Instructions: Season chicken breasts with garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Pour chicken broth into the Instant Pot. Place seasoned chicken breasts in the Instant Pot. Close the lid and set the Instant Pot to Manual/Pressure Cook for 10 minutes at high pressure. Once cooking is complete, allow natural pressure release for 5 minutes, then quick release the remaining pressure. Open the lid carefully, and use two forks to shred the chicken in the Instant Pot. Serve the shredded chicken in tacos, sandwiches, salads, or your preferred dish.

Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the minced garlic and diced onion. Saut for three to four minutes, until the onion is soft. Add curry powder and ground turmeric, and cook for one more minute, until the food smells good. Chicken breasts, cauliflower florets, coconut milk, and vegetable broth should all be added to the pot. Once it starts to simmer, turn down the heat and cover it. Let it cook for 20 to 25 minutes, or until the cauliflower is soft. Add pepper and salt to taste. If you want, you can serve it hot with fresh cilantro or a squeeze of lemon juice on top.
