Asparagus Stuffed Salmon Rolls with Lemon Sauce 😋💗⁠ -⁠ By @closetcooking⁠ -⁠ Ingredients:⁠ 4 (5 ounce) salmon fillets, skins removed⁠ salt and pepper to taste⁠ 1 (12 ounce) container ricotta⁠ 1/2 cup parmigiano reggiano (parmesan), grated⁠ 2 tablespoons basil, chopped⁠ 2 teaspoons lemon zest⁠ salt and pepper to taste⁠ 1/2 pound asparagus, trimmed⁠ 1 tablespoon butter⁠ 1/2 cup chicken broth⁠ 2 tablespoons lemon juice⁠ 2 teaspoons cornstarch⁠ ——⁠ Instructions:⁠ Season the salmon fillets with salt and pepper to taste, lay them down with the skin side up, top with the mixture of the ricotta, parmesan, basil, lemon zest, salt and pepper, several spears of asparagus and roll them up before placing them on a grease baking sheet with the seam side down. Bake in a preheated 425F/220C oven until the salmon is just cooked, about 15-20 minutes. Meanwhile, melt the butter in a small sauce pan over medium heat, add the mixture of the broth, lemon juice and corn starch and heat until it thickens, about 3-5 minutes. Kicking it comfort food style again tonight with SPICY GARLIC SHRIMP & CREAMY CAULIFLOWER MASH — a plate of warming flavors that feels as fall appropriate as it looks 🍂🍁👏🏻😍 This one’s packed with lots of good good garlic, plus a hint of cajun spice that packs a lil punch 💥. Enjoy! 😘 -Credit: @sara.haven . . SPICY GARLIC SHRIMP: season 1/2 lb. shrimp with @ primalpalate jerk seasoning (or any cajun seasoning) + paprika. Heat 1-2 teaspoons garlic ghee in a large skillet for ~1 minute; add shrimp and sauté until pink and slightly brown. . . CREAMY CAULIFLOWER MASH: 1 head cauliflower, chopped • 3 garlic cloves • 3-4 tablespoons unsweetened almond milk • 1/4 cup parmesan cheese • 1-2 tablespoons ghee • 1) in a large pot with a steamer basket, steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth. . . INGREDIENTS -1 medium head cauliflower -¼ cup grated Parmesan cheese -2 ounces mozzarella cheese, shredded -1 large egg -½ teaspoon onion powder -½ teaspoon garlic powder -2 teaspoons psyllium husk powder -Salt and pepper to taste -1 cup frying oil (I used Bacon Fat) . DIRECTIONS 1. Cut cauliflower head into florets. Steam until tender. Pulse in food processor until it resembles mashed potatoes. 2. 𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦⁠ 3 cups heavy whipping cream or coconut cream (720 ml)⁠ 1/2 cup granulated low-carb sweetener such as Erythritol, Swerve or Allulose (100 g/ 3.5 oz)⁠ 1 to 2 tbsp lavender buds⁠ 2 tsp gelatin powder⁠ 1/4 cup water (60 ml)⁠ 450 g blackberries, fresh or frozen and thawed (1 lb)⁠ 1 tbsp sugar-free vanilla extract (15 ml)⁠ ⁠𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦⁠ In a saucepan, combine the cream, sweetener and lavender buds. (If you are new to lavender, start with 1 tablespoon or use up to 2 tablespoons.) Bring to a simmer over medium heat. Once simmering, immediately take off the heat. Cover with a lid, set aside and let it infuse for 20 to 30 minutes.⁠ Meanwhile, sprinkle the gelatin powder in a small bowl filled with 1/4 cup cold water. Let it soak while you prepare the lavender cream. ⁠ Pour the lavender cream through a fine mesh sieve and let the cream drip naturally. Do not press to squeeze or the cream will taste bitter and the lavender flavour will be overpowering. Discard the lavender.⁠ Add the gelatin liquid and stir until completely dissolved, while the mixture is still warm.⁠ Let the mixture cool down completely. You can place the bowl in another bowl filled with ice water to cool it down quickly, in just 5-10 minutes.⁠ In another bowl, crush the blackberries using a fork. Add them to the cooled lavender cream with vanilla and stir to combine.⁠ Pour the mixture to your ice cream maker and churn until soft-serve consistency (this will take about 60 minutes). ⁠ Spoon into a freezer-safe container and freeze for 1 hour before serving or until ready to eat. Love scrolling through my camera roll when I’m stumped for what to eat bc tbh it’s literally just all food pics lol I landed on this deliciouuuus Cilantro Lime Cauliflower Shrimp Bowl & I have all the ingredients on hand so it just might be dinner tonight😏 . . . Cilantro Lime Cauliflower Shrimp Bowl ⏩ INGREDIENTS Shrimp Cauliflower rice Avocado Cherry tomatoes Onion & garlic powder Cilantro Avocado oil Lime juice . DIRECTIONS Coat pan with avocado oil & put shrimp on once hot. Add lots of garlic powder & sauté. Once they’re pink, they’re basically done, but at this point I add more oil & garlic powder & up the heat so they get a little crispy on the outside. For the cauli rice, sauté it in minced garlic, olive oil, lots of lime juice, & chopped cilantro. Cut up cherry tomatoes & avocado then mix them with lime juice & cilantro. I sprinkled @seesalttaste sea salt over everything once done. . .
