Current Monk Fruit Custard Experiment
Ingredients
¾ tsp Monk fruit powder
1 cup Heavy cream
8 tbsp|½ cup Irish butter (the secret ingredient)
2 Eggs
Vanilla & cinnamon to taste
Process
Set up a double boiler
Create a simple monk fruit syrup (small amount of water + powder, mixed)
Melt butter in double boiler
Mix syrup into melted butter
Add vanilla
Mix in heavy cream
Mix in cinnamon
Add eggs into butter-cream mixture
Stir custard constantly to incorporate ingredients and prevent curdling
Pour into a container, through a sieve
Cover the custard with a plastic cover, pressed to its surface
Chill or freeze
The flavor of the Irish butter keeps the monk fruit powder from becoming too sweet. Amish butter could be used instead for its own unique taste.
Usually a custard only needs one egg per cup of cream, but another one is needed to get the butter and the cream to bind to each other. I don't like separating eggs into yolks and whites, but you probably could do that to cut down on material.
