SUNCHOKES: THE MOST PAINFUL VEGETABLE - The day I thought I was going to internally combust from eating a plateful of Sunchokes.

A bit of video showing the start of how I dug out some sunchokes from the patch I set up in the fall of '23. They are going to be moved to my 200 squarefoot test plot.

Jerusalem artichokes, or sunchokes, are a native plant that grows so well and easily that it can pretty much be a weed in some areas. It also produces an incredible amount of nutritious and tasty food with almost no work!
