.

this is a very minor complaint because he's a side character, but like. one thing that annoys me about naruto is the way that one of chouji's main character traits is other people ragging on him for being fat and eating unhealthy foods. despite the fact that any fight scenes with him very explicitly point out the fact that the akimichi clan jutsu are fueled by calories. he needs to be fat?? stop being mean??
if he didn't have extra fat stores, then the side effects of his jutsu would probably take it out of his muscles instead (if it didnt just outright kill him), and those are a lot harder to get back.
also, like. yeah, he's fat. but he can still do ninja shit with the rest of them so it's not like being fat is impeding him from his work. lay off him, will ya.

haven't been able to cook something rlly good or eat my favorite foods in the way that I like them recently and it's doing horrors for my mental health. I would honestly settle for Kraft mac n cheese and dino nuggies rn (I don't like Kraft brand mac n cheese and much prefer homemade but that's ridiculously expensive and dino nuggies are fine I guess but I prefer something crisper like popcorn chicken or McDonald's nuggets)

you don't have to eat like a person when you travel. also when you get back home you have at least a week-long grace period of eating weird and bad because what are you supposed to do? go grocery shopping as soon as you get home? you're busy. you're a busy person

hmmmmmm i love ALL types of potato, but i think its either baked or chips. probably chips because usually they're really good - but sometimes you can get some quite shitty ones... still, i'll stick with chips

Dolli Recipes
During these last years, cooking has been a very good therapy for me. I have tried various styles of cooking and will post some of my recipes below that I perfect as I practice them more. Some of my favorites are:
Orange Chicken
Baozi (chinese steamed buns)
Shoyu Ramen
Yakisoba
Fusilli Alfredo
Creamy Chipotle Meatballs & Pasta
Roasted Chicken Breast with Fine Herbs & Vegetables
Jamie's Perfect Roast Potatoes
Salted Caramel
Levain Bakery Style Cookies
For me, cooking is yet another form of creativity... And the process, in general, is relaxing for me, from choosing the ingredients, washing, chopping, cooking, cleaning at the end. I want to keep experimenting with more recipes!
