Dinner Recipe: Slow Cooker Southwest Chicken

This is another insanely quick and easy crockpot recipe. You're just throwing the stuff into the pot for 3-4 hours. It takes about 10-15 minutes to prep.
The ingredients are all fairly cheap, and this is typically served over rice, so it's also filling!
It's basically a southwest-flavored chicken chili! Tips: -I added half an onion, a tablespoon of minced garlic, and a serrano pepper to this recipe. I was surprised to see none of it was in there already, but I highly recommend at LEAST doing the onions and garlic. (Garlic/ onion powder would also be good.) -I halved the amount of salsa, black beans, and chicken broth. I had been reading some reviews that said the recipe as-is turns out a little soupy for their tastes, so I pre-empted it. -I doubled the pepper, salt, and cumin. But this is something you can do to an individual serving! -This recipe is REALLY good with corn-chips. You could also totally put avocado, cheese, or sour cream on it!

Leftovers: Apparently this recipe freezes and reheats in a pot/pan VERY well, so this would be great to cook in bulk on a weekend and reheat periodically over the course of a month or two!

Slow cooker chicken tacos for dinner. The easiest fucking meal ever and it tastes so amazing. Here is the quick and dirty recipe
You need chicken, a jar of salsa, taco seasoning. Maybe some stock or water.
Breasts or thighs work, just make sure they are boneless and skinless. You can use whatever salsa you want. If you like it spicy, use spicy stuff. If you use a ton of chicken, maybe use a couple of jars. Taco seasoning is just one packet, but if you're making more than four pieces of chicken, maybe get a second packet.
Dump all of this into a crockpot and maybe add a touch of liquid so the chicken doesn't dry out. You can also use frozen chicken breasts but maybe skip on the liquid.
Cover and let cook on low for 6 hours or high for 7 hours. Once it's done just shred the chicken and make tacos with whatever toppings you like.
It's dead easy, cheap as fuck, and it's really hard to fuck it up.

hey i wanted to ask, how was that slow cooker meal you made a week or so ago? i hope it was good. im making chicken and rice and salsa in my slow cooker and thought of your slow cooker meal while putting it together.
it was fantastic. a whole pork shoulder fed me and my mom for like a week straight. we got sick of pulled pork before we ran out, even though it was pretty damn tasty pulled pork
it was pretty simple tho. rubbed the pork in a little bit of spices, added some sliced onions, and a whole bottle of the cheapest apple juice money can buy. cook low for 8 hours. remove pork. shred. add in ladlefuls of the cooking liquid and a little bit of bbq sauce (we did honey bbq specifically) until it stops absorbing liquid.
i hope your slow cooker meal turns out epic as well. i really need to find more slow cooker recipes to make more regularly because its such a fun (and torturous) process. i also like to make chili in the slow cooker 👍

Since I am having both a Bitch, You Need To Cook Something week and a Girl Help I Have No Fucks To Give For Cooking week, I'd like to share with you my go-to recipe for such times. It is quite literally the easiest, least time- and spoon-intensive recipe I have, and comes with the double bonuses of also being tasty as hell and making--and I cannot stress this enough--a shitload of food, and thereby eliminating the need to cook again for at least a few days (so long as you like leftovers).
Salsa Chicken
3 boneless, skinless chicken breasts (or 2 if one is really hefty)
2 medium jars of salsa (or one 24 oz. jar)
1 can of black beans, drained and rinsed
1 frozen package or can of corn (depending on how much you like corn)
Place chicken breasts in a slow cooker and cover with salsa. Cover and cook on low 5-6 hours or until cooked thoroughly. Pull apart/shred chicken, then add beans and corn and stir. Cover and cook 15-20 minutes, or until beans and corn are heated. Serve with rice in tortillas or with tortilla chips.
And that's it! Super simple, very low effort, and very tasty.

For easy, cheap meals my go-tos are usually:
- Breakfast burritos (you can keep tortillas in the freezer/fridge, salsa, sour cream, cheese, eggs however you like, if you have extra lunch meat or leftover meat it can be thrown in)
- Tuna rice bowls (canned tuna with a little mayo, rice, I usually keep frozen edamame in the freezer, if you have furikake or seaweed snacks those are nice to top with, sriracha)
- Basically lunchables (crackers of choice, cheese, lunch meat if I have it, any fruit I have on hand but honestly grapes and apples are my favorite with the cheese)
- In college I used to keep a jar of pesto on hand and whenever I made pasta would just finish it in a pan with pesto, cheese, and milk to make a creamy pesto sauce
Whenever I do have like a really good weekend day or burst of energy, I try to make something that I know will last me a few days or will freeze well (like jambalaya, an easy soup from scratch, etc). I’m not the biggest fan of slow cooker recipes but honestly they’re often low effort and I will make some every now and then to save energy!
Thanks a lot, anon! I'll keep all of those in mind--I actually just bought some tortillas earlier today for chicken quesadillas so burritos are certainly another option!

Honestly? I'm gonna sound like the oldest lady, but Noxzema. I use it in the morning and evening and have since I was like, 15 or something. It's been the one constant in my beauty routine for pretty much my whole life. My grandma always used it too, and told me that if I wanted to keep my skin soft it's what I should use too. It certainly does do that.

I am going to cheat a little for these chicken tacos, because there's a few more than 5 ingredients, but it only takes a hot minute to pop in the slow cooker, then it's ready when you get home. This one is really popular with our kids: 1. spray crockpot with cooking oil 2. add 3-4 good-sized chicken breasts 3. add onion, garlic, and a packet of taco seasoning 4. add a cup of frozen corn and a can of rinsed black beans 5. top with a small jar of salsa (spiciness of your choosing) 6. cook on low for 8 hours or high for 4 hours 7. shred chicken in the the pot 8. serve on hard or soft tortillas with toppings of your choice!
