Why are Europeans always listed as "white – [nationality]", but others can just be "Korean", "Japanese", "Puerto Rican"?

I'm going to keep this explanation simple (or try to).

It honestly depends on a person's background and what is available about them online. I know there are thousands of ethnic backgrounds/tribes etc around the world, and sometimes it's hard to find specific information about a certain person. I'm not about to guess that an Indian person from the Tamil Nadu region is Tamil when they could be Punjabi etc. I've had instances where people are adopted and not biologically related to their parents. Also, each country has their own identity. Google tells me for example that 99% of South Koreans identify as ethnically Korean.

I also want to make a post clean as can be - additional information needed will be in admin note below occupation or in tags. This is the current template I have for those who are not deceased:
