A Veg Curry from Leftover Soup. It is not in anyway traditional or is even something I do often. But it is the best idea I have ever had in the recent times and the result was so yummy. Do you have a full recipe for that salad? Like how to boil things, what amounts?
im working on soviet logic, so mostly the ratios are "whatever feels right" but i will try to approximate
Would say: ~3 beets ~4-5 potatoes ~5 or 6 carrots
place all 3 vegetables, unpeeled, in a very large pot. Beets on the bottom, then potatoes, then carrots. Add enough water to cover the veggies. Bring to a boil, decrease the temperature, and allow to simmer. Cover with lid.
When carrots have been simmering for 20 minutes, remove them. 20 minutes later, remove the potatoes. 20 minutes after that, remove the beets. place on a plate to cool.
Grab 1 small jar of dill pickles and chop up its contents, add to a large bowl. Add pickled cabbage* to bowl, chop if the pieces are excessively large. Chop 1 red onion into thin quarter rounds, add to bowl.
Now that your boiled vegetables have cooled (they should still be warm!), peel them. Carrots and potatoes can be peeled with the assistance of a small knife. Beets can easily be peeled by hand. Chop each of these into ~1/2 cm pieces and add to your bowl.
Drain a can of red kidney beans and add to salad.
Chop up 4-5 stalks each of fresh parsley and cilantro. If you want, you can also add a little bit of fresh dill, but It's easier to use a bit of the dry stuff because it doesn't rot in .02 seconds. (Use very little! dill can be overpowering.)
Add vinegar, salt, pepper, and sunflower oil to taste.
*To obtain pickled cabbage, I don't buy anything special, I just cheat and put my own chopped cabbage in a jar of pickle juice. Very convenient if you have leftovers from making borsht/salad olivye

since i've shown some people this i will release it into the wild here too... my little neocities site i have been coding with love 🫶 the past week or so. mostly i am proud of the style switcher and the journal/blog function, and learning how to use a static site generator to create all of this.
mostly i've been Recipeposting there (i've been cooking a lot) and it might just function as a very simple journal for various interests. there's a WIP distaxon section but the more i work on it the more i want to change the story format so that may or may not change into a comic or something. who knows!!!!! stay tuned.

Okay! I didn’t really do a fab job with the puris considering this was probably my 3rd or 4th attempt in making them half heartedly. I preferred Avozinha making them. She’d make the Goan version called Vode. Anyway, today I have to share this potato and peas curry. It’s simply delicious! This is an Odia version. Recipe courtesy @silanaveena14 I added a few extras and made it my own. This recipe is a must have if you’re looking for veg options to cook this Lenten season. This is how I made it today for dinner. Boil, peel and mash about 3-4 large potatoes. Keep aside. In a pot, heat some oil. To that add mustard seeds, asafoetida, urad dal and curry leaves. Leave them to crackle. Add some finely chopped onions, a coarse paste of freshly pounded garlic, ginger and green chillies and finally some tomatoes.. sauté it until the tomatoes turn mushy. Add turmeric powder, red chilli powder and garam masala to this and stir in little water. Next add some peas and more water as preferred. Add the potatoes and 1tbsp of besan or wheat flour. Stir well and let the gravy simmer. Add salt to taste and your dish is ready to be eaten with hot puris. This gravy can also be eaten with curd rice, chapatis, dosas, puris, etc. Definitely give this recipe a try or save it to be made on a later day. I’d say have a folder on Instagram called Veg dishes to make this Lent and just save this recipe there. You’ve got to try it out. Follow @trulysoulfullyeats for more veg recipes the next few days. Been a while since my last recipe post so here you go! Broccoli peanut soba noodles 🍲🍋🥜 Ingredients • 1 packet soba noodles • 1 head broccoli/2 bunches broccolini • 4 spring onions, chunks • 1 zucchini, ribbons • 2 tbsp oil • salt and pepper • handful fresh coriander, chopped • 1 lime, wedges to serve • sesame seeds, to serve PEANUT SAUCE • 1/2 cup peanut butter • 1/4 cup soy sauce • 3 tbsp rice wine vinegar • 3 tbsp water • 3 tbsp maple syrup • 2 cloives garlic, minced • 1/2 tsp chilli flakes Method 1. Whisk together all the peanut sauce ingredients in a small bowl until combined. Set aside. 2. Heat the oil in a wok and add in the broccoli. Cook for a few mins, then add the white parts of the spring onions and the zucchini. Cook the soba noodles according to packet instructions. 3. Add the noodles in with the vegetables and the peanut sauce and toss well to combine. 4. Keep stirring for 2-3 mins then serve noodles into bowls. Sprinkle with sesame seeds and coriander and serve with lime wedges.
