I had a really rough start to the week. The time change fucked me up badly even though it was just a one-hour shift :( and I think something else unknown and weird might have been going on. I felt super tired and achy, with sore joints and muscles, for days. Also November is notoriously gray and overcast here, so I missed sunlight. Monday was 0/10 thanks to feeling depressed, tired, and working from 6-8 PM for job #2. Thankfully things improved a little every day, and I totally rebounded physically and mentally by Thursday. :) just in time for the weekend!
good things,
Derek and I are LOVING watching Severance. We're seven episodes in. It's such a compelling mystery.
We finally started watching Spy x Family this week! We're early into the season, just a few episodes in, but I adore Loid, Yor, and Anya. ❤️
I had the time and energy to read a few chapters of my anthropology textbook this week, and I just have a couple of chapters left! Reading about the process of human evolution has been so fascinating. I never got to learn about human evolution in depth in school, probably because of the states I lived in during my youth (Texas and Arizona). It's been incredibly fascinating to learn about it in detail. It really sparks my imagination to learn about the origins of humanity, and how and why early humans migrated out of Africa, and how different aspects of culture (tool use, language, burial practices, hunting, use of fire, etc.) evolved. I haven't been so interested in a subject since I got into public health at the beginning of 2022, and I think there's a good opportunity for overlap in learning about medical anthropology. I plan on treating myself to one anthropology textbook a month.
The cold weather means I can't take my cat Westin out for walks anymore :( but I've been playing with him a lot with his other toys, and he really enjoys that.
I've been able to cook some good recipes this week. Kung pao shrimp, tandoori chicken, spinach dal, a Mexican taco skillet dish, and pan-fried Indian-style salmon. I think Derek and I are planning to go out for dinner tonight though since we haven't been in a while, and I'm excited for that. :)

Bengali style Fish curry
Tumblr media
https://sanjibskitchenrecipe.com/delicious-bengali-fish-curry/
Bengali fish curry, also known as “Maacher Jhol,” is a classic and beloved dish in Bengali cuisine. It’s a flavorful and aromatic curry that showcases the region’s love for fish and intricate blend of spices. This delectable curry is perfect for any occasion, whether you’re hosting a family gathering or simply craving a comforting and satisfying meal.
Bengali fish curry Ingredients:
5-6 pieces of fresh fish (such as Rahu or Katla)
2 medium-sized onions, julienned
100 gm tomato paste
10 ml mustard oil
1/2 tablespoon turmeric powder
1 tablespoon red chili powder
1 tablespoon coriander powder
Salt to taste
1/2 teaspoon garam masala
Bengali fish curry Preparation:
Begin by cleaning the fish pieces thoroughly under running water. Pat them dry with a paper towel or clean kitchen cloth.
In a mixing bowl, combine the fish pieces with a pinch of salt and turmeric powder. Gently massage the marinade into the fish, ensuring each piece is evenly coated. Set aside for 10-15 minutes to allow the flavors to meld.
Heat mustard oil in a pan or kadhai over medium-high heat. Once the oil is hot, carefully add the marinated fish pieces and fry until they turn crispy and golden brown on both sides. Remove the fried fish from the pan and set it aside on a plate lined with a paper towel to absorb any excess oil.
In the same pan, heat a little more mustard oil. Once the oil is hot, add the julienned onions and sauté until they turn golden brown and fragrant.
Next, add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Stir continuously for about 1-2 minutes, allowing the spices to bloom and release their aroma.
Incorporate the tomato paste into the pan and cook for 2-3 minutes, stirring frequently, until the paste is well combined with the spices and onions.
Carefully add the fried fish pieces to the pan and gently mix them with the spiced tomato mixture, ensuring each piece is coated evenly.
Pour in about 1 cup (100 ml) of water and sprinkle the garam masala over the curry. Give it a gentle stir to combine everything well.
Cover the pan with a lid and let the curry simmer on low heat for about 5-7 minutes. This step allows the flavors to meld together and the fish to absorb the rich, aromatic curry sauce.
After simmering, remove the lid and check the consistency of the curry. If you prefer a thinner gravy, add a little more water and let it cook for an additional 2-3 minutes.
Once the desired consistency is achieved, turn off the heat and let the curry rest for a few minutes before serving.
To serve, ladle the Bengali fish curry into bowls or plates and garnish with fresh coriander leaves or a sprinkle of garam masala. This delectable curry pairs beautifully with steamed rice, allowing the aromatic gravy to soak into each fluffy grain.
Bengali fish curry is a true celebration of flavors, showcasing the perfect harmony between the fresh fish, aromatic spices, and tangy tomato base. The depth of flavor in this dish is truly remarkable, with each bite offering a burst of taste and aroma that will transport you to the heart of Bengali culinary traditions.
Whether you’re a seasoned Bengali food enthusiast or simply seeking to explore new flavors, this authentic fish curry is sure to delight your senses and leave you craving for more. Enjoy it with loved ones, savor each bite, and let the warmth and comfort of this dish envelop you in a culinary embrace that captures the essence of Bengali hospitality and deliciousness.

A: Yes, you can use fresh tomatoes. Roughly chop 2-3 medium-sized tomatoes and cook them down until they form a pulp before adding the spices.

Q: How do I achieve a thicker gravy consistency?

Q: Can I make this curry ahead of time?
A: Yes, this curry can be made ahead of time and stored in the refrigerator for up to 3-4 days. The flavors will develop further, and you can gently reheat the curry before serving.
Q: Can I freeze the leftovers?
A: Yes, you can freeze the leftover fish curry for up to 2-3 months. However, keep in mind that the texture of the fish may change slightly after freezing and thawing.
Q: What should I serve with the Bengali fish curry?

I’m currently reading the complete Hans Christian Andersen, and whilst I’m past the halfway point I’ve been at it since the 13th of December, so I thought I’d do a little bit relating to my partner and I’s resolution this year.
We’ve got a lot of recipe books- we love cooking, and our families often gift us with new cook books, so we’ve resolved to cook at least one new recipe every week. This book we got a couple of years ago, and it’s become our go-to every time we write a shopping list- everything so far has been super tasty and very straight-forward.
Recipes made so far:
Baked gnocchi
Pea, feta and dill frittata
Turkish-style eggs with yoghurt and greens
Puttanesca baked eggs (this has become a favourite)
Salmon with puy lentils and mustard crème fraîche (this is so simple but it feels like a treat)
Smoky mackerel carbonara
Chicken with artichokes, leeks and tarragon (portions in this book are normally about right, but this claims to serve 2 and definitely serves 4)
Pearl barley and leek risotto
Freekeh mujadara
Herby sausages with lentils and cabbage
Frying pan pizza
Vegan black bean stew
Indian baked chicken and rice
Beef massaman curry (this is the best damn thing I’ve ever cooked, I’d have this every week if I could)
Steak and ale stew with herby dumplings
Spiced fish and couscous (another favourite)
Pea and potato curry
Easy cheesy lasagne
Harissa-baked chicken and sweet potatoes
Fish in chraimeh sauce
Hot-smoked trout and watercress tart
Beetroot, goats’ cheese and walnut tart
Pros:
One-pot, so low amounts of washing up
Everything we’ve made so far has tasted fantastic
Easy, clear recipes
Tips and suggestions for tweaking
Cons:
Despite claims that various ingredients should be easy to find, it does depend on your area- fortunately substitutions usually work well

notes for today,
Cooking has gone really well lately! Over the past week, I've made a really good dish from my countries of Eastern Africa recipe book with black eyed peas, sweet potatoes, peanut butter, and spices. So good. I've also made Indian kofta curry and chicken curry, a Japanese curry, and I'm making Indian-style fried salmon tonight. I LOVE listening to my true crime podcast while I cook, too. It makes it so much fun.
I ordered a leash and harness for Westin the cat from the pet store. I'm going to go pick it up later today when it's ready. I want to try taking him out into the backyard so that he can feel the grass underneath his paws and engage in his favorite activity of trying to catch fallen leaves. ❤️
Derek and I started season two of the Love is War anime... I forgot how much I missed this show. :)
We are still loving D&D!!! It is so much fun!
Trying to stay positive about the coming work week and not give into the Sunday blues... it's hard. I'll just try to get through it as best as I can.

Well, sleep's crap and going out is no longer much of an option, but I'm putting a lot more effort into my meals these days. Though that hassle is counterbalanced by the fact I make enough for three days in a row.
Some of the recipes I’ve made lately:
- oriental-style mashed potatoes with coconut milk and paksoi and sweet-spicy pork - tom kha soup with extra vegetables - shakshuka with chorizo and mushrooms - peanut curry chicken with zucchini - chicken stew with beer - Italian fish stew with almond butter and couscous - spicy mackerel and green bean salad with rice
Still to try next are a zucchini soup with smoked salmon, Indian curry with salmon and cauliflower rice, and oriental chicken soup with peanut butter and bacon.
Good food has such a significant effect on how you feel throughout the day.

For part two of this review, I decided to try some recipes to see if they worked. As mentioned earlier, the book is divided into two parts – recipes for upstairs and for downstairs. Both parts are further subdivided into breakfast, lunch, afternoon tea and dinner. Browsing through the cookbook, there were recipes I immediately thought would be good to try while others were quickly dismissed for reasons I will outline in my conclusion.
As someone who works full time, my main qualifications for a recipe is it should require minimal preparation and it should be quick to cook. Sure I’ll do something more complicated but that’s usually restricted during the days when I’m off and when I have more time.
But I digress. From the recipes I thought would be a good idea to try, I decided on two that I would review for this blog and both of them are versions of dishes that we (me and my husband) cook and eat on a regular basis.
KEDGEREE (P. 34)
Kedgeree is a dish that is Indian in origin; the original is called khichri which is a mix of rice and dhal. This later evolved into a dish that contained smoked fish and became a staple in upper class Victorian and Edwardian breakfast buffets. At present kedgeree makes a good brunch or dinner dish, there’s something comforting about curry flavoured rice with flakes of smoked fish served piping hot.
I’ve been cooking this for years and my go-to recipe is that from Delia Smith’s Complete Cookery Course. What attracted me to try this version is to see if I can make it the same way the Victorians did. My first impression was this was more like fried rice since it called for cooked rice rather than raw. There was also white fish instead of smoked and I was dubious about the cream. Instead of curry powder, the recipe called for cayenne pepper.
Tumblr media
Gray mentioned in her blog that the original source of the recipe was from a long forgotten cookbook entitled The Cookery Book of Lady Clark of Tillypronie (1909). Having examined a copy in the British Library, Lady Clark had three versions of kedgeree and I can safely assume that what’s in the Downton Abbey cookbook is a combination of all three.
When I made this dish, I reduced all the quantities by half and much like Delia’s version, it was easy to prepare and cook. The cream I later learned stopped the rice from going dry and helped keep the grains separate while mixing everything together. In addition this is a good recipe with which to use leftover cooked rice. However my husband thought this version was bland and while the method certainly worked, I will definitely use smoked fish and curry powder next time.
  PRAWN CURRY (P. 135)
The first curries were introduced into the UK during the 18th century but it was via post-World War 2 immigration from the Indian subcontinent that familiarised Britons to a wide variety of curry dishes such as Jalfrezi, Rogan Josh and Korma. Curries have become such an integral part of the contemporary British culinary landscape that “having a curry” from a local takeaway has become a regular treat for many households.
Like the Kedgeree above, this Prawn Curry recipe is easy to prepare and it makes use of ingredients that could be found in my cupboard or easy to obtain from the local supermarket – curry powder, coconut milk, spinach, onion, prawns, etc. This recipe is also versatile, as Gray writes in the introduction; other seafood such as fish could be used and I would recommend this good way to get children to eat vegetables as well as introduce them (or anyone who isn’t familiar with the dish) to food that has more complex flavours.
Tumblr media
This brings me to my problem with this recipe as like with the kedgeree, it was bland. Perhaps this is not the recipe’s fault as we’ve been accustomed to eating more authentic curry and this one seemed to be more of a poor copy of the real McCoy. However, my husband suggested adding salmon to the recipe and adjusting the quantities of the spices to see if it makes a difference.
  CONCLUSION
Both these recipes are from the upstairs section of the cookbook and I have to say that this tome is not really one that can be used for everyday meals, perhaps more for special occasions or during the weekend when one has more time to shop and prepare for meals in advance. As the Kedgeree and Prawn Curry have shown, many of the dishes have not aged well as either they have fallen out of fashion or in the case of the curries; they have been supplanted by more authentic ones that can be recreated at home due to access to the ingredients that can easily be found in supermarkets.
Other recipes are simply too complicated and labour intensive especially with today’s more time poor lifestyle (and no servants) and the reality that many of us live in flats where the kitchen would barely cover half in a country house. In addition many of the ingredients such as quail are simply expensive or inaccessible if one doesn’t live near a local butcher (or even if they stock it).
On the positive side however, the recipes gives the reader a glimpse into what people ate during the late 19th and early 20th centuries and while French cuisine and influence reigned supreme, there was also the influence of the British Empire. The recipes crucially also work, as Gray writes in a clear and concise style which reminds me of Delia Smith hence making them easy to follow.
Book Review: The Official Downton Abbey Cookbook by Annie Gray Part 2 For part two of this review, I decided to try some recipes to see if they worked.
