You should begin by visiting mattress dealerships and trying out many different styles of mattresses.  Kick your shoes off if you want to -- don't be shy -- and lie down on the mattress and let your body go limp.  After trying a few different models, you will begin to narrow down the ones that feel best to you -- and the ones that feel worst.
This initial test will give you an idea of your general preference in mattresses.  Most people are either a soft mattress person or a firm mattress person.  Testing out a half-dozen or so different models should tell you which category you belong to.
Once you have determined that you are a "soft mattress" or a "hard mattress" person, it is time to start narrowing down your preferences.  If you discover you prefer firm mattresses, begin testing every firm mattress in the store, and be sure to take notes of the ones you like.
Also, don't be afraid to just lay there for five minutes at a time if you want to.  Believe me, the salespeople at mattress stores understand that a mattress is a big purchase, and they will not look down on you for taking your time and making sure you are comfortable with the mattress you wind up choosing.
Once you have decided on a mattress that works for you, you will need to consider whether you need a new bed frame or not.  Modern mattresses tend to be thicker than those available just 10 or 15 years ago.  If you bought your current bed more than 10 years ago, it will probably be a good idea to purchase a modern bed frame that will perfectly fit your new mattress.
Otherwise, you could end up with a mattress that sticks up several inches above the frame of your bed. Besides looking a bit awkward, this can also make it easier to fall out of bed at night.
When choosing a new bed frame, consider the new low-profile styles.  These make it easier to get into and out of bed, and will also have the effect of making your bedroom appear bigger because your mattress will be lower to the ground.
