Baking Highlights 2023
I have baked significantly more this year than I have in any other, and also tried many, many more new recipes. This was partially the result of really intensely using baking as stress relief, but I am happy about it.
Some highlights, with recipe links where I can find them though I mostly bake out of my print cookbooks (this year my biggest successes were almost exclusively courtesy of Deb Perelman/Smitten Kitchen), include:
48 Oreo cupcakes baked on a work night
Raspberry-chocolate-almond rugelach
Molasses spice cookies (I did both Perelman and Saffitz' spice cookies this year, and Perelman wins)
The best pound cake I have ever made
An even better lemon poppy seed than my previous standard one
Strawberries and cream layer cake also baked on a work night
The most complicated rhubarb loaf cake ever, which was none the less worth it (this one was a Claire Saffitz)
Marbled bundt cake which exceeds all my expectations for marbled cakes by quite a lot
Raspberry muffins i.e. the first time I've been satisfied with muffins of mine
Stone fruit cobbler
Birthday tea party menu
Pumpkin bread
Salted halvah blondies (another Claire Saffitz)
Flourless chocolate cake

In 2024 I hope to keep baking a lot, and to get comfortable with some more complicated techniques, particularly making custards and meringues and working with yeasted doughs (brioche, babka, cinnamon rolls, etc).
I am glad that this is a part of my life, though I do truly wish I had more people to give my baking to.

Stardew Valley ladies’ favorite desserts (including SVE) 
Abigail
this girl is all about the desserts - banana pudding, blackberry cobbler, chocolate cake. Picks fresh blackberries from your farm every year. 
Gets bananas from Ginger Island to make her own banana pudding. Definitely needs multiple alarms to remember to remove items from the oven. 
loves everything pumpkin spice - mousse, pudding, pies, cakes, muffins, bagels, etc. 
is first in line for a pumpkin spice latte. Complete with a cozy hat, scarf, and sniffing the steam from the beverage with a pleasant sigh. 
chocolate pumpkin donuts? Is that a thing? 
sucks on rock candy - nearly chipped a tooth once. 
would drag the Farmer around the Spirit’s Eve festival to get all the pumpkin treats and candy (no black licorice though, please)
Claire 
enjoys fruity desserts - apricots are her favorite. 
Apricot jam and scones is a perfect snack with a hot cup of tea. 
also loves apples - and bakes an apple pie every fall. 
Eats a slice while in her garden and watching the birds at the feeder. 
secretly stockpiles recipes from the cooking channel and her favorite movies. 
stocks up on discounted joja candies and feels guilty about it later. 
if in a romantic relationship, would enjoy a lazy afternoon between leafy fruit trees, lying in the grass, eating fruit and fresh cream on the farm. 
Emily 
drinks a kale and fruit smoothie every morning before she meditates. makes dessert alcoholic beverages all the time at Gus’s. Hardly anyone buys them, but she enjoys making pina coladas with fresh cherries and pineapple from your farm. 
when she’s in a silly mood, she will put a scoop of ice cream in a beer after work. Gus might join her if he’s in a particularly jovial mood. Sam would absolutely join, but more ice cream, less beer. 
picks up cranberry candy every time she visits Ginger Island 
bakes rhubarb pie. She’s halfway decent in the kitchen, playing very zen music when she cooks. Might overload on sugar. 
In a romantic relationship, the Farmer would be the unwitting participant in taste testing Emily’s sugary desserts and beverages. 
Haley
Pink cake is her favorite. 
definitely owns a frilly apron. 
Dances in the kitchen a bit when baking. 
eats ice cream with sprinkles. 
organizes a cake walk fundraiser nearly every year. Coordinates with all the ladies of the community. Jodi, by far, bakes the most cakes - there’s always an overload of chocolate cakes of various sizes (perfectly iced).  Marnie enters a pumpkin cake. Robin “makes” a peach cobbler (really it’s Sebastian with Robin’s help). Caroline makes tea cakes. 
Is very particular about the display of cakes, with her own right in the center on a lacy pedestal. 
Any excuse to bake a cake for the farmer if in a romantic relationship, with fresh ingredients from their farm. 
Leah 
Not a big sweets person. Likes fruity dessert salads. 
Foraged berries are a great treat! Salmonberries, blackberries, 
Enjoys a slice of cheesecake every once in awhile - made from goat cheese. 
really, really, really loves fruit punch (especially when it’s spiked) 
needs Elliott (or the Farmer) to escort her home as she trips over her own feet if she’s too far gone on the “punch” 
skips out on Haley’s cake walk - yuck! Pink cake! Blech! 
Also doesn’t like cookies or ice cream. (What’s with this woman!) 
Makes an exception for stardrop sorbet when it’s available at the movie theater. 
Maru
kindly eats Emily’s (too sweet) rhubarb pie without complaint 
this girl adores strawberries - fresh strawberries and cream is a delightful late spring treat. 
also will eat pretty much any strawberry dessert - strawberry pie, strawberry pound cake, strawberry turnovers
makes little strawberry jam thumbprint cookies for everyone’s Christmas stockings. 
buys Miner’s Treat from the Adventurer’s Guild regularly. (cave carrots, sugar, and milk so I’m guessing carrot juice smoothie popsicles?) 
asks Alex to make her a strawberry soda shake in the summertime 
begs her dad to take her to the Strawberry Festival in Grampleton. Demetrius still goes with her every year even if she can drive herself now.
if friends with the Farmer, would invite them along on her annual trip to the Strawberry Festival. If in a romantic relationship, would take the farmer sans Demetrius. 
Olivia 
cannot bake to save her life, but will eat plenty of chocolate and pink cakes. 
spends the most money at Haley’s cake walk. gifts to all her friends. 
loves dessert wines, especially when paired with cake. 
also loves coffee-flavored desserts like her son. will dip biscotti in her afternoon coffee. 
happens to enjoy apples dipped in caramel in the fall. got really into it one year and tried to make her own. the canning turned into a disaster. the apples were good. 
would love to be invited apple picking if the farmer is offering. if in a romantic relationship, she would bring a favorite recipe for apple cake she has stored for years and shyly requests the “cutie” make it for her. 
Penny
loves poppyseed muffins and poppyseed cake. 
while she can cook, she doesn’t bake well. Prefers to buy her baked goods from Joja or Pierre’s. 
that time she ate so many poppyseed muffins in high school that she tested positive for drugs by accident. She was so depressed, she ran away and cried up on the mountain and actually did weed with Sebastian. 
she enjoys a good watermelon smoothie in the summertime. Alex keeps extra in stock just for her. 
If in a relationship with the farmer, she regularly makes poppyseed muffins for breakfast. 
Sophia
orders Japanese candies off the internet 
keeps a stash of candy in her apron to nibble on throughout the day 
likes unusual fruit cookies - apple and cinnamon chips, passion fruit cremes, rhubarb macaroons, mandarin orange flavored pizelles. 
also would roll mochi with Sebastian late at night, if he would let her join him. brings wine from her farm to share. 
leaves little treats out for the fairies on the eve of spring (like kids leave cookies for Santa). It’s a superstition she’s had since she was a kid. Has never failed to help her crop season.
would absolutely go do karaoke with friends and order all sorts of desserts for them - green tea ice cream, coffee jelly, banana sushi 
if in a romantic relationship with the Farmer, would bring them a slice of Japanese cheesecake on the new moon.

Red Root Spice Cake
Now firstly, I just want to say this cake doesn't contain *spice* spice, just delicious seasonings. I would've named the cake something different (I mean, think of the risk I'm taking, even putting this on the Holonet - I'm just asking to be interrogated by overzealous Imperial Officers, for a second time!), but then again, I didn't name it. In fact, the person who did would be extremely upset if I were to change the name. Who named it, you ask? Well, you didn't hear it from me but Greedo, a notorious bounty hunter, is said to have liked a piece of Red Root Spice Cake (perhaps with actual spice) at Chalmun's Cantina in Mos Eisley, Tatooine after a job. I won the recipe playing against Chalmun in a spine-tingling game of sabaac in my younger days - and let me tell you, that was a game for the history holos! But you'll have to ask me about that some other time. In any case, the cake is delicious the way I make it, no spice needed!

Red Root Spice Cake
Ingredients
2 Bananas, small
60g Brown Sugar
200g Raw Sugar
250g Butter
2tsp Vanilla
1/4tsp Salt
2 cups GF SR Flour
1 cup Hazelnut Meal
5 Eggs
4tsp Pumpkin Pie Spice (A spice mix from Gewürzhaus Spice House containing: Cassia, Nutmeg, Allspice, Ginger, Mace, Clove)
3tsp Cinnamon
3-4 stalks of Rhubarb, chopped into inch-sized pieces
Method
Preheat the oven to 175/180 degrees celsius
Melt the butter in microwave until liquid
Mix in the sugar to dissolve
Add bananas and mix in electric mixer
Add in all the other ingredients as you mix until mixture is smooth and there are no lumps
Pour/spoon mixture into large cake tin or muffin trays and liberally insert rhubarb pieces
Muffins cook for approx. 20-25 mins, slab cakes for 45-50 mins

Okay this one was very cute and as mentioned above, it felt very healing. Hermoine goes on this PTSD Pastry Tour with the goal of her own self healing by making ammends and forgiving everyone to leave that door open for healing. The story itself is very focused on the Dramoine friendship and relationship, which is a nice break of the usual "Greyback is stalking and trying to murder Hermoine" fanfic plotline. Overall a really good comfort read.

Hello, all you lovely, wonderful people!
As my followers that have been here the longest may know I love baking!
I think it's a lot of fun, and it's a great way to show others you care about them. Baking is one of my love languages and it mixes well with one of my other love languages gift giving!
So, because of this, I thought it would a great idea to make an entire prompt list dedicated to all kinds of sweet treats. There are many, many baked goods that are perfect for all types of occasions so in my opinion, a sweet-themed prompt list is perfect for writing!

Hey folks! So in honour of my asshole gallbladder being evicted post-haste, and based on the fact that I can't consume anything by mouth right now so I'm literally dreaming about food, here's some recipe recommendations.
These are my absolute favourites, and I'm going to order them based on how many spoons they require to make.
(Please note this is not... literal spoons, if you're new here. Go look up the Spoons Theory and thank me later)
Final note - I'm not a very good cook yet. I have OFTEN destroyed meals. So the vast, vast majority of these you can follow the instructions exactly and it will taste like it's supposed to. Practice with cooking definitely makes it easier to understand how to cook well over time, but also I have ADHD and my life is much easier when I can just follow a dang list of instructions.
Here we go!
Low Spoons
Instant Pot Indian Tomato Coconut Soup*
Do you like tomato soup, but wish it had some more flavor? This is it. I dream of this soup sometimes. I would kill a man for this soup. Also, all the ingredients are shelf-stable, which is incredibly convenient, and with the added bonus of being dairy-free. Shout out specifically to @hthrrloooo for this one.
Norwegian Rhubarb And Almond Cake
You want to look fancy as shit at whatever thing you're going to? This is your dish. It's super easy to make and fast - I can make it in under an hour - prep, bake, everything. It also tastes incredible, the almond with the rhubarb balances sweet and tart. Also it makes an amazing breakfast.
Artichoke Tomato And Spinach Flatbread
Again, you look fancy, without having to be fancy. It's pretty fast too, so it makes a great dinner. My mom loves this one, it's like spinach artichoke dip on a pizza.
Southwest Quinoa Power Bowl with Honey Lime Dressing*
This is an excellent example of "power bowls", which is a slightly ridiculous name for grain based bowls with proteins and a dressing. I usually change out the quinoa for rice because I don't like quinoa, and for the "adobo seasoning", you can also use spices like chili powder, paprika (that one is strong though), onion powder, and garlic powder. Or buy a shaker of a southwest spice, honestly. This is a great way to learn how to put together a bowl like this - which is usually grain base + cooked veggies + raw veggies + protein + dressing. I will say to taste the dressing as you make it.
Best Tuna Casserole*
I ate SO MUCH of this in university. It is cheesy. It is crunchy. And it is cheap and fast. It's... probably not the healthiest option but who cares. I usually leave out the peas and mushrooms, but that's because I don't like them very much in casseroles. Also as a note - it won't taste like cream of mushroom, that's mostly a base.
Banana Chocolate Chip Muffins
These muffins, my beloved <3. An easy baked good, pretty cheap and fast to make. I also grew up eating a ton of these, so I find them very comforting. You have a friend that needs comfort? Make them these.
Sausage And Potato Roast With Arugula
I bow down to this as the ultimate weeknight meal. It can come together in a half hour, you throw most of the ingredients on a pan, and then add the arugula afterwards. I usually use balsamic on it, because I like pain, but you do you. You also can use regular potatoes and onions, it does not change anything. Sheet pan meals are your friend, folks, and there's a million of them.
Chickpea And Pumpkin Curry*
So cheap! So tasty! So easy! You can absolutely use canned pumpkin instead of actual pumpkin, and you can throw in other things too - chopped carrots or potatoes, cooked chicken, you name it, to make it go farther. Add more salt to this one though. Don't buy canned pumpkin PIE filling by mistake. I will say that's a mistake you only make once.
Medium Spoons
Singapore Noodles With Crispy Tofu*
VERY cheap, which is probably why it's on a website called Good and Cheap lol. I highly recommend that website if you're on a tight budget, it has absolutely saved my butt a few times. Go easy on the sriracha unless you crave the burn though.
Vegan Butter Chicken (with Amazing Tofu)*
This is a recent favourite. I have some issues with dairy (see... the reason I'm typing this lol) and vegan recipes are kind of helpful because they don't have dairy. Also, I like tofu. This is nice and warm and comforting. Also pretty cheap!
Bacon Brussels Sprouts Fried Rice
Ok I know what you're thinking. "Brussel sprouts? Aren't those disgus-" and that is where you stop because I am looking at you with murderous intent. This is the recipe that made brussel sprouts my favourite vegetable, because the trick is ADDING OIL AND FLAVOR. And NOT. BOILING. THEM. EVER. Fry them! Or bake them in the oven! Do not turn them into horrible goop. Anyways. I love this recipe so much, and there was a period when I was making it, like, every two weeks. Fairly cheap, easy, and so so so comforting and tasty. Also alternatively fry some brussel sprouts in a pan with butter - ok ok ok I'll stop.
Challah Bread
My go to, no fail, I-WILL-make-you-love-me bread recipe. Bread can be tricky and intimidating to figure out because there's a fair amount of intuition with it - I'm not great at it yet. But this recipe has enough other things in it that it's pretty fool proof, and oh my god it's so good guys. It's so lovely. It single-handedly won over the extended family of my partner. Also it'll get fucking huge so fair warning, you'll have a LOT.
Pumpkin Chili
The only chili I make. I'm serious. You can follow it exactly and it will be amazing every time. Can you tell I love pumpkin yet? This is rich and smoky and uuughhh I love it. It takes some time (chopping everything and measuring, mostly) but it's so good and makes a ton of food.
Chickpea Casserole with Lemon, Herbs, and Shallots
You want an actually vegetarian casserole? More importantly, you want leftovers for the next 3 weeks? This is your friend. Takes some time to put all of the ingredients together, but man is it worth it for the amount of food it makes, and it's really nice and fresh.
Twice Baked Chicken Pot Pie Potatoes With Crispy Bacon
Do you like chicken pot pie? This is chicken pot pie, but a million times easier and without needing to make pastry (my partner has to make the pastry in our apartment. Mine is like cardboard). It makes a pie filling's worth of sauce, and I usually bake like 5 potatoes at a time and then keep the sauce separate in the fridge and eat it for a week. You can leave some of the things out if you like and it'll still be good - like in university I didn't want to pay for bacon, so I left it out. Or add something else! Sausage! Turnip! Peas! A protein substitute! More cheese! The world is your potato.
High Spoons
Dark Chocolate Chunk Raspberry Crumb Muffins
I made these recently and oh man are they good. They're now one of my showing-off baked goods. High spoons because they actually do take a fair amount of ingredients and prep time, but it is worth it. (I got ONE of these before I got sent to the hospital. I'm still bitter)
Three Layer Pumpkin Brownies
These ones definitely need a fair amount of time to make. Not a lot of skill! Just time, because of all the layers and needing to chill them. They are very decadent and rich. And also it makes a ton. I make them for Thanksgiving most of the time. And again featuring my best friend, pumpkin lol.
London Fog Earl Grey Tea Cake
Ok you want to show off? Look frigging fancy? Have a tea party? This makes you look fancy as shit. It does take some time to put together, and you do need to be careful with measurements and baking time because it's pretty delicate. But it's absolutely gorgeous when it turns out - light and delicately flavored and sweet.
Eggplant Fatteh - Lands and Flavors
OK so. Unfortunately I don't have a link right now, because hospital wifi is ehhhhh. BUT. It's so good. It's definitely high spoons, and I don't make it very often, because you will be stuck in the kitchen for a long time. Absolutely use premade pasta sauce instead of making it on the fly, unless you're some kind of wizard. It is worth it though, it's very tasty and filling and has a lot of flavor. My partner actively bribes me to make this because he likes it so much.

It’s super easy to get in over your head when you’re figuring out how to bake, so here’s some ideas for simple things to try out. Feel free to add on :)
•Mug Cakes/ Ramekin Cakes🍰
Mug cakes tend to come out a little spongy so I’m not a fan but they were the first thing I learned to do by myself when I was little! Ramekin cakes are just lil cakes you pop in the oven; less daunting than a ‘real’ cake and you don’t need a mixer
•Chocolate Chip Cookies🍪
Easiest cookie imo, try some variations! When done, the edge along the bottom will be visibly browning and the top will not be shiny. Once you’ve got this, try: oatmeal raisin, crinkle cookies, gingersnaps, peanut butter cookies, etc etc
•Brownies🍫
Use a mixer or your arm will fall off. Trust me. Put in chocolate chips or nuts, icing on top or just plain icing sugar. When done, they’ll pull away from the edge of the pan and your toothpick should be clean
•Apple Crisp🍎
Or strawberry rhubarb, blueberry, whatever floats your boat. It’s literally fruit, sugar, spices, and then the topping of oats, spices, butter, etc. On that note: apple pie filling is ridiculously easy, just buy a crust if pastry seems too difficult!
•Banana Bread🍞
Or zucchini bread. Or pumpkin loaf. Takes longer to bake, but still easy to put together. Add in literally anything you want
•Muffins, Cupcakes🧁
Like cake but less scary. Don’t overfill your cups, and don’t leave any batter on the pan outside of the cups, it’ll burn on. Toothpick it, or gently press on the top: a cake-thing should bounce back when you put your thumb on it, if there’s a dent left it’s not done.
•Coffee Cake☕️
Like a dense cake, generally with some crumble topping. It’s so good. Very simple.
•Drop Sugar Cookies✨
Simple recipe BUT be careful; if you work the dough too much it’ll stiffen! Drop cookies are way easier than chilling dough and rolling it even.

General – generelt
dessert (fk.) – dessert
wienerbrød (itk.) – Danish pastry
kage (fk.) – cake
slik (uncountable, itk.) · godter (uncountable, pl.) – sweets/candy

Pastries – wienerbrød
There are so many different types of pastry, but these are what I consider some of the most common ones.
spandauer (fk.) · bagerens dårlige øje (lit. “baker’s bad eye) – the pastry most commonly known as just “a Danish”
borgmesterstang (fk.) – a long, braided pastry, typically with sugar and nuts on top.  Lit. “mayor pole”. This is also what I would consider a type of kringle (fk.), which is also a word for pretzel, which gets confusing quickly.
    - kanelstang (fk.) – see above, but with cinnamon
    - pistaciestang (fk.) – see above, but with pistaccio
(kanel)snegl (fk.) – cinnamon roll. Lit. “cinnamon snail”
dagmartærte (itk.) – a larger, round pastry. Kind of like several cinnamon rolls that have been made into one large pastry, but the dough is softer. Inside there’s normally a vanilla cream and cinnamon remonce. Lit. “Dagmar’s pie”
fastelavnsbolle (fk.) – is actually two different pastries!
 1) a closed, semi-hard, spherical or square pastry with cream or jam inside and icing on top. This is the type of fastelavnsbolle you’d probably make at home.
 2) looks like a bread roll cut in half, but made of soft, flaky pastry dough. Typically has some kind of vanilla cream or whipped cream inside, and maybe some jam. Might be drizzled with powdered sugar or the like. This is the type you’d be likely to find in a patisserie.
brunsviger (fk.) – I don’t even known how to describe this. It’s from Fyn, and it’s a large, square pastry with a quite dense dough. It’s has this cinnamon mass on top, and it looks absolutely disgusting, but it tastes nice.
Cakes – kager
lagkage (fk.) – layered cake
bradepandekage (fk.) – large, square, spongy cake, made in a baking tray with tall sides (en bradepande). Bradepangekager come in a myriad of types such as:
- sandkage: “sand cake”. A true classic. The most basic, sweet cake with a hint of vanilla.
- drømmekage: “dream cake”. Sandkage, but with a topping of coconut flour and brown sugar.
- chokoladekage: chocolate cake. It’s basically sandkage, but you add melted chocolate and cacao (and perhaps a bit of coffee) to the batter.
- den-du-ved-nok: “the-one-you-know”. The drømmekage edition of a chocolate cake. This time you definitely add coffee, and for the topping you use cacao, a bit of coffee, a bit of cinnamon, powdered sugar and coconut flour.
- brunsviger: I already explained this one, but it’s technically a bradepangekage as well.
banankage (fk.) – banana cake. A type of sandkage, but usually loaf shaped.
gulerodskage (fk.) – carrot cake. Yet another sandkage, but usually round.
muffin (fk.) – muffin
pandekage (fk.) – pancake, though Danish pancakes are more like sweet crêpes
æblekage (fk.) – apple cake, which is not technically a cake, but rather apple porridge topped with whipped cream and crushed macarons
jordbærkage (fk.) – strawberry cake. Same concept as apple cake. Note that this is NOT red porridge with cream (rødgrød med fløde)
hindbærsnitte (fk.) – imagine poptarts if they weren’t trash. It’s a small, rectangular cake (perfect for holding in one hand – en snitte) that consists of two layers of shortcrust, with a layer of raspberry jam in the middle. On top they have a thin layer of white icing and rainbow sprinkles.
kakaosnitte (fk.) – despite the name it doesn’t have much in common with hindbærsnitte. It is a snitte, but it just has a thin layer of shortcrust on the bottom. On top is a thick layer of filling that mainly consist of coconut flour,  sugar, cacao and whipped egg whites.
Pies – tærter
Danish pies are pretty much the same as all other pies. They’re made from shortcrust and are usually filled with some kind of berry or fruit.
brombær (itk.) – blackcurrant
jordbær (itk.) – strawberry
æble (itk.) – apple
rabarber (fk.) – rhubarb
blåbær (itk.) – blueberry
You can attach all these to -tærte and make a compound word, as such: jordbærtærte.
Cookies – småkager
Literally all the Danish cookies I could come up with are almost exclusively eaten at Christmas, so really this is just Danish Christmas cookies. A bunch of these will be what you find in your grandma’s blue sewing tin.
brunkage (fk.) – lit. “brown cake”. A brown, circular or square cookie that contains a lot of different spices (potash, cinnamon, ginger, all spice, cloves etc.).
vaniljekrans (fk.) – lit. “vanilla wreath”. A fairly thick, circular, sand coloured cookie with a hole in the middle and a distinct pattern. It tastes very strongly of vanilla.
jødekage (fk.) – lit. “jew cake”. A basic circular, sandy cookie with a topping of sugar and cinnamon.
pebernød (fk.) – lit. “pepper nut”. Small, round “cookies” whose colour is usually somewhere in the range of sandy and dark sandy. They have a bit of bite to them, as they contain pepper and ginger
specie (fk.) – extremely basic, thin, circular cookie that usually tastes like vanilla.
klejne (fk.) – I am almost hesitant to classify this as a cookie, but whatever. It’s actually quite soft and is deep fried in a type of coconut oil. I don’t know how to explain what they taste like, because they just taste like klejner. They look like this.

I’ve been making lots of jam and chutney!
My parents have a lot of fruit trees so I took some greengages and plums off their hands and I have a very productive rhubarb plant, so I made:
Plum jam
Greengage jam
Rhubarb and stem ginger preserves
Spiced rhubarb and apple chutney
Putting things in jars makes me feel ever so domestic and contented. I like the feeling of stocking up the pantry for the winter ahead-my childhood featured Tea Around the Fire on most Sunday evenings during the winter months, and those always necessitated jams and chutneys for topping crumpets, muffins and toast-so those memories are something I want to hold onto. The jars are also nice to give as little gifts to share with friends.
