My brother and sister-in-law came over last night and no one wanted actual dinner. I had served a bunch of hors d’oeuvre and we stuffed ourselves on those. Big winner was these Naan pizzas, the recipe from my book, The Modern Kosher Kitchen, and is basically this quick and easy nibble: spread 1/2 cup mango chutney on two naan breads. Add some chopped cooked cauliflower. You can also add a little grated raw or cooked carrot (I didn’t yesterday), and top with grated mozzarella and Gouda cheese. Bake in a 400F oven for maybe 15 minutes. Cut and serve. This recipe for air-fried frozen broccoli is a quick and easy way to eat this healthy vegetable. Broccoli doesn't need to be thawed before cooking; it gets crispy on the outside and soft on the inside.
Ingredients: 1 bag of frozen broccoli. 1-2 tablespoons olive oil. Salt and pepper to taste. Optional: garlic powder, Parmesan cheese.
Instructions: Preheat your air fryer to 375F 190C for 5 minutes. Place the frozen broccoli florets in a mixing bowl. Drizzle olive oil over the broccoli and toss to coat evenly. Season with salt and pepper and optional garlic powder if desired. Transfer the seasoned broccoli to the air fryer basket in a single layer. Do not overcrowd the basket; you may need to cook in batches if necessary. Cook the broccoli in the air fryer at 375F 190C for 10-15 minutes, shaking the basket or tossing the broccoli halfway through for even cooking. Check for doneness. The broccoli should be tender with crispy edges. If needed, cook for an additional 2-3 minutes. Sprinkle with Parmesan cheese optional and serve hot. Enjoy your crispy and delicious air-fried frozen broccoli!

Instant Pot mashed potatoes are quick and easy to make, and they taste great.
Ingredients: 5 large potatoes, peeled and cubed. 1 cup water. 1/2 cup milk. 4 tablespoons unsalted butter. Salt and pepper to taste.
Instructions: Put the potatoes into the Instant Pot after peeling and cutting them into cubes. Fill the Instant Pot with one cup of water. Close the lid and turn the valve so that it seals. Set the timer for 8 minutes on high pressure. Do a quick release after the cooking cycle is over. Get rid of any extra water in the Instant Pot. Put butter and milk into the potatoes. With a potato masher, mash the potatoes until they are smooth and creamy. Add pepper and salt to taste. Enjoy while hot!

Elevate your veggie burger game with four delicious flavor variations. These upgraded veggie burgers are perfect for a quick and satisfying meal.
Ingredients: 4 veggie burger patties. 4 whole grain burger buns. 1 cup of mixed greens. 1 tomato, sliced. 1 red onion, thinly sliced. 1/2 cup of avocado slices. 4 slices of vegan cheese. 4 tablespoons of vegan mayo. 4 tablespoons of BBQ sauce. 4 tablespoons of sriracha sauce. 4 tablespoons of pesto sauce. Salt and pepper to taste. 4 tablespoons of olive oil.
Instructions: Warm up your grill or pan on the stove by setting it on medium-high heat. Add salt and pepper to each veggie burger patty and brush it with olive oil. Put the burger patties on the grill or pan and cook them for four to five minutes on each side, until they're hot all the way through and have grill marks. Put a slice of vegan cheese on top of each patty in the last minute of cooking and let it melt. Toast the burger buns a little on the grill or in a toaster while the burgers are cooking. Put the burgers together: Add mixed greens, a veggie burger patty with melted cheese, tomato slices, red onion slices, and avocado slices to the bottom bun. Spread vegan mayo on top of the greens. For each of the four tastes: - BBQ Burger: Spread BBQ sauce on the veggie patty and place the other half of the bun on top. - For the Spicy Sriracha Burger, put sriracha sauce on the veggie patty and then put the other half of the bun on top. This is the Pesto Delight Burger. Spread pesto sauce on the top half of the bun and place it on top of the veggie patty. - Classic Veggie Burger: You can eat it plain or add your favorite toppings. Serve hot with any sides you like. Have fun!

Cook Time: 10 minutes
