Mazurek bakaliowy na wzór energetycznych batoników

Pomysł na ten mazurek był bardzo prosty: po pokrojeniu na kawałki miał być zdrową przekąską w stylu batoników energetycznych, nazywanych czasem batonami mocy.
Tym, którzy dotąd nie spotkali się z tego rodzaju łakociami wyjaśniam, że są to słodkie przegryzki ze sprasowanych bakalii, orzechów, nasion oraz płatków owsianych lub innych zbóż. Ich atrakcyjność polega na dużej zawartości witamin: potasu, wapnia, magnezu, błonnika, antyoksydantów, a małej węglowodanów i cukrów z buraków czy trzciny.
Był czas, że robiłam tego typu batoniki muesli rodzinie i cieszyły się dużym powodzeniem, ale zawierały skondensowane słodzone mleko (jak ja je lubię!).
Ten mazurek jest słodki dzięki owocom suszonym i czekoladzie. Może okazać się za mało pociągający dla osób przyzwyczajonych do świątecznych kruchych wypieków z kajmakiem, pomarańczami, kremem czekoladowym, na spodzie z wafli daktylowo-czekoladowy z bezą, czy z powidłami. Moja bratanica po spróbowaniu kawałka odłożyła go i - grzecznie podziękowawszy - nie dokończyła. Może w tym roku się przekona?
Kulinarne gusta, podobnie jak i inne, zmieniają się z czasem, dojrzewają i poszerzają. Czasem po to, by prędzej lub później powrócić do właściwego sobie, zdrowego balansu.
Bo to harmonia, a nie przesada jest matką dobrego smaku.
Składniki:
Ciasto 225 g masła 140 g mąki pszennej 100 g mąki krupczatki 100 g cukru pudru (można zastąpić ksylitolem, erytrolem) żółtko 1/2 łyżeczki soli
Wierzch garść daktyli garść moreli (bezsiarkowych) 2 łyżki suszonych żurawin 2 łyżki kandyzowanej skórki pomarańczowej garść orzechów (mieszanka) 1/2 tabliczki gorzkiej (lub deserowej) czekolady
Wykonanie:
Rozgrzać piekarnik do 180°C. Masło powinno być miękkie (temperatura pokojowa).
Wyłożyć niedużą blaszkę papierem do pieczenia, pozostawiając trochę wystających boków, aby po upieczeniu ciasta można je było łatwo wyjąć.
W misie robota kuchennego zmiksować masło i cukier, aż powstanie lekka i puszysta masa. Dodać żółtko i połączyć. Następnie wsypać mąkę, sól i znów miksować, ale tylko tyle, aby masa była jednolita.
Równomiernie rozprowadzić ciasto w przygotowanej foremce i ponakłuwać je widelcem. W tym wypadku nie trzeba wychładzać ciasta, a potem przykrywać papierem i piec z obciążeniem.
Piec przez ok. 25 minut, aż lekko się zrumieni. Pozostawić do całkowitego ostygnięcia w formie.
Daktyle wypestkować, pokroić na kawałki. Morele pokroić podobnie. Wraz z żurawinami owoce zalać ciepłą wodą. Odstawić na 15 minut.
Po tym czasie dobrze odcisnąć i przenieść do misy robota kuchennego z przystawką do siekania. Dorzucić skórkę pomarańczową, z grubsza pokrojoną czekoladę i zmiksować do pożądanej konsystencji. Lubię, gdy wyczuwalne są drobne kawałeczki poszczególnych składników, choć czekolada może się rozmasować.
Dołożyć wcześniej posiekane i uprażone na suchej patelni orzechy (u mnie włoskie, laskowe, ziemne) i wymieszać.
Powstałą masę wykładać równo na cieście i rozprasowywać na gładko szpatułką, dociskając. Wygląd mazurka jest zgrzebny, ale tak chciałam - po pokrojeniu miał przypominać batony energetyczne, a nie wielkanocne pisanki.
Myślę, że się udało.

Mazurek z wiśniami i masą kawową

Składniki:
Ciasto:
1 jajko
150 g masła, pokrojonego na małe kawałki
170 g mąki pszennej
80 g mąki ziemniaczanej
3 łyżki kakao
50 g cukru
1/2 łyżeczki cynamonu
Masa:
125 ml śmietanki 30%
200 g białej czekolady
30 g masła
1 łyżeczka kawy rozpuszczalnej
1/2 łyżeczki kardamonu
kompot wiśniowy (2 łyżki wiśni + trochę soku)
50 g gorzkiej czekolady
Wykonanie:
Ciasto:
Przesiać mąki.
Wmieszać proszek do pieczenia, cukier, kakao i cynamon.
Zrobić dołek w mieszaninie i wbić do niego jajko.
Posypać masłem.
Zagnieść na gładkie ciasto.
Owinąć ciasto w folię spożywczą i włożyć na godzinę do lodówki.
Wylepić ciastem dno i 1 cm boków blachy o wymiarach 24 x 27 cm. Ponakłuwać ciasto widelcem.
Piec w 160 C przez 35 minut.
Masa:
Stopić białą czekoladę razem ze śmietanką, masłem, kawą i kardamonem.
Lekko przestudzić i wylać na upieczone ciasto.
Wcisnąć wiśnie w masę.
Schłodzić.
Stopić gorzką czekoladę i lekko przestudzić. Wymieszać z sokiem z kompotu wiśniowego.
Polać ciasto gorzką czekoladą.
Wstawić mazurka do lodówki.

I have no explanation for this one I'll be honest. But you will understand and accept me and this post. You will. You always do
Yuma Kokohead -> bigos
Explanation: While it's one of the most basic but respectable and popular foods we got, the word "bigos" in it's slightly different use could also mean a fight or "siekanina" (word for fight involving chopping/cutting), and the original use of the word "bigos" was for specifying a way of chopping something (ex. cut something into bigos). These are some very violent pieces of cabbage and meat. Though my family uses cabbage and mushrooms instead. Then we use it as pierogi filling. This also symbolizes the way his kind finds it's best use in becoming really good filling for-
Shinigami -> cycki teściowej (mother-in-law's tits)
Explanation: Hardly anybody ever points out anymore just how crucial her huge puffy tits are to the plot of Rain Code; nobody ever listens to me anymore when I try to explain, they just tell me that "her eyes are up there". No one fucking listens to me. (also I feel like she's the kind of person to find that name funny + she's a dessert girl. a girl dessert)

They'd hand these out at my elementary and every time I'd be the only one that refuses to eat those. I haven't met another guy that doesn't love bird's milk. They got an english wikipedia entry and they're literally brand sweets not some traditional dish so I know it's not just my people that are going fucking nasty over those. Explanation: I didn't just pick it because they typically sell those cakes in a cubical shape. That would be overly mean of me, and I am not that, I would never be mean to an unfortunate cube-ification near victim such as her. Alright so the other reason is that ummm. Uh. Next one
Guillaume Hall -> pączki. a pączek, if you will
Explanation: She is obligated to be a pastry. She canonically makes jams in her free time so I have no doubts she'd make some absolutely earth-shattering pączki filling with those. And add ungodly amounts of glazing. Really makes you think
Yomi Hellsmile -> mazurek
Explanation: absolutely stunning, the most beautiful thing you ever saw, just, spectacularily pretty, gorgeous, outstanding. Best thing you'll ever see. However just like Yomi's actually a shithead despite his incredibly attractive, just lovely looks, like, despite just how hot he fucking is, I would also just not eat a mazurek I I think It's kinda mid actually like, just purely taste wise without all the funky little decorations on top. Like I . I'm not gonna eat that I'm sorry. Too much ingredients actually it sounds like just too much work. I'm not gonna do that. Contrary to Yomi I'm not a big fan of nuts in my cakes

I decided to take some abstract/artistic photos having in mind the tips from Bryan Peterson's books on photography. The weather wasn't nice so I only went to the nearest park and took several photos of some graffiti and puddles. The last photo is a kind of pun. That little bird's name in Polish is mazurek (Eurasian tree sparrow) and 'mazurek' is also a traditional sweet Easter cake - so that's my 'mazurek' for Easter. :)

The Witcher books. Emhyr/Geralt. Rated M. 100000 words. Mazurek is actually a Polish extra sweet cake but the whole series is extra dark. Incredibly beautiful and horrifying psychological fics with nonstop emotional whiplash and I am eating it up. <3

Don't Worry Darling (2022) movie. Gen. Rated M. 2500 words. Skazka's psychological horror fics are in my absolute fav. The movie is not that great but I love the movie premise and skazka really landed the vibe.

baking - easter
This easter I decided to prepare a few other the traditional cakes, such as sernik, babka wielkanocna and mazurek with clotted cream.
I am very happy with how those turned out, however I might consider adding a bit less yeast to the babka as it significantly grew out of the form. For the cheesecake I found it helpful to decrease the temperature very gradually so that it preserves its shape and fluffiness, and it worked perfectly.

Mazurek wielkanocny

Składniki:
Spód:
1,5 szklanki mąki pszennej typu 450 (krupczatki)
150 g masła
1/4 szklanki cukru
1/2 łyżeczki proszku do pieczenia
1 jajko
Wierzch:
mała puszka masy kajmakowej
migdały blanszowane
orzechy laskowe
suszona żurawina
kandyzowana skórka pomarańczowa
Wykonanie:
Ciasto:
Zmiksować masło z cukrem na puszystą masę.
Wmiksować jajka.
Wmieszać mąkę i proszek do pieczenia.
Zawinąć ciasto w folię spożywczą i włożyć do zamrażarki na pół godziny.
Wyłożyć ciastem prostokątną blaszkę.
Piec przez 25 minut w 180 C.
Wierzch:
Na jeszcze ciepłym cieście rozsmarować masę kajmakową.
Porozkładać migdały i żurawinę formując kwiatki, posypać całość skórką pomarańczową i żurawiną, a po bokach wyłożyć orzechy laskowe.

CREATIVITY APRIL
In april I decided to develop my cooking skills. My whole family was craving something sweet, so I decided to make them Mazurek to remind them of the amazing time we spent during easter break. This was a challenge to me, because my dough did not work out at first, however, after a lot of hard work, I managed to create a delicious cake.
This experience has taught me resilience and patience. I did not give up, even while facing a challenge. I also improved my cooking skills, learned how to make a new dish and made my whole family happy.

In the glow of neon lights and the soft hum of jazz in the background, Luna stood at the edge of the bar, a place where star pilots and cosmic traders rubbed shoulders with androids and the occasional lost time-traveler. Her attire was not from this era, nor from any known fashion on Earth. Her leather pants, adorned with gold star studs, hugged her form, a stark contrast to the antiquated decor of the bar.
She was not here for the drinks, though the cocktail by her side sparkled with the same intensity as her mischievous eyes. Luna was a reporter for the Galactic Gazette, and she practiced a kind of journalism that was both admired and despised: chequebook journalism. It was rumored that she had traveled through time to expose the biggest scandals of the century before they even happened.
That night, her target was a government official from the Martian Colonies, caught in a tangled web of corruption and greed. They were due to meet here, under the guise of a casual encounter. Luna's contact would exchange a data crystal containing sensitive information for a hefty sum, discreetly transferred via her holowatch.
But this exchange was never meant to be. As she waited, the fabric of reality seemed to quiver, and a figure stepped out from a ripple in the air—a time enforcement agent. "Luna Esparrow, you are under arrest for the manipulation of temporal truths and chequebook journalism."
The bar fell silent. Patrons from a hundred worlds watched as Luna turned, her grin defiant and ever-present. "You'll have to catch me first," she said, just before smashing the cocktail glass on the ground. The liquid erupted into a cloud of smoke, obscuring her from view.
In the chaos, she slipped a hand into her pocket, clutching the time device that would whisk her away to another era, another story. The agent lunged, but it was too late. With a flash of light, Luna disappeared, leaving behind a legacy of stories that shaped the galaxy—stories bought with a chequebook, but invaluable in their truth.
