The loss of nutrients and water through sweat cannot be couped up by water only, hence they need supplemental food/beverage items to keep them cool and energy-balanced.
Offering a variety of foods or beverages that beat the heat and avoid dehydration can be challenging, as the kids always demand variations and do not bend their will to a monotonous menu. Sounds Familiar?

These are easy to procure, store and prepare without needing to wear your Chef hat! You can name them as you want and assign them to each day of the week to keep the kids looking forward, they will gulp them down in a matter of seconds.
1. CURD (DAHI)

A healthy probiotic -curd has innumerable health benefits known to all Indian households as it is easy to prepare at home or procure from the market. Curd can be consumed in its original form or turned into a variety of beverage or dishes.
Chaas (buttermilk)
Is a traditional palette cleanser for many communities in our country. Mix water and curd to make smooth consistency with a pinch of salt, sugar, chaat masala, and jeera powder for a lip-smacking cooling beverage.
Lassi 
It is a sweet, thickly churned form of curd with the goodness of natural milk cream. It is a perfect cool drink for summer evenings in place of regular milkshakes. It energises and keeps the tummy filled for a long time
Curd Raita
Can be included in every meal using variations like boondi or veggies like cucumber, mint, tomato onions in curd with a pinch of salt and jeera powder. As yummy as it tastes, it is an equally healthy way to incorporate a probiotic in every meal that aids in digestion and maintains body temperature.
Greek Yoghurt 
Ready-to-eat probiotic greek yoghurt is also a great option occasionally. Try to opt for fresh and natural ingredient yoghurts having a shorter shelf-life as they contain less or no preservatives.

Fruit popsicles
A popsicle mould and fresh fruits are all you need. To make fruit popsicles, puree the fruits like watermelon, oranges, blueberries, strawberry, kiwi, back grapes, mango, or any other fruit in the grinder, add some water for consistency, put them in a popsicle mould and freeze! Ready to eat popsicles will be gone in minutes with all the nutritional goodness of seasonal fruits intact and no added sugar and preservatives! Fruit ice cubes
Prepare the fruit puree as above, put them in moulds of any shape (ice-cube size) and freeze. Ask the kids to add one or two fruit cubes to the regular water every time. Smoothies
Curd, Milk, fruits, nuts, cream and everything healthy can be dropped together into the grinder and made into a delectable cool and creamy drink. Flavour, thick consistency and great colours of smoothies always excite the kids and are an instant and lasting energy source that helps the sweet tooth during summers with compact nutrition. Create new flavours using different fruits and nuts, or replace milk with curd or ice cream to serve a new variety each time. For example, if the kids don't eat the banana, offering a banana smoothie might be an easy way to get their daily quota into their tummies.
Milkshakes/ Flavoured Milk
I don't like milkshakes, said no child ever! When you run out of ideas or fruits, whip up a chocolate or a plain vanilla milkshake or the traditional Kesar, rose, khas flavoured milk made from natural squashed pulps to create instant yummy milk treats. 
Custard
Slow boil milk with custard powder to make thick creamy, and delicious custard milk, then cool it in the fridge and served with lots of fruits in it. The kids will lick it clean, stay full and energised with all the goodness of milk and fruits. Alternatively, you can also freeze the custard milk to use as homemade ice cream and improvise it with cinnamon powder, Kesar, cardamon or any other flavour as per your kids' choice.

The credit goes to our Indian heritage that we have so many water drinks ideas passed on from our ancestors that are perfect for summer health. These drinks keep you cool, prevent dehydration, balance micro-nutrients and electrolytes (salts that balance sodium and salt level in the body to prevent dehydration) and are homemade with traditional spices that build up immunity. Most of them can be prepared fresh every day and stored in the fridge, we bet the kids will gulp them down, and you wouldn't even know it!
Aam Panna
The super coolant and cure for extreme heat strokes is a tasty treat made from raw mango, mint leaves and traditional spices and condiments. Easy to prepare and store in the fridge, drinking aam panna before and after a trip in the sun prevents heat strokes and is very prominently used by adults as well.
Aam Ras 
Highly popular mango pulp or aam ras extracted from choicest seasonal mangoes is a mouthwatering delicacy that can be enjoyed with a regular meal of roti sabji or as a post-meal cold desert. Mangoes are densely infused with micronutrients and a rich source of vitamins, magnesium and potassium.
Neebu Pani 
Another great warrior of summer is neebu pani (Lemon water). Squeeze lemon in cold water, add a pinch of salt, jeera powder, rock salt and sugar to prepare an instant energy drink that is suitable to have at any time during the day! Prepare some mint ice cubes as above and serve them in lemon water for a taste change and surprise the kids with a new variety.
Coconut water
This natural drink has innumerable nutritional properties, preventing dehydration is one of them. As tasty and refreshing it is to have, it is naturally formulated with perfect electrolytes required to maintain the sodium and mineral balance of our body that help to keep us hydrated. It is best to use coconut water directly from the coconuts than the ready-made packaged coconut water as they contain preservatives and artificial sugar.
5. FRUIT CHOCOLATES

Lure your kids to eat more fruits with chocolate wrapped fruit bits. Dice small pieces of fruits like strawberry, mango, grapes and dip them in melted dark chocolate (because dark chocolate is healthier) to coat them in a thin layer and then insert 1/3rd portion of a toothpick in each piece. Place them in an ice cube tray or on a plate in the refrigerator to freeze and create fruit chocolates. The cold taste of fruits and chocolate will be a star of options of evening snacks.
Summer means extra fun with extended bath time and not worrying about catching a cold, slurping on tasty liquid treats, ice creams, but summer also needs precise attention to the hydration of kids. As per the experts, with temperatures rising as high as 50 degrees across the country, kids need to be well hydrated even when indoors, because they are always active and dissipate more energy, increasing the chance of dehydration.

Steps to make Special beef briyani:
Heat oil fry onion light golden and remove, add ginger garlic paste and cook the 5 - 7 minute add meat..
With grinded green chilies and coriander leaves, salt,chilli powder, chilli flasks,chopped tomatoes, fry well add yogurt cover and cook till meat tender.
And,fried onion grinded, cook till mixture thick add, whole green chilies, dried plums,boiled rice with salt and whole spices till 3/4 done drain.ina pan put a layer of rice then meat mixture, chopped coriander leaves and podina top with remaining boilled rice,spread 2tbsp oil or ghee on top.
,add kewra water, jayfal jawatri elchi powder mixed with colour,sugar put on dum for 15 minutes.now ready to spiceal Beef biryani. Serve with boondi raita and salad..

Hyderabadi dum biryani is special, I think we can all agree with that. When living in Hyderabad, one of the favourite food topics among friends was where Hyderabadi vegetable dum biryani - a medley of rice, spices, vegetables, and herbs slow cooked to perfection. This authentic recipe of traditional Hyderabadi vegetable Biryani explains the step by step procedure to cook on stove top and oven both. I loved this Veg Biryani, I really did.
Steps to make Hyderabadi Vegetable Dum Biryani:
To make Hyderabadi Vegetable Dum Biryani, first wash the rice twice and soak the rice in sufficient water for half an hour..
For cooking the rice boil water, atleast four times the quantity of the rice. Add the above mentioned whole spices and salt to it..
When the water comes to a boil, drain the soaked rice and add to the boiling water and give it a good stir..
Add the lemon juice and stir..
When the rice is almost cooked, i.e. just one grain is remaining to be cooked, switch off the flame..
Drain all the rice in a sieve and set aside..
In the meantime, wash and chop the vegetables as mentioned above. Keep aside till use..
Heat the milk and add the saffron to it. Keep aside till use..
At the same time, heat the oil for the birista in a kadhai and start frying the sliced onions. Add a pinch of salt to each batch to hasten the browning and to get crisp fried onions..
When done, in the same oil fry the potato wedges too and set aside..
Heat some water for boiling the vegetables..
Boil the carrots, french beans and the cauliflower florets separately, in the boiling water and drain. Set aside till use..
In a heavy bottomed pan, heat the oil for tempering..
First saute the chopped bell peppers in the hot oil and set aside..
Now add the whole spices mentioned for tempering to the hot oil..
As soon as they splutter, add the chopped onions and a little salt. Saute till onions turn a little brown.
Grind the ginger and garlic to a fine paste and add it to the browned onions. Saute for a while..
Add the chopped tomatoes and cook covered till they turn mushy. Add salt to taste..
Add the whisked curds to this mixture and saute continuously on high flame till the mixture becomes a little thick..
Add all the vegetables and give it a good stir. Cover and give it one steam. The biryani masala is now ready..
Place a thick griddle on the gas stove and start heating it..
To layer the biryani, spread some homemade ghee at the bottom of a heavy bottomed pan..
Spread some prepared vegetable masala over it. Spread half the cooked rice over the masala..
Roughly tear the mint leaves and spread them over the rice. Spread half of the birista too..
Spread the remaining biryani masala over it and again cover with a layer of the remaining rice. Spread the birista over this layer. Drizzle some homemade ghee over it..
Make four vertical holes in the biryani in the four mid corners with the handle of a spoon..
Pour the saffron milk equally in these holes. Seal with the cooked rice and drizzle the kewra water over it..
Cover the pan with a foil and place a lid tightly over it..
Place the pan on the hot griddle on high flame for the first 5 minutes and then on low flame for 8-10 minutes..
Switch off the heat and set aside for about 15 minutes..
Uncover and transfer the biryani to a serving bowl and garnish with chopped coriander leaves..
Serve this delicious Hyderabadi Vegetable Dum Biryani with some salad and a cooling boondi raita!.
Although I still have to develop the taste the strong and pungent whole spices in rice, since they tend to put me off sometimes. Vegetable Biryani prepared in a traditional Hyderabadi Dum Biryani style is a Vegetarian's dream come true for enjoying the famous dum biryani. This slimming friendly healthy Hyderabadi dum biryani is going to change your perception about biryani, coz it is the healthiest version of restaurant-style dum biryani. Pearl Pulao/Pilaf . A delectable Rice Pulao with soft deep fried, Paneer balls decorated with edible silver, adorn the flavourful rice cooked in Indian spices.
  Pearl Pulao or as it is popularly known as Moti Pulao is a delicacy from Awadhi Cuisine. the original version of the pulao is non-vegetarian. This rich Pulao was cooked in the kitchens of Nawab of Lucknow. Pearls or the Moti in pulao were made with egg whites poached and cooked with special technique, pounded and stuff in the intestine of chicken and in such a way that the cooked yolks resembled the real life pearls. These days this exotic Pulao is not cooked widely. I recently saw a feature on you tube, on this Pulao at NDTV cooking show hosted by Aditya Bal.
For vegetarians, there is an easy and quite simple vegetarian version of the pulao, where the Pearls or Moti in Pulao are made with the Paneer or Indian Cottage Cheese. This pulao is quite popular in the eastern part of Uttar Pradesh where it is cooked during festivals as a part of Bhog(offering) to the Divine. Please update me if another other region also people make it.
Many versions of this Pulao are there, but I like this simple and no fuss version. This Pulao can be enjoyed with any creamy gravy or dal tadka. The rich flavour in this pulao comes from the use of Indian whole spices and saffron. Nuts like cashew nuts and raisins are added to enhance the richness of the pulao. I saw the vegetarian version of Pulao cooked by Chef Saransh Goila on NDTV few years back. I had forgotten about this Rice preparation till the time I saw  the non-vegetarian by Chef Aditya. Searched few recipes and every recipe was different from the other. I liked this simple version of Pulao by Chef Saransh, so here I am with this Royal Pearl Moti Pulao recipe.
It takes just a few minutes to cook it, if you have  with you fresh Paneer and boiled potato available. You can use store bought Paneer or make it at home(Homemade Paneer).
Use  good quality Basmati Rice for making this.
Let’s see how I make this Pearl Pulao/Moti Pulao
Pearl Pulao/Moti Pulao
Pearl Pulao/Pilaf ..soft Paneer balls decorated with edible silver, adoring  the flavourful rice cooked in Indian spices.
For Rice
2 Cups Basmati Rice
8-10 Cashew Nuts
8-10 Raisins(Kishmish)
1 Bay Leaf
2 Black Cardamons
2-3 Green Cardamoms
4-5 Cloves
4-5 Peppercorns
1-2 tbsp Desi Ghee/Oil
4-5 Saffron Strands
1/4 Cup Milk
1/2 Salt to taste
1/2 tsp Sugar
To make Paneer Pearls/Moti
1 Cup Soft Crumbled Paneer
1 Boiled Potato small
2 tbsp Cornstarch (Cornflour in India)
1 tsp Salt
Prepare the Rice Pulao
Wash Rice and soak it in enough water for at least 1 hr.
When ready to take rice, take a heavy bottomed pan, add ghee/oil to it.
Roast Cashew Nuts in it till light brown. Roast raisins for few seconds till it puffs up. Keep aside for later use.
In the same pan and ghee, add the whole spices, and cumin seeds. When the seeds crackle, add rice and saute for few minutes.
Add 3 Cups of water. Add salt, and  mix lightly . Cover and cook till rice is done and the water evaporates. Add the saffron milk when the rice is half done and again cook till all the liquid evaporates.  
Prepare the Paneer Pearls/Moti
In a bowl, mix paneer, boiled mashed potato, cornflour and salt. Mix and make a smooth mixture.
Make small lime balls, and deep fry till light brown. I like to keep the Paneer pearls very light in color. Once done, keep aside to add in pulao.
Check for the doneness of rice, add cashew nuts and raisins and mix lightly with a spoon or fork.
Coat paneer pearls with edible silver foil while still warm. Add to the pulao before serving.
Coating  Paneer balls/pearls with edible silver foil is optional. I didn’t have any, you can use it if you want.
You can add nuts of your choice like almonds, pistachios and even cranberries.
For vegan option, infuse saffron in almond or any plant based milk or even skip it and add directly to rice with water..

Pressure Cooker Mutton Biryani Ingredients Mutton - 1 kg Turmeric powder - 3/4 Tsp Chili powder - 2 Tsp Salt to taste For Masala paste Shallots - 6 nos Garlic cloves Ginger Green chili - 2 nos Red chili - 6 nos Grated Coconut - 2 Tsp Few Mint leaves Few Coriander leaves Coriander powder - 1 Tsp Little Water For Pressure cooking Ghee - 2 Tbsp Oil - 1 Tbsp Cinnamon Cardamom pods Few Clove Bay leaves Onion - 4 nos thinly sliced Tomato - 3 nos chopped Grounded Masala paste Salt to taste Diluted Coconut Milk - 3 cups Coriander leaves Mint leaves Basmati Rice - 3 cups (soaked 30 mins) Method: 1. In a mixing bowl add mutton, turmeric powder, chili powder, and salt. Rub well to mutton pieces. 2. Let it sit for 15 minutes. 3. For masala paste: In a blender add shallots, garlic cloves, ginger, green chili, red chili, grated coconut, mint leaves, coriander leaves and coriander powder. 4. Add little water and grind to a paste.Your masala paste is ready to keep aside. 5. Soak basmati rice for 30 minutes. 6. Heat ghee and oil in a pressure cooker. Add the whole spices (cinnamon, cardamom pods, clove, bay leaves). 7. Add the thinly sliced onions and saute till it turns a brown color. 8. Then add tomatoes and saute for few minutes. 9. Now add the grounded masala paste and saute for few minutes. 10. Add the mutton pieces and salt. Mix well. 11. Add diluted coconut milk, coriander leaves, mint leaves and pressure cook the mutton. 12. Once mutton is cooked check for seasoning. 13. Keep the flame on low add soaked basmati rice and cook for 7 minutes. 14. Turn off the stove and let it sit for 5 minutes. 15. Enjoy the pressure cooker mutton biryani with raita or any gravy of your choice. Ingredients:
FOR THE DOUGH 
Wheat flour, 2 cups
Salt, 1 tsp
Oil, 2 tsp
Water for kneading dough
STUFFING 
Onion, 1 cup (sliced)
Boiled potatoes, 4 medium sized
Green chillies, 2-3 finely chopped
Whole coriander, 1 tsp 
Asafoetida, a pinch
Ginger, 2 tsp (finely chopped)
Red chili powder, 1/2 tsp
Mango powder, 1 tsp
 Garam masala, 1/2 tsp
Salt, as per taste
Green coriander, 2-3 tbsp (finely chopped)
Cashews, 15-20 finely chopped
Raisins, 1 tbsp
Oil 2 tbsp (for making stuffing) 
To bake oil parathas
HOW TO MAKE ALOO PYAJ KA PARATHA / METHOD OF MAKING POTATO ONION PARATHA: - 
For kneading the dough, mix all the ingredients and mash them well.
Knead the soft dough by adding a little water.
Apply some oil or water on the dough and cover it with a wet cloth and keep it for 15-20 minutes.
Till then we will prepare its filling. For this, heat oil in the pan. Add whole coriander and asafoetida.
After 1 minute add sliced ​​onion to it.
Keep the flame on high and roast the onion while stirring continuously for about 30 seconds.
After 30 seconds, add all the other ingredients like dry spices, boiled mashed potatoes, cashews and raisins and mix it well.
Roast for 5 minutes and then add green coriander and turn off the gas.
Stuffing is ready. Allow the mixture to cool.
Divide both the flour and the stuffing into 15 equal portions.
Prepare the paratha by filling the mixture with flour. And put the golden pan on both sides on a hot pan.
Prepare all the other parathas in this way.
Delicious and spicy aloo pyaj ka paratha / potato onion paratha is  ready. Serve it with curd, boondi raita, mango pickle, carrot pickle, or any other pickle, etc.
