Port Cherry Compote

It might be difficult to pit, freeze and save a few cups of cherries at the height of Summer, when they are ripe, juicy and delicious; but if you do, then you can make this delicious Port Cherry Compote in March --you can also absolutely buy frozen cherries!
Ingredients (makes about a cup):
1 cup frozen cherries of your liking (i prefer juicy dark cherries)
1/4 cup good quality White Port
In a small saucepan, combine frozen cherries and White Port.
Bring to a slow boil over medium heat.
Then, reduce the heat to low, cover with a lid, and simmer, about 15 minutes, until the cherries have collapsed and their juice slightly thickened.
Serve Port Cherry Compote onto Greek Yoghurt, Ice Cream, Crêpes or Pancakes!

when you ask what he wants to make, hee immediately suggests coffee and walnut cake (he doesn’t even like coffee but he knows it’s your favourite)
gets himself told off for snacking on the crushed walnuts when you’re not looking. he grins mischievously at you, finding your exasperated expression endlessly cute, and resumes munching the second your back is turned again.
he slips his arms around your waist while you’re mixing the coffee cream, and rests his chin on your shoulder, kissing your neck softly. ‘hee, if you ever want to actually get to eat this cake do you maybe wanna help?’ you say, suppressing a smile. ‘mm-mm,’ he hums his refusal, earning an eye roll from you.

you just know that jay has to be out here choosing the most complicated and ambitious recipe ~ think sour cherry and pistachio danish.
he’s in the middle of rambling to you about how to get the compote a perfect gooey consistency, when you lean in quickly and give him a sudden kiss. you promptly return to looking at him expectantly to carry on, as if nothing had happened. he blinks, taken aback for a moment by the interruption, before smiling as he continues with what he was saying, detailing how absolutely *crucial* it is that everything be finished off with a brush of orange liqueur…
he loves to supervise from behind, watching over your shoulder as you roll out and fold the dough, using the excuse of ‘helping make sure you get it all even’ as he leans over you and places his bigger hands on top of yours, guiding their movements with his, causing your heart to race.
the danishes come out looking and smelling amazing, and as you stare at them, wide-eyed with excitement, jay can feel his heart swell with pride at you taking an interest in his favourite hobby.

jake insists on his auntie’s australian lamington recipe, enthusiastically declaring that he wants to make them for you to try because he loved them so much growing up ..’)
jake is the messiest chef, and he leaves the kitchen looking like a storm has just passed through - somehow he has managed to use last every cup, bowl, and utensil in the process of baking one little tray of cakes for you.
and of course he manages to get flour all over his face, and you laugh at his oblivious expression as he stares at you with big puppy eyes, confused why you’re laughing. he looks so adorable right now that you simply have to kiss him on his floury cheek.
later on, when the two of you are snuggled up on the sofa under a blanket watching your favourite show together, you realise you can still smell the sweet coconut scent from your baking escapade lingering on him when he leans in close.

of course you and hoon are going to be making his favourite, tiramisu.
dusting the cocoa powder over the dessert tickles your nose and makes you sneeze like five times in a row, and hoon teases you about how cute your sneeze sounds for the rest of the morning.
he looks unbelievably fine stood there in front of you right now, you think to yourself, in his navy apron and pressed white shirt, brow furrowed slightly in concentration as he whisks mascarpone into a big mixing bowl. he looks up and catches you watching him, and your cheeks flush instantly.
the determined expression on your face as you grate chocolate over a bowl, sunghoon thinks, is maddeningly cute. before he can stop himself he’s reaching out to tuck a rogue lock of hair that has come loose back behind your ear. you don’t even have time to look up and meet his gaze properly before his lips are on yours.

together, the two of you are definitely on a mission to make this the prettiest strawberry lemon cake the world has ever seen.
his long fringe keeps falling into his eyes as he’s mixing up the buttercream, so he allows you to tie it up for him with a little hair band. you have to try *really* hard not to giggle or tease him about the way the little hair sprout wiggles side to side on top of his head as he vigorously whisks the cake mix.
while waiting for the cake to come out of the oven, you decide to check and see how it’s doing. as you open it up to take a peek, sunoo at your side wordlessly puts an arm around your waist, and instinctively you let your head rest on his shoulder. you feel an inexplicable surge of comfort in the warm moment. you stay and watch together quietly as the soft sponge of the cake rises steadily.
the decorating is his absolute favourite part, blushing when you compliment the way he delicately arranges thinly-sliced strawberries and freeze dried lemon pieces over the cake’s surface.
ೀ⋆jungwon
when jungwon suggests baking cinnamon rolls you can’t help yourself from laughing a little bit. ‘jungwon you literally are like, a cinnamon roll personified,’ you tease. he pouts, doing his best to look offended by your poking fun, but you can tell that really he’s enjoying it.
you had expected baked goods and jungwon to make an adorable combination, however, as you watch him now, with his hair pushed back and sleeves rolled roughly up, kneading the dough on the countertop, the muscles in his forearm flexing suddenly catch your eye and…. you feel the heat rise in your cheeks, flustered by the unexpected reminder of his surprising strength.
won holds up his complete decorated cinnamon roll for you to see, beaming proudly. as your eyes rest on the pastry, a smile plays on your lips. the surface is a little wonky, and icing is dripping unevenly round the sides, but it would be a lie to say that it doesn’t look delicious. you could tell how much care he’d put into making it. ‘for you,’ he tells you shyly. ‘it’s made with love.’

Vanilla Cherry French Toast

A deliciously decadent, yet simple treat, this Vanilla Cherry French Toast is the answer to your weekend morning cravings! (And you can easily double the recipe if you're entertaining this fine morning ;) Happy Saturday!
Ingredients (serves 1):

1 small egg
2 tablespoons semi-skimmed milk
1 teaspoon Homemade Vanilla Extract
1 tablespoon unsalted butter 
2 thick slices day-old Brioche
1 1/2 tablespoon caster sugar
1 tablespoon unsalted butter
½ plum vanilla bean, split lengthwise
a dozen ripe fresh cherries
1 teaspoon Homemade Vanilla Extract
1 tablespoon caster sugar
Break the egg in a shallow plate. Add the milk and Vanilla Extract, and whisk thoroughly with a fork until-well blended. Set aside.
Melt butter in a small, nonstick skillet or frying pan over medium heat. 
Soak Sourdough Bread slice into the egg mixture, on both sides until just softened.
Once the butter is just foaming, add soaked Brioche slices to the skillet, and increase heat to medium-high. Cook, about 2 minutes on one side, and flip on the other side; cook, a couple of minutes more. Sprinkle with half of the sugar, and flip once more. Cook, 1 minute. Sprinkle with remaining sugar, and flip one last time. Cook, half a minute, until golden brown.
Serve French Toast onto a plate; keep warm.
Carefully wipe the frying pan with paper towels.
Melt butter in the frying pan over a medium flame. Once melted, add vanilla bean halve, and allow to infuse, shaking the saucepan often.
Rinse cherries, halve and pit them. When the butter is just foaming and the vanilla bean has released its seeds, add halved cherries to the saucepan. Increase heat to medium-high. Cook, 2 minutes, until softened. Stir in Vanilla Extract and sugar, and cook, a further couple of minutes, until the cherries’ juice just becomes syrup-y. Remove from the heat.
Top warm French Toast with Cherry Compote.
Enjoy Vanilla Cherry French Toast immediately, with a nice cuppa/

OC Signature Dishes
A small writing exercise inspired by Genshin's Specialty Dishes; What is this character's signature dish? If they were asked to bring something to a potluck, or make a last-minute dinner for a dear friend, what's the food they would default to? The goal is to describe the flavor and texture of the dish while at the same time revealing just a bit of the character's personality.
I had a lot of fun writing these, so hopefully I'll have more soon ^^
Azael - "Special Occasion" (Honeyed Apple Tart with Peanut Butter)
A dessert specifically reserved for special occasions and jobs well done. Only the fullest, most vibrant red apples in the orchard were finely sliced and layered upon the flaky pastry with precision and care. The roasted nuttiness of the peanut base softens the tartness of the apple, and the finishing touch is a drizzle of wildflower honey with dash of sugar. Being a stranger to the kitchen, Azael had to commit a great deal of time towards putting together this deceptively simple dish. Seeing you smile as you lick honey off your fingers is their hard-earned reward.
Lyerei - Auroral Sweet Ice (Rainbow Shaved Ice)
With a whispered incantation and a simple Prestidigitation spell, a cup of mountain spring water turns into a colorful treat in the blink of an eye! The refreshingly cool flakes of ice melt onto your tongue, simulating a medley of sweet berries and other fruits. The only colors Lyerei adds are a vivid red, a deep blue, and a bright yellow. These three simple hues, when swirled together, create all the colors of the Light Bearer clan's aurora in their center.
Sota - Post Workout Pick-Me-Up (Four Seed Bread Rolls)
Fluffy, buttery bread rolls with a golden crust, cut in two and slathered with tart cherry compote. Portable and nutritious, they're the perfect snack for when you have a busy day ahead. Each family in the Blackcliff Roost has their own recipe for baking bread, and so each loaf tastes just a bit different from the one next door. But there's a particular detail that sets Sota's recipe apart from all the others - the sprinkle of sesame, flax, poppy, and sunflower seeds added just before baking that give the crisp crust a subtle, nutty flavor.
Elgimn - "Surprise Me" (Seafood Rice Balls seeped in Green Tea)
One must be extraordinarily patient to allow the fluffy rice grains to seep in green tea until they are infused with a bitingly bitter taste. But the light aroma of the rice mixed with fresh crab meat leaves a sweet aftertaste lingering on the tongue. It seems even the most battle-worn warlords cannot resist indulging in life's simple delights every once in a while...

What I cooked this weekend, hot weather edition
It's been scorcher after scorcher here, so I'm looking for ways to avoid turning on the oven: salads, spiralized vegetables, overnight oats, yogurt, no or minimal bake desserts. Here's what I prepped this weekend:
Zoodles
There was a sale on zucchini so I bought three and spiralized them. At dinner time I sautéed about half in sesame oil for 3 minutes. They were surprisingly good -- still firm, but cooked and tasty. Next time I'd cut them into shorter lengths. They go with anything you'd put in pasta or noodles.
Black bean brownies with dried cherries
These required a little baking, but under 20 minutes. I followed this recipe. I didn't have quick oats so I just pulsed regular rolled oats a few times before adding the rest of the ingredients to the food processor. I also added a half cup of dried cherries, which were delicious in the dense chocolate.
It doesn't call for eggs, so they're easy to make both gluten-free and vegan (with vegan chocolate chips). I'm also enjoying this chickpea cookie dough.
Balsamic farro salad with edamame and cranberries
Not gluten-free, unfortunately, but it can be if you swap out the farro for brown rice. I saw this recipe in Erin Clarke's Well Plated cookbook and I wanted to try it out. I cooked the farro in the Instant Pot and then dressed it with olive oil, balsamic vinegar, salt and pepper. Then I mixed in thawed edamame, dried cranberries, green onions, and feta. I'm eating it for lunch both by itself and in a wrap.
Blackberry-strawberry chia jam
This one was a bit of an accident. I bought blackberries and when I got them home, I realized they were quickly turning to mush. So I put them in a pot with some strawberries, water, vanilla, and maple syrup. I was planning to make them into one of Amy Chaplin's berry compotes. I noticed a recipe note in her book about adding chia seeds to make jam, so I did that: brought it to a boil, let it simmer for 5 minutes, and then took it off the heat and stirred in a quarter cup of chia seeds. It's a little watery to be classified as jam, but I've already eaten it as a jammy overnight oats topping.

My favorite meal is peanut chicken, so obviously every time i eat it i'm very happy. (I did my own recipe ahihi)
Still talking about food, we have these cherry compotes (from the trademark Andros) that are absolutely DELICIOUS and its so hard to find any!! One of my favorite casual desserts (the other would be Ben&Jerry Cookie Dough, my beloved 💕)
My childhood game is Age of Mythology and I still love playing it now, so of course i'm always happy when I launch the game (even if I already know it by heart).
Listening to music in my car, I swear Spotify really changed my life and, more precisely, my trips in the car. I learned to love it and now i would be unable to ride without one of my playlists on.
Sleeping. I generally have a good sleep so I can't complain. But if I don't sleep well you can be sure I won't feel good at all.
I have another one in my askbox, then I should be good with this question 🤭

Yummy food suggestions for your celebration
Traditional fare includes bread, cheese, edible flowers, citrus fruit, mead, wine, milk, ale and vegetables. More recipes are offered in Pagan Celebration of Midsummer/Litha – the Summer Solstice.
Faerie’s Kiss:
Shake together 2ces each white Crème de Cacao and white Crème de Menthe and 4 ounces cold milk. Pour over ice chips. Garnish with mint leaves and Maraschino cherries.
Non-alcoholic version: Blend 1 cup chocolate milk and 1/2 teaspoon mint extract.
Rock Cornish Game Hen with Tarragon: 1/2 cup margarine in sauce pan. Add 1/2 cup dry white wine and 1-1/2 tablespoon crumbled dried tarragon. Simmer for five minutes. Put 4 ( 1 pound) Rock Cornish Game hens into baking pan. Pour wine sauce over. Roast at 375 degrees for about 1 hour or until done, when juices, when pricked, run clear, basting frequently. Serve with wild rice.
Sautéed Carrots and Pecans: Sl1 pound carrots diagonally and gently boil until crisp. Drain and set aside. Melt 2 tablespoons margarine. Add 1/2 cup chopped pecans, 1 teaspoon sugar and carrots. Mix well. Sauté until carrots are golden.
Penne with Blue Cheese: Cook the 1 popenne until done and drain. Return to pot. Add 6 ounces crumbled bleu cheese, 4 ounces margarine and 1/4 cup sliced Kalamata olives to the penne. Cook over medium heat, stirring constantly until cheese is melted and ingredients are blended. Serve immediately.
Summer Salad: Toss together 1/2 poundh sliced raw pea pods, thinly sliced raw mushrooms, sliced cucumbers or zucchini, sliced radishes, 1 (16 ounce) can sliced artichoke hearts and 1/4 cup slivered almonds. Dressing: Blend together 1/4 cup olive oil, 2 tablespoons freshly-squeezed lemon juice, 1/2 teaspoon honey mustard and a pinch of coarsely-ground black pepper. Refrigerate dressing overnight.
Citrus/Blueberry Compote: Blend toget1/2 cup water, 2 tablespoons marigold petals, 1/2 cup sugar and 1 teaspoon grated lemon rind. Boil, stirring until sugar dissolves. Cool. Combine 1 1/2 cups each orange, lime and tangerine slices and 2 cups blueberries. Pour water mixture over fruit and chill overnight. Serve over lemon angel food cake
