Smoky Maple Granola

4 cups old-fashioned oats
1 cup walnuts, chopped
1 cup pecans, chopped
1/2 cup maple sugar
2 tbsp mesquite powder
1 tsp cinnamon
1/2 tsp sea salt
1/2 cup pure maple syrup
1/2 cup melted coconut oil
1 tbsp liquid smoke
1 tbsp maple extract
Preheat oven to 325 degrees F. Line a large cookie sheet with parchment paper.
In a large glass mixing bowl, stir together the oats, walnuts, pecans, maple sugar, mesquite powder, cinnamon, and sea salt.
In a small glass bowl, stir together the maple syrup, melted coconut oil, liquid smoke, and maple extract. Add the wet mixture to the oat mixture and stir to combine fully.
Pour the granola on to the cookie sheet and spread out evenly. Bake in preheated oven for 15 minutes.
Remove granola from oven. Stir gently. Return to oven and bake for another 15 minutes.
Allow to cool completely in pan before transferring to an air-tight container.

1 cup Brazil nuts, chopped
1/2 cup pure maple syrup
1/2 cup melted coconut oil
1 tbsp lemongrass paste
1 tsp ginger powder
1/2 tsp sea salt
1 cup coconut flakes
2 tbsp açai powder
the juice and zest of two limes
Preheat oven to 325 degrees F. Line a large cookie sheet with parchment paper.
In a large glass mixing bowl, stir together the oats, almonds and Brazil nuts.
In a small glass bowl, stir together the maple syrup, melted coconut oil, lemongrass paste, ginger, and sea salt. Add this mixture to the oat mixture and stir to combine fully.
Pour the granola on to the cookie sheet and spread out evenly. Bake in preheated oven for 15 minutes.
Meanwhile; in mixing bowl, stir together the coconut flakes, açai powder, lime zest, and lime juice.
Remove granola from oven. Sprinkle coconut mixture on top. Stir gently. Return to oven and bake for another 15 minutes.
Allow to cool completely in pan before transferring to an air-tight container.

the "if I can do it so can you" attitude regarding lifestyle changes is so annoying because clearly! there was some element in your life that allowed you to do that in the first place that others may not possess, or it simply may not be worth the effort even if it is "possible." I'm a disabled trans person, I've spent my entire life being told what to do with my body, I think I know more about it than you and I will not sit here and justify myself to you.
