Beginning of Summer Chili
Love some beans simmering on the stove to then enjoy outdoors over hot dogs or burgers cooked on the bbq grill - chili dogs...chili burgers...I can taste them now...Let's get the chili going...
2 c. small dry red beans
water
1 bunch epazote (herb)
2 T. margarine
1 medium onion, diced
1 c. bell peppers, red/green/orange, seeded, diced
2 c. tomatoes, fresh, diced
1 ear fresh corn cut from the ear or 1 c. frozen corn
1 T. salt
1 t. pepper
1 T. garlic powder
2 t. smokey Spanish paprika
Option: ground meat fried ahead as add in
In a large soup pot, add red beans, epazote, and water 3″ higher than the level of the beans, cover. Bring to a boil, then take off heat to let sit for the next hour or so. While the beans are cooking, saute the onions and peppers in the margarine until just tender. Add the onions/peppers to the beans along with the tomatoes and corn as well as the seasonings. Simmer until the beans are tender 1 hr. or so. Add the meat if you’re so moved.

I refer to this dish as ‘coffee cup ramen’ because I don’t know what else to call it. Hubs finished his share, took some of mine and would’ve stolen more if I’d allowed it! I served them in the largest coffee cups I could buy at Daiso.
Here’s the recipe.
Ingredients
- 1 packet ramen, cooked and drained - 2 slices round ham, quartered - 3 regular pork hotdogs, quartered - ½ punnet sliced shiitake mushrooms - ½ mini carton chicken stock - ½ mini carton milk - 4 heaped tblsp Prego mushroom tomato sauce - 3 handfuls grated mozzarella - 1 tblsp crushed garlic - 2 cubes 1cm x 1cm x 1cm butter - Crushed mixed herbs and black pepper to taste
Prep:
- At medium heat, melt butter and brown the garlic. Stir in the hotdogs and ham and cook for about 1 to 2 minutes. Add the mushrooms and continue to cook till semi-softened, adding chicken stock to prevent charring. - Pour in the mushroom tomato sauce, milk and the remaining chicken stock, toss in the ramen. Add the cheese, pepper and herbs, increase heat to bring the mixture to a boil, all the while tossing to mix the ingredients thoroughly. - When the cheese has melted and the liquid sufficiently reduced and thickened, turn off the heat, leave the pot on the stove and spoon the mixture into large coffee cups. Serve immediately.

Zucchini Onion Pie
3 eggs or egg substitute for vegan.
1 cup grated parmesan cheese ( I only used 1/4 cup since I��m lactose intolerant but it turned out delicious) or vegan cheese/nutritional yeast for vegan
1/2 cup Olive oil
1 Tbs chopped fresh Parsley or 1 tsp of dried parsley
1 clove garlic chopped
1/4 tsp salt
pinch of pepper
3 cups sliced zucchini
1 cup biscuit baking mix (I used 1 cup of gluten free flour +1 1/2 tsp baking powder + 1/4 tsp salt)
1 small onion finely chopped
In a large bowl whisk the first 7 ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in deep dish pie plate. Bake in preheated oven at 375F for 30~40 minutes ( I live on 3000ft high so you’ll have to adjust the temp and cooking time for your area. I’d start with 350F/30min for the sea level) Check it toward the end and make sure the top is golden brown and test the doneness with a knife)
