Tofu Tikka Masala
1 (14-ounce) block extra-firm tofu, pressed and cubed
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to your spice preference)
1 (14.5-ounce) can diced tomatoes, undrained
1 (14-ounce) can full-fat coconut milk
1/2 cup vegetable broth
1/4 cup chopped fresh cilantro
Salt and black pepper to taste
For the Coconut Rice
1 cup basmati rice
1 (14-ounce) can full-fat coconut milk
1/2 cup water
1/4 teaspoon salt
Instructions
Prep the Tofu: Drain and press the tofu for at least 15 minutes. Cut into 1-inch cubes.
Marinate the Tofu (Optional): For extra flavor, marinate the tofu in a mixture of 1/4 cup plain yogurt, 1 tablespoon lemon juice, 1 teaspoon garam masala, and a pinch of salt for at least 30 minutes.
Cook the Rice
Rinse rice thoroughly. Combine rice, coconut milk, water, and salt in a medium saucepan.
Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until liquid is absorbed and rice is tender.
Make the Tikka Masala Sauce:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger and cook for an additional minute until fragrant.
Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper, and cook for another 30 seconds.
Add diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
Cook the Tofu
If not marinated, toss tofu with a bit of olive oil, garam masala, and salt.
In a separate skillet, heat a bit of oil and cook the tofu until golden brown on all sides.
Assemble the Tikka Masala:
Add the cooked tofu to the simmering sauce.
Season with salt and pepper to taste.
Let simmer for 5-10 minutes to allow flavors to blend.
Serve: Stir in fresh cilantro. Serve the hot Tofu Tikka Masala over a bed of fluffy coconut rice.

Extra cilantro
Lime wedges
Naan bread
Plain yogurt
Tips
Spiciness: Adjust the amount of cayenne pepper for your preferred heat level.
Creamier Sauce: For extra richness, stir in a dollop of heavy cream or vegan cashew cream at the end.

I am sure you have tried fried Taro Puff (芋角) at one of your favourite dim sum (点心) place. Cantonese called this yam puff/dumpling "wu gok" or “woo kok”. It is a deep fried dumpling made with mashed taro and stuffed with diced mushrooms, shrimp and pork though the ones I am having doesn’t seem to contain shrimp in it. Anyway, if you are interested in how it is made, I have attached a how-to video.

Chapter 3
Months ago, I got a special OLD edition of a cooking book by a prestigious chef (whose name won't be said.) This edition had a recipe for a soup (which I'm not going to name,) this recipe was deleted from new editions, and of course, I thought that I had found an incredible precious thing.
I read the ingredients and thought, "This is going to look gross, how about if I create a Dianxia Cooks under the concept of throwing into the pot gross stuff that in the end actually tastes good??"
Oh guys, the reason why this recipe was deleted from new editions is because our beloved prestigious French Chef whose name won't be said, fucked up with this one. IT IS HORRIBLE!!!
Take notes you all, DO NOT BOIL BACON, PORSCUITO, AND MIX IT WITH CABBAGE. PEW PEW PEW.
