What is so special about a cast iron pan?
Cooking pans made of cast iron are favored for their durability, excellent heat retention, and versatility. Cast iron pans has the ability to retain and distribute heat evenly across its surface, can last for generations, and work well on various heat sources. When properly seasoned, they develop a natural non-stick surface, making them suitable for a range of cooking methods. Additionally, cast iron can contribute to iron enrichment in food and is more affordable than some high-end cookware materials. Despite these advantages, proper care, including regular seasoning and avoiding harsh cleaning methods, is essential for maintaining the longevity and performance of cast iron pans.

Cast iron can be washed with dish soap. The rule about not using soap comes from when all soap had lye in it. So unless you're using some homemade/old school type soap with lye, it's safe to use. But at the same time, you don't want to leave it to soak in soapy water. That will strip the seasoning and cause the pan to begin rusting, depending on how long you leave it. Same with running it through the dishwasher.
Generally though, I use a bit of salt and oil or a chainmail rag to scrub off any stuck on bits and just give it a rinse. Pat it dry with some paper towel, then apply a light layer of canola oil (or whatever you prefer) and heat it back up just a bit so the oil soaks in. If I do have to scrub with water, when I apply the oil, I'll do 2 coats - the first I'll heat until it just hits the smoke point, then take it off the heat and apply the second coat while it cools. Everyone has their own method for maintenance. Just make sure that it's dry to avoid rust, and there isn't any excess oil after you apply a fresh coat, or you'll get sticky spots.
It is a bit of extra work to maintain cast iron pans, but they can last literal centuries and are just wonderful cookware to use.
I see!
