Tofu Tikka Masala
1 (14-ounce) block extra-firm tofu, pressed and cubed
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to your spice preference)
1 (14.5-ounce) can diced tomatoes, undrained
1 (14-ounce) can full-fat coconut milk
1/2 cup vegetable broth
1/4 cup chopped fresh cilantro
Salt and black pepper to taste
For the Coconut Rice
1 cup basmati rice
1 (14-ounce) can full-fat coconut milk
1/2 cup water
1/4 teaspoon salt
Instructions
Prep the Tofu: Drain and press the tofu for at least 15 minutes. Cut into 1-inch cubes.
Marinate the Tofu (Optional): For extra flavor, marinate the tofu in a mixture of 1/4 cup plain yogurt, 1 tablespoon lemon juice, 1 teaspoon garam masala, and a pinch of salt for at least 30 minutes.
Cook the Rice
Rinse rice thoroughly. Combine rice, coconut milk, water, and salt in a medium saucepan.
Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until liquid is absorbed and rice is tender.
Make the Tikka Masala Sauce:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger and cook for an additional minute until fragrant.
Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper, and cook for another 30 seconds.
Add diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
Cook the Tofu
If not marinated, toss tofu with a bit of olive oil, garam masala, and salt.
In a separate skillet, heat a bit of oil and cook the tofu until golden brown on all sides.
Assemble the Tikka Masala:
Add the cooked tofu to the simmering sauce.
Season with salt and pepper to taste.
Let simmer for 5-10 minutes to allow flavors to blend.
Serve: Stir in fresh cilantro. Serve the hot Tofu Tikka Masala over a bed of fluffy coconut rice.

Tips
Spiciness: Adjust the amount of cayenne pepper for your preferred heat level.
Creamier Sauce: For extra richness, stir in a dollop of heavy cream or vegan cashew cream at the end.

That is because their Bak Chor Mee (肉脞面) or Minced Meat Noodles is so popular, as it comes with plenty of ingredients or toppings. Let’s us see what is included in this bowl of dry-style thin noodles or mee kia. At a glance, I can see pork & chive dumpling, fish dumpling, fish balls, pork balls (hidden underneath), braised pig’s skin, fishcake slices, crispy sole fish (扁魚干/大地鱼/比目鱼), crispy pork lards and minced pork. The pig’s skin is just one piece but mum topped up extra for more to be added.

Randomtober Day 5 - Feast
I decided to do the Unexpected Party from the start of The Hobbit. 😁
I didn't do every single food the Dwarves asked for, but I did try to include as many as I could: pickles, cold chicken, pork pies, apple tart, mince pies, coffee, tea, cheese, seed-cake, scones and butter, red wine, ale, porter, and boiled eggs.
Can't quite get the colours right on my phone camera, sadly. I think they're nicer IRL. Also messed up a few times - this is a new paint set from my sister and I am loving the colours, but the brush has a couple of loose bristles. 😩
