(an estimated amount of 16 cookies, 184cal/each)
βŒ— 125g unsalted butter
βŒ— 150g light brown sugar
βŒ— 50g sweetener (i use erythritol canderel sugarly)
βŒ— 1 whole egg and 1 egg yolk
βŒ— 1tsp vanilla extract
βŒ— 25g culinary matcha powder
βŒ— green food coloring (optional)
βŒ— 1tsp baking powder
βŒ— 250g self rising flour
βŒ— 25g cornstarch
βŒ— 25g dark chocolate chips
βŒ— pinch of salt (optional)
βŒ— 15 lidl american bbq/roasting marshmallows

1. pre-heat oven at 180Β°c
2. in a saucepan on the stove, melt the butter in low heat until it looks like beer (liquid, bubbly and golden, not burned)
3. mix the two sugars in a bowl, then add the melted butter and mix until it forms a beige colored paste
4. add the egg and mix, then the yolk, the vanilla extract and a pinch of salt
5. add the matcha powder and mix. to get a brighter green color, add a bit of green food coloring
6. mix in the flour and the baking powder with a wooden spoon until everything is incorporated into a dough. then, add the cornstarch and mix again
7. let the dough rest for around 30 minutes by covering the bowl with a cloth
8. with the help of a scale, make 16 balls weighing between 35 and 40g each. incorporate the marshmallows into the dough leaving an open space where they’re visible to avoid the marshmallows from bursting
9. decorate the cookies with the chocolate chips
10. in a baking tray with parchment paper on top, put 5 cookies at a time and bake them in the oven for around 10-12 minutes
