The Black Isle Brewery Farm was bought in 2008 and converted to organic production. With the help of local volunteers, it has a dual-purpose; to grow produce for the bars whilst encouraging nature back onto what was previously intensively farmed land. This was a crop of Apium graveolens var. rapaceum 'Ibis' (celeriac) and Apium graveolens var. rapaceum 'Monarch' (celeriac) both cultivars produce creamy stems that carry a subtle nutty flavour. They have good storage ability and can be harvested from September onwards
