2. What are your favourite cuisines?
I guess Italian cuisine? I don’t know. I’ll eat pretty much anything that isn’t spicy. I also really like most Asain cuisines but I’m also more cautious about it because I don’t know what half of it it.

I’ll limit myself to three: DC’s Legends of Tomorrow, The Flash, Bob’s Burgers

WHY do people keep asking me about books?!?! I haven’t read an actual book since I was MAYBE fourteen! I’ll say the Avatar: The Last Airbender graphic novels

I would LOVE a dog. Any dog. Dream pet is a Dachshund who I would name Booster.

I would teach History or English, solely because those are the two classes I understand. I would advise the drama club.
21. What’s one time that someone made you laugh uncontrollably?
This middle-aged man who came into the restaurant I work in and it’s a “walk up to the counter and place your order, come get it when we call the number” type place. This dude and his wife had the stupidest, most complicated order, and talked SO LOUD/FAST. They were ordering from my coworker a register over from me and the guy who’s order I was taking had to stop several times because he couldn’t hear himself over this guy loudly asking what kind of cheese came on a cheddar melt and if his wife could get her tossed salad as a wrap. THEN, 20 minutes later, this guy comes back after getting his food and ends up making me come with him back to his table, where there are six senior citizens and his wife, all unable to figure out what food belongs to who. I sorted it out and then went back to the kitchen and LOST it. The whole situation was so utterly ridiculous. The guy ended up backing his huge van into the corner of our roof later; which should not be possible but he managed.
25. What’s the book/movie/TV show that influenced you the most out of everything?
I’m not really sure. I looked a lot to TV growing up for my role models. I think I’ve gotten this question before and said Kim Possible because I admired Shego’s sarcasm and aspired to it, so I’m going to stick with that answer.
28. What’s the best meal you’ve ever had?
This AMAZING Vietnamese soup a kid in my eighth grade class made for a cultural fair. I was too shy to ask him about the recipe or even the name and I have regretted it every day since. Ten years later and I still wish I knew what that soup was!
29. What’s the funniest movie you’ve ever seen?
Frozen 2. Between Olaf and Kristof I freaking lost it.
31. What’s one food/dish that you really want to try?
Dumplings.
32. Where are three places you want to travel to? Any specific reasons for them?
1. San Diego. Just because it is on the clear opposite end of the country from where I live.
2. The Japanese countryside. I have always wanted to see cherry blossoms are my favorite flowers and I would LOVE to see them in person.
3. Hampton Beach, New Hampshire. I’ve been a few times, it’s one of my favorite vacation places!
33. What’s one skill that you’d like to try and learn for fun?
Rifle shooting. I have no desire to own a gun, as I guarantee you that even if I had one for self defense I would get attacked and have it nowhere near me. That being said, if the apocalypse ever goes down, it would save me some time if I knew how to work my dad’s old hunting rifle.

I swiped left on one guy because his profile picture was him wearing a suit. I just... I don’t trust a guy in a suit.

A Critical Perspective on Luxury Tourism & Cultural Tourism in Japan
Cultural tourism is all about culture.  It involves three categories: heritage, popular culture, and living cultural attraction.  The first category, heritage, is related to historical components from the past.  For example, the Japanese tea ceremony introduces its history and importance in Japanese culture.  The second category, popular culture, deals with current trends like museums, festivals, culinary, and music.  The Tokyo Imperial Palace explains about the life of emperors with its architecture, museum, and history.  The third category, living cultural attraction, is about the people who belong to a certain community or society.  The indigenous Ainu people from Hokkaido presents musical performances, dances, and their lifestyle in their village.
On the other hand, luxury tourism is definitely expensive due to its personalization.  It can be recognized in seven ways: communication barriers, vacuous spaces, visible-invisible labor, recognition, performing plenty, disorder, and neocolonial fantasies.  The first way, communication barriers, talk about the anti-interaction in which tourists can mind their own business without interruption from outside like the train lounge in Japan.  The second way, vacuous spaces, involves extensive space allocated for the destined people to allow the physical space such as huge rooms for dining at the resort.  The third way, visible-invisible labor, talks about materials prepared and presented by people in the service industry although they would not be seen after their work and labor.  The fourth way, recognition, means that there would be people waiting for the command like butlers at the Ritz Carlton hotel.  The fifth way, performing plenty, involves the excessive demonstration which marks its uniqueness such as making the most expensive Christmas tree full of silver and gold ornaments in Dubai.  The sixth way, disorder, refers to the craftsmanship of the people in designing the space to the luxury tourists.  The seventh way, neocolonial fantasies, is about the preparation of living in intended living styles such as the existence of kimono costumes to be worn at the restaurant.

Cultural tourism in Japan can be considered luxury tourism due to its expensive cost and personalized experience.  There are many expensive luxury foods such as Wagyu beef, tuna, and fruits due to their need for extensive labor, care, and attention.  In May 2019, two Hokkaido melons were auditioned for $45,000 from the Business Insider report. Even a family can be rented to accommodate the desires according to the “Conan Rents A Family In Japan” episode from the Team Coco TV talk show.  The service industry provides a luxurious experience in shopping, gastronomy, and culture.  Furthermore, the combination of historical background and architecture with the modern touch upon lifestyle and adventure provides unique tourism which can be enjoyed at the expense of old yet new pleasures.  With such detailed attention, expensive cost, and specialized labor, and personalized service, Japanese cultural tourism can be considered luxury tourism.

Based on Japan’s travel website, they market these experiences as pure and absolute reproductions of some of their most significant cultural practices. They explicitly refer to their attractions: “From remote island beach resorts and exclusive cultural encounters to traditional hot spring retreats offering unparalleled relaxation, Japan is a must-visit location for those seeking the ultimate in luxury travel” Calling back to our activity in class where we brainstormed what our ideas of luxury are, one of the most prominent images of luxury is the idea of being catered to and being served. Japan’s luxury tourism prides itself on this exactly, calling this “omotenashi” which means means taking care of your guests wholeheartedly. In these luxurious experiences, Japan’s hospitality, specifically their “omotenashi” embodies the idea of anticipating and fulfilling the needs of guests before they even realize what they are. 
This Japanese hospitality is built by the people who live in these areas and by people who have extensive knowledge about their craft or the spaces they have built. These professionals range from Michelin-star sushi chefs, seasoned geishas, and hot spring (onsen) keepers. By putting these professionals on the forefront, Japanese tourism is able to produce these luxurious experiences while “maintaining” the significance of their own culture. A notable example of this would be the efforts of the groundskeepers and employees at Japanese onsens The professionals who maintain the hot springs and serve guests at hot springs provide tourists not only with tangible accommodations but with knowledge about the significance of onsens in Japanese society. Another example of Japanese omotenashi is seen in Japanese sushi and omakase restaurants, more notably, the Michelin star restaurants. These restaurants create a more intimate and personal relationship between tourists and the professionals who make their food. Employing their “omotenashi”, the chef crafts each cut of fish as the guests eat. Meaning, as the guests finish one bite, the chef has just finished another. This experience showcases the quality of Japanese cuisine  while maintaining their hospitality.

These traditions have existed for hundreds of years in Japan and there is no doubt the industry will continue to thrive off of these experiences. The Japanese hospitality incorporated into luxury travel ensures an experience in which tourists truly only have to focus on relaxing and the stimulation of their senses. The professionals who maintain this industry cater to both their physical needs (emphasis on relaxation) and their intellectual needs by providing them with first-hand and intimate encounters with the Japanese culture. By offering tourists a more intimate and elevated take on their culture, Japan successfully fosters “luxury travel” within their country.

Indigenous and Afro-Mexican, natural mother to Gabriel Wallace—finally reunited— and grandmother to Audrey and Rooney. Born in Oaxaca, went to San Bernardino for a better life. At the age of 18 became involved in radical justice at the turn of the Cold War, helping Japanese Americans (and others racially targeted) find peace after World War II. Was forced to escape back to Mexico with a group of rebels, one of whom was Okumara Tetsuya, a first generation Japanese-American and recovering prisoner of the Manzanar Internment Camp in California. Enveloped in a whirlwind romance, the two spent years fighting passionately together until they married and conceived their only son. Tetsuya never knew his wife was pregnant when he was untimely summoned back to America and drafted into the Vietnam War, where he would meet his demise with a bullet to the spine. Marisol, despite being heavily pregnant, did not falter in her efforts as a member of the People’s Guerrilla Group. She was arrested in a plot to aid Mexican women seeking refuge in America, assisting them in crossing the border illegally; she delivered Gabriel in prison, where he was taken from her without a single official record of the birth except the name she had given him: the name of her own father.
Her son’s orphanage trajectory ended in San Diego, where an American couple, Ted and June Wallace, adopted him as an infant. He took their surname in exchange for a blessed life, unbeknownst to all the turmoil his birth parents had faced. At the age of 21, Gabriel traveled abroad to teach English to children in Spain. There, he met Amelia (Mia) Clement, a French girl traveling all of Europe to study each country’s cuisines and baking techniques so as to someday achieve her dream of becoming an astute baker at her own patisserie. The two started a quiet, ideal life together in the Spanish desert of Lanjarón, often traveling back and forth with their two daughters between their arid home and Mia’s childhood home in the French countryside. At this time, Gabriel began his search for his birth parents, but would not find their identities and eventually meet his mother until many years later.

For the Roasted Potatoes:
7 ounces whole marble potatoes
4 cloves of garlic, smashed
2 tablespoons olive oil
Salt, to taste
Microgreens, to garnish
DIRECTIONS:
To make the anticucho sauce, add all of the ingredients to a blender and blend until smooth. (Tip: It’s better if you prepare this the day before and use it the next day.)
Preheat oven to 280 degrees F. Toss the potatoes with olive oil, salt,. and smashed garlic cloves. Roast on a sheet pan, in the oven, for 30 minutes.
Cut the veal heart in half and remove the extra fat and nerves. Once clean, cut into square pieces, roughly 1.5 by 1.5 inches.
Place two pieces of veal heart on each skewer.
Brush the heart skewers with anticucho sauce and salt and then grill until cooked to medium.
To serve, create a bed of roasted potatoes on a platter. Place the skewers on top. Garnish with microgreens and serve.

Born in New York City but raised in his parents’ native Greece, Nicholas Poulmentis returned to NYC to run several acclaimed Mediterranean-themed restaurants before winning first place on “Chopped” in 2018. Poulmentis is currently executive chef at Greek-inspired Oli.Vine restaurant in Astoria, Queens. In addition to running the kitchen, he also oversees the wine list, which is mostly focused on Greek and Mediterranean selections, but makes room for some Chilean bottles, too, including those from producers like Santa Carolina, Villard, Lidia, and Lapostolle.

About the dish: “My inspiration for this steak came from a beautiful memory of cooking on Kythria, the island where I grew up in Greece,” Poulmentis says. “I was simply grilling a steak on charcoal and burning some fresh thyme and rosemary, while enjoying a nice red wine.” When it comes to a red wine that can stand up to a substantial steak, like a T-bone, he says he’s always looking for rich, complex flavors that linger in the mouth — all typical characteristics of Chilean Cabernet Sauvignon.
Nicholas Poulmentis’s Sous-Vide T-bone Steak with Caramelized Leeks Recipe
Serves two
INGREDIENTS:
2 pounds T-bone steak, cooked sous-vide for 1 hour at 135 degrees F
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 tablespoons butter
1 tablespoon fine sea salt
3 cloves garlic, crushed
3 leeks, cut into 3-inch pieces
DIRECTIONS
When the steak has finished cooking sous-vide, remove from vacuum-sealed bag and allow to rest.
Heat a cast-iron skillet over medium-high heat until it begins to smoke. Add salt, extra-virgin olive oil, and add the steak and cook to build a crust, about four minutes on each side.
Add rosemary, thyme, crushed garlic, butter and leeks to the pan and place in a preheated, 500-degree F. oven for 12 minutes.
Serve with caramelized leeks from the pan, sea salt, and a glass of Chilean Cabernet Sauvignon.
Fernanda Tapia, Private Chef, Boston
For nearly six years, Chile-born Fernanda Tapia was the chef/owner of Boston’s beloved Comedor, creating Chilean dishes with an American inflection, like carne mechada braised beef shoulder and peekytoe-crab chupe. Tapia sold the restaurant in June of this year, but during the restaurant’s run, she was a two-time “Chopped” champion and named a Best of Boston winner by Boston Magazine. I wanted to honor that tradition and add a couple of great summer ingredients like cherry tomatoes, scallions, and kick up the heat with some dried Tabasco chiles,” Tapia says. “Chilean Cab is so bold and has so much body that it can stand up to rich and strong flavors. I can’t think of a better pairing than Chilean Cab with grilled steak and spicy food!”
Fernanda Tapia’s Flank Steak With Tabasco Salsa Recipe
Serves 2
INGREDIENTS:
9 ounces flank steak
1 tablespoon canola oil
½ bunch cilantro, chopped, including stems
½ bunch scallions, thinly sliced
⅔ cup cherry tomatoes, thinly sliced
1 clove garlic, minced
3 dried Tabasco chiles (can substitute ½ fresh Fresno chile, or 1 jalapeño), finely chopped
Juice of 1 large lemon
2 tablespoons extra-virgin olive oil
Big pinch of paprika
Salt, to taste
Optional: mixed green salad and grilled bread, to accompany
DIRECTIONS:
To make the Tabasco salsa, combine all ingredients in a medium-sized bowl. Adjust seasoning with salt. This salsa tastes best when made at least 1 hour in advance.
Season the steak(s) heavily with salt and black pepper. Set a pan over high heat and add 1 tablespoon of canola oil. Add steak and cook over high heat until golden brown, about 3–4 minutes. Flip and repeat on the other side.
Let rest for at least 5 minutes and slice against the grain of the meat.
To serve, spoon lots of Tabasco salsa over the sliced steak on a platter. Best eaten with a mixed green salad and grilled bread.

Marjorie Meek-Bradley’s Skirt Steak with Roasted Pepper and Green Bean Stew Recipe
Serves 4
INGREDIENTS:
4 6-ounce skirt steaks
2 tablespoons canola oil
For the Marinade
½ teaspoon chili powder
1 teaspoon smoked paprika
½ teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
4 cloves garlic, microplaned
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
For the Roasted Pepper and Green Bean Stew:
2 tablespoons olive oil
1 each red, yellow, and orange bell peppers — roasted, peeled, and cut into strips, or one 12-ounce jar of fire-roasted bell peppers
1 yellow onion, peeled and cut into strips
1 tablespoon salt, divided in half
2 cups green beans, trimmed and cut in half
1 18-ounce can of stewed tomatoes
¼ cup of capers
1 6-ounce jar of Castelvetrano olives, pits removed and smashed
Optional: rice or roasted potatoes, to accompany
DIRECTIONS:
To make the marinade, mix all ingredients together in a bowl. Pour half of the marinade over the steaks, reserving the other half for the stew, and let chill in the refrigerator for at least an hour or overnight.
To make the stew, preheat the oven to 350 degrees F. Heat a large pot, preferably a Dutch oven on the stove over high heat. Add the oil and heat until shimmering. Add the onions and ½ tablespoon salt; sauté until tender. Add the roasted peppers and chopped garlic. Cook over medium heat for about 5 minutes. Add the reserved half of the marinade and cook for about 2 minutes. Crush the stewed tomatoes slightly and add to the pot. Let simmer for 5 minutes.
Add half a cup of water and the green beans, capers, and olives. Mix everything together and put the Dutch oven, lid on, into the preheated oven for 30 minutes. Remove the pot from the oven and increase heat to 450 degrees F.
To cook the steaks, preheat a cast-iron skillet over high heat. Coat the pan with 2 tablespoons canola oil. Season the steaks with the remaining salt and sear them on each side for about 1 minute.
Remove the steaks from the pan and layer over the stew in the Dutch oven. Return the pot to the oven for 5–10 minutes more, lid off, depending on how you like your steaks cooked — 5 minutes should give you a nice medium.
Let rest in the pan for 5 minutes, then serve with rice or roasted potatoes.

Serves 4
INGREDIENTS:
2 pounds peeled skirt steak
¼ cup vegetable oil
2 tablespoon balsamic vinegar
2 cloves of garlic, smashed and finely chopped
2 teaspoon dark chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 tablespoon lemon juice
Salt and pepper to taste
Good aged balsamic vinegar, to finish
Optional: potato hash and grilled rainbow carrots, to accompany
DIRECTIONS:
Cut skirt steak into 4 8-ounce portions and set aside.
In a large bowl, mix together the oil, vinegar, spices, and lemon juice to make a marinade.
Add the steaks to the marinade and massage the marinade into the meat. Refrigerate and let marinate 2–4 hours.
Season the steak with salt and pepper and place on a hot grill, cooking on both sides to the desired temperature. Let rest at least 5 minutes before slicing.
Drizzle with aged balsamic vinegar.
Serve with potato hash and grilled rainbow carrots.
