Caribbean burnt sugar (browning)
Browning is a burnt sugar sauce used in Caribbean cuisine to add flavor and color to various sweet and savory dishes. Browning imparts a bitter-sweet, slightly smoky taste and a hint of molasses to stews, gravies, meat and vegetable dishes, and black fruitcake.
To make browning, sugar is caramelized and then allowed to darken over low heat, then boiling water is added to create a saucy consistency. Browning can be purchased readymade, but storebought versions tend to be saltier and more bitter.

Ingredients:
2 parts (by volume) organic light brown sugar, or a raw sugar such as demerara or turbinado
1 part (by volume) just-boiled water
For the Jamaican black cake, use 1/2 cup sugar and 1/4 cup water.
A raw sugar, such as demerara or turbinado, is made from evaporating the water out of cane juice to attain crystallized sugar and molasses; most of the molasses, though not all of it, is then removed using a centrifuge. Raw sugar is sure to be vegetarian.
Organic brown sugar is another type of raw cane sugar. Refined (as opposed to raw) sugars, including brown sugars, may or may not be suitable for vegetarians, as they are often filtered with bone char. Non-organic brown sugars may be refined to remove their original cane molasses, and then have molasses added back to them.
Some browning recipes also include salt or chicken or beef stock
Instructions:
1. Heat a deep skillet or sauce pot for several minutes on medium. Add sugar and cook, stirring constantly. The sugar will at first clump, and then 'melt' and become syrupy.

2. Lower the heat to medium low and continue to cook, stirring often, until sugar is a very dark brown. The sugar will smoke during this process, so make sure you have good ventilation! If the sugar is smoking a lot, lower the heat further.
How long this takes will depend on the amount of sugar you're using, and how much of the sugar is in direct contact with the bottom of the pot; expect 10-15 minutes.

3. Meanwhile, boil water in a kettle or covered pot. Once dark brown the sugar will burn quickly, so you'll need to have your boiling water ready to go.
4. As soon as the sugar turns dark brown, remove it from the heat and slowly add hot water while stirring. The water may steam and sputter when added to the pot, so be careful! The water needs to be very hot, or else the sugar may re-crystallize.
The consistency of the browning should be very thin at this point, like a thin soup broth. Once cooled, it will have a molasses-like consistency.
5. Allow browning to cool to room temperature. Store in an airtight container in the pantry for several months.

Throughout the day, our bodies burn off at least 2.5-3 liters of water. The water we are currently drinking, after being processed, filtered, and ‘purified’ lacks an extreme amount of nutrients and minerals to keep us hydrated and healthy. A whole other topic I could rant about would be the -fluoride- added to water; but we won't get into that. Instead of drinking your regular bottled  water that is also filled with microplastics, I suggest a filtered water bottle to start with. Link to bottle

Cranberry Pistachio Biscotti
This is the last in the #12treatsofchristmas series. This is one of the original treats from the list that actually got cut from the list halfway through to make room for a peppermint bark cheesecake. Well, the cheesecake was a bit of a flop on my end. While I’m perfecting the cheesecake, I turned back to the biscotti, I’m so glad I did! I am a little obsessed with these! In a way they are a less sweet variation of the cranberry bliss bar. Crunchy and delicate, these festive biscotti will go great with the perfect cup of coffee on Christmas morning.

Cranberry Pistachio Biscotti
Makes: 16 Biscotti
Serving Size: 1 Biscotti
3 tablespoons flax meal
6 tablespoons water
¾ cup organic cane sugar
½ cup canola oil
1 teaspoon almond extract
½ teaspoon orange extract, optional
1 ¾ all purpose flour
2 teaspoons baking powder
½ teaspoon sea salt
½ teaspoon ground nutmeg
1/2 cup raw unsalted unroasted unshelled pistachios, chopped
½ cup dried cranberries, chopped
2 tablespoons unsweetened soy or almond milk
1 tablespoon maple syrup
Optional White Chocolate Coating:
1 cup vegan white chocolate chips
1 teaspoon refined coconut oil
Preheat the oven to 325 F and line a baking sheet with parchment paper.
Add the flax meal and water to a bowl, whisk to combine and set aside for 5 minutes to thicken.
Add the sugar, oil, almond extract, and orange extract (if using), to the bowl of a stand mixer and cream everything together with a paddle attachment until combined. Add the flax mixture and mix to combine.
Add the flour, baking powder, salt, and nutmeg to a bowl and whisk to combine. Add half of the flour mixture to the wet mixture and mix to combine, add the other half and mix until everything is incorporated, do not overmix.  Fold in the cranberries and pistachios.
Turn the dough onto a lightly floured surface, split the dough in half. With lightly floured hands roll each half of dough into a log about 6 inches long, gently flatten the logs so they are 3 inches wide. Place the logs at least 3 inches apart on the prepared baking sheet.
Add the milk and maple syrup to a small bowl and whisk until well combined, this is a plant based vegan egg wash. Brush each log with the vegan egg wash. Bake the logs for 35 minutes. Remove from the oven and let cool for 15-20 minutes, until you are able to easily handle them.
Transfer logs to a cutting board and use a serrated knife, cut the rounded ends off of each log.  Cut the logs into biscotti size pieces, about  ¾ inch thick, you'll get 8 pieces from each log. Arrange the biscotti pieces, cut sides down on the baking sheet and bake for 10 minutes, flip all the pieces and bake an additional 10 minutes, until they are golden brown. Transfer to a cooling rack and let cool completely. They will firm up more as they cool.
Option with white chocolate coating: Melt the chips in the microwave or double boiler. Add the coconut oil, stir to combine. Place melted mixture in a shallow bowl and dip the bottom quarter inch of each biscotti into the chocolate, shake off excess chocolate and transfer to a parchment lined baking sheet, set biscotti on its side until chocolate seizes. Alternatively, instead of dipping the bottoms you can drizzle the chocolate over the biscotti’s or dip partially in the chocolate and sprinkle with chopped cranberries and pistachios.
Biscotti last up to two weeks when stored in an airtight container.

Maple Miso Scones
3 cups all-purpose flour 1/2 cup organic brown sugar 1 tbsp baking powder 1/2 tsp sea salt 1 cup cold vegan butter 1/2 cup soy milk 1/4 cup pure maple syrup 2 tbsp miso paste 1 tbsp maple extract 1 tbsp vanilla extract In a large glass mixing bowl, sift together the; AP flour, brown sugar, baking powder, and sea salt. Cut the cold butter into the dry ingredients and use your hands to fully incorporate. Place the; soy milk, maple syrup, miso paste, maple extract, and vanilla extract into a blender and blend until no lumps remain. Pour the wet ingredients into the dry ingredients and stir until everything is fully incorporated. Please batter in the fridge while you preheat the oven. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Remove batter from fridge. Using a 1/3 cup measurement, form approximately 12 balls. Flatten each ball gently to form discs. Place discs on lined cookie sheets. Sprinkle each disc with a touch of raw cane sugar.  Bake in preheated oven for 12-15 minutes. Allow to cool for a few minutes before serving.
Ideal served with Maple Miso Butter.
Maple Miso Butter 1 cup vegan butter 1/4 cup organic brown sugar 1/4 cup pure maple syrup 2 tbsp miso paste 1 tsp pure vanilla extract Whip all of ingredients together in a blender. Serve with scones.
