During these times of isolation, it’s the prefect excuse to revise and improve on recipes and techniques... it’s been *quite* some time since I’ve been able to do this... 😅 A few things have been lingering in the fridge, so here is also a prefect excuse to up-cycle food into something (arguably) better than what it was initially prepared for... Today being #JambonDay I spent the day laminating dough and saucing up various leftovers, shaping and stocking the freezer... Cheese, Onion and Herb Ravioli, with Mixed Tomato Ragout All was made from old and dry store ingredients Super cheap, super easy, super delicious, super 👌🏻 Sweet stale bread and eggs act as a solid medium for dried chives, roasted onion and (the only bougie ingredient because it cost about €0.40 for the amount actually used) smoked raclette... This was then paired with handmade mixed herb pasta, followed by being carefully hand rolled and shaped to become ravioli... Shallots were sautéed with garlic and mixed dry herbs... Different varieties of tomatoes were chopped and was added to the shallots, then deglazed with remnants of a cheap bottle of wine... The tomatoes were then allowed to breakdown and the sauce reduce... The sauce, purposefully, was left slightly acidic and was adjusted with basic seasoning. It’s acidity was to compliment the sweet ravioli filling... It did that and more!!! In House Made Kimchi Pancakes, with Scallion and Garlic Scrambled Eggs, Toasted Sesame and Sriracha For aaaaages I’ve wanted to make my own Kimchi, after researching a number of methods and countless numbers variations I’ve settled on this recipe... The Kimchi itself, I feel is slightly over salted, so thought using it in the pancake mix would be a perfect way in diluting the salt levels... I was not wrong!!! Adding in charred scallion and onion to the mix added the bitter and sweet elements needed to , balance the saltiness, sharpness, spiciness and the tang associated with kimchi... The creaminess and fat from the softly scrambled eggs adds a velvety feel to the crisp and soft texture of the pancakes adding a pleasant contrast to the dish... Not gunna lie, I’m pretty happy with this... Kouign Amann Laminated Dough, fortified with butter and sugar, pretty much a more dense Croissant with caramelised exterior... Paired with a sweet El Salvador filter coffee from @3fecoffee, hints of Brown Sugar, Nectarine, Rose Hip and Syrup...
