Okay I may have made a massive mistake. The close proximity of my pepper plants appears to have participated in various levels of #MicroEvolution... I have no idea how hot these things are going to be. It looks like the red #GhostsPeppers have turned yellow and the orange habaneros have also turned various shades of yellow... the #ScotchBonnets and #ScotchBrainStrains (not pictured) appear to have won some kind of #genetic warfare. I guess I will have to take pictures and careful notes and then eat everything noting flavor and heat. Anyone want to come help? I dropped by Preux & Proper after visiting the LA Convention Center and a quick trip to Little Tokyo in my pursuit of Cosplayers. I stopped by the new Krab Queenz in South Park. There was a line and I saw they served drinks in plastic cups. I’m not much for plastic although the place intrigued me. I still had Cajun urges and I sought out Preux & Proper. They had had a tasting earlier in the week I missed and I was curious. I always liked that corner spot that separated Main from Spring Street. I was attracted to the bar but settled near the patio entrance that divided Main from Spring. It was a low key Sunday and I liked it that way. I settled on the Lamb Ribs (Jamaican jerk rub, passionfruit-scotch bonnet bbq, radish pickles) and a glass of ice tea. Notice all the cool foodie key words in describing the lamb ribs! Surprisingly, it was hot from the scotch bonnet bbq but sweet and sassy. The pickled radishes were delicious too. So, I made hot sauce with the superhot peppers I was given! I worked from a blend of a couple different recipes I found and some ideas from friends. I roasted the ghost and scotch bonnet peppers with a jalapeño and a couple of poblanos in a VERY WELL VENTILATED kitchen. I also roasted an onion, a build of garlic and a carrot. Put it all in a food processor. Added cider vinegar, fresh lime juice, very dark local maple syrup, and salt. Then some white vinegar. And some more white vinegar. Then a little more white vinegar. And some water. The hot sauce was super successful! It’s very tasty! And juuuuuuuuuuuuuuuuuuuuuusssst tolerable! Here’s the finished product!
