Vegan Chick’n-Coconut Curry With Fresh Vegetables

This colorful vegan chick’n curry  is rich in flavor, and provides 24 grams of protein per serving.  Best of all it is ready to serve in under 30 minutes. I served it with an ancient grain blend, but you could also serve it over quinoa, rice, or eat it straight. 
Serves: 3
Prep time: 10
Cook time: 15-20 minutes
Ingredients
1 tbsp extra virgin olive oil
1 small yellow onion chopped
4 garlic cloves, minced
1 cup carrots chopped
2 tsp ginger root, peeled and minced (If you have a food processor, you can combine the onion, garlic, carrots, and ginger and chop)
1/2 cup sliced yellow and red sweet peppers
1 6 oz. package Smart Tenders savory chick’n, cut in cubes
1 1/2 tbsp curry powder (recipe for homemade curry powder at end)
1 13 oz can full fat or reduced fat coconut milk
2-3 cups fresh baby spinach
1 tbsp maple syrup
1 tbsp fresh lime juice
1/4 tsp red pepper flakes (more if you like a bit of heat)
Directions
Heat oil in a large skillet over medium heat
Once the oil is hot, add the chopped onion, carrots, garlic, and ginger
Sauté until onions start to turn translucent
Add sliced peppers, cubed chick’n, and curry powder, cook for about 1-2 minutes or until fragrant
Add the coconut milk and stir to combine all ingredients. Increase temperature and bring to a gentle boil. Once boiling reduce heat to medium and allow it to gently boil for 5 minutes or until the liquid volume reaches desired thickness
Add the spinach, lime juice, maple syrup, and red pepper flakes
Cook until spinach is wilted and tender, about 2 to 3 minutes
Serve immediately over your favorite grain and garnished with either cilantro or fresh basil.
Homemade Curry Powder
2 tbsp Ground Coriander
2 tbsp Ground Cumin
1 1/2 tbsp Ground Turmeric
1 tsp Dried Mustard
1/2 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/2 tsp Cayenne
Mix well; store in an airtight container

Inevitable #instagramsalad again. #vegan dinner because I want to #eatmoreplants and it's easy to make #simplefood. #cashews for protien and roasted mixed #sweetpotato, #carrots and #cherrytomatoes. The only cheat is using a steak spice on the #veggies (no meat ingredients but I am using someone else's bachelor kitchen) and microwaving the carrots and sweet potato for five minutes before roasting (you could blanch them instead, but this means less vitamins lost). Roast veggies are 20 minutes at 400 F, tossed in olive oil. Yummy. #Salad🥗 is simply shred chopped romaine lettuce, english cucumber, a little salt and pepper, cashews and a splash of olive oil and balsamic wine vinegar. 🍷 Proper spicing and respecting #fatsareyourfriends are the secret to enjoying #goodforyou #food. Also it's #cheapandhealthy Fun fact, the tomato brings in more umami taste. Diet and health fans take note, it's a source of naturally occurring MSG. #quickdinner #healthyfood #vegetarian Total cook n' prep makes it one of those #30minutedinners
