"i hate winter sometimes." your friend, kugisaki says as she links her arm with yours, in attempt to get some of your warmth. "but like, it's so fun dressing in winter, you know?"
"so true. dressing up in winter clothes just feels fancy and all." you chuckle, finally reaching the cafe and pushing the door open. you hold the door for your friend and get a table for two. right beside the window so you can see the snow falling and piling up on the ground.
"the usual?" kugisaki asks, putting her bag on the table. you nod and watch her walk to the counter to place your order. there are a few people in front of her in the counter. out of which you see the guy that has caught your eyes.
the first time you've seen him was at the same cafe while you were ordering your drinks and since then you find him the the same cafe quite a few times. you always notice his beautiful face structure. and the prettiest lashes you've seen on anyone.
you're so not complaining though. your eyes stay on him, watching him place his order and finding an empty table. he takes out his laptop and a notebook and starts doing his work. you look away before he could feel your eyes on him and label you as a creep.
you take your own phone out of your bag and check the new messages on your class group. kugisaki joins you, sitting in front of you with a grin, "your man's here." she says as she points to the man's table with her eyes.
you chuckle, "i know, i saw him. it's like.. fate." you laugh and joke about you seeing him in the cafe everytime before you go back to shit-talking about people. then justifying it, "it's not like we're doing anything wrong."
"right! we're just talking about the stupid things they did. and that's just the truth. we're not even making it up."
your friend nods at you with energy, "exactly, if you don't want people to talk about you, then just stop doing such dumb things."
you take a sip of your drink, leaning in towards the table, getting close to kugisaki, "and like how could she talk about," you fake cough, "sugar being flirty with the class representative in our group chat and then do the same herself?"
"ew i know, she's really getting on my nerves. everytime i see her or even her messages, i just feel the energy leaving my body." you groan, shaking your head and taking a piece of your tart.
"everything here is so good." you munch on your sweet treat, "i recommend this place to do our project."
kugisaki nods at you, taking a sip of her drink, "sure but what if salt or sugar see your man and start flirty with him? we're in the same group as them anyway."
you gasp, putting the spoon down, "don't jinx it, you dummy. i won't let them set an eye on him." she laughs and you wander your eyes to his table, seeing him already looking at you with an amused look on his face.
you quickly turn back to kugisaki, "he's looking at me." you try to look as normal as possible, thinking he could still be looking at you, "shit, was i talking loud?"
you see your friend, trying to hold in her laughter, "i'm sorry i think we were." you sigh, hiding your face in your palms, "see? these kind of things always happen when we're together. i blame it all on you."
"geez girl calm down. if he heard us, then at least he now knows about your little crush on him." 
that was last week. and finally after a whole week of not visiting the place, you enter the place, which surprise surprise is where you'll be doing your group project. you're the first one to arrive so you order yourself a drink, paying for it before looking for a table that could fit all other four members of your group.
just then your eyes meet his. he isn't alone today though. he is with someone, probably his friend. you don't care since he is all you could focus on.
you quickly snap out of it, clearing your throat before walking to a table. you quickly take out your phone and keep yourself, busy just so you don't land your eyes on him again.
you feel someone pass by your table, you know it him. how? you just do. the washroom is down the hallway, for which one needs to pass your table. before you could dwell on it more, your drink arrived and you try to keep your mind on your phone and your drink.
just a few seconds later, you feel him stand besides your chair. "hi." you take a quick breath in and out before looking up to meet his eyes. you try and smile at him, "hey."
"i'm sorry for approaching you like this. i'm fushiguro megumi. uhm-" he moves his eye to his table, probably looking at his friend before looking back at you. 
you finally got his name. "oh yeah no, uhm i'm y/n. hi." in the back of your mind you're debating what you should do or say. do you offer him a seat? do you get up as well? what do you say next?
"yeah i know." you look at him, surprised before he chuckles a little, "you aren't very quiet when you're with your friend." you could feel your face heat up, your hands automatically come up to cup your own face, "wow that's really embarrassing. i'm so sorry."
"no no, that's kinda nice actually. not you being loud but- seeing you and your friend enjoying your time. is that weird?"
"i.. don't know." you chuckle, gulping as you look back at him, "so.. you heard us? talking weird?"
"uh huh, pretty loud and clear, since i wouldn't be far from your table anyways." he lets out a deep breath, "what i wanted to tell you was.. i think you're really nice and i'd like to get to know you."
"oh." that wasn't a disappointed 'oh', that was a surprised 'oh'. because never would you have expected your "man", as you and kugisaki refer to him as, to come and talk to you. and definitely not asking to get to know you.
"wow, yeah of course. i'd love that very much." you smile at him, finally seeing his shoulders relax after hearing your reply. he takes his phone out of his pocket, "so can i get you number?"
"of course." you type in your number and hand him his phone back. he calls your number, you getting his number as well. "well then y/n, have a great time. i'll text you later, yeah?"
"sure thing. bye." you keep your eyes on him as he walks back to his table. his friend immediately wrapping his arm around his shoulders, teasing him. they seem to be done since they get their belongings and walk to the door. 
fushiguro looks back at you, waving with a small smile on his lips. his energetic friend besides him showing you his wide grin and waving at you as well before fushiguro drags him out.
you save his number on you phone, quickly calling kugisaki. a couple of rings later, you hear the cafe door open, seeing kugisaki. you signal her to get to you quick, which she does, "what is it?"
"you won't believe what just happened."

Apple pie rose 🍎🌸😋
Ingredients:
300g of flour
A pinch of salt
1 teaspoon of sugar
125g of butter
1 egg
Jam (for the filling)
Apples (for the filling)
Preparation:
Slice the apples into thin pieces and soak them in hot water with a little lemon juice and sugar (for 10 minutes).
Drain the apple slices and place them on a paper towel to dry.
After rolling out the dough and placing it in the mold, pierce it with a fork and spread any type of jam you have.
Arrange the apple slices on top. Sprinkle with a little sugar and cinnamon.
Bake the tart in the oven at 180°C (approximately 350°F) for about 20 minutes.

my current favorite low-ish c@lorie safe foods + drinks, for anyone else struggling to eat 🥲
foods:
1. carrots - carrots are AMAZING if you want a quick snack or a side with a main meal! they’re incredibly nutrient dense with only 35 c@ls per 100 grams with a good amount of fiber and tons vitamin a. i boil them and add basil, parsley, a little pepper, and sugar free maple syrup, it’s sooo good and filling!
2. bean burritos - i heat up fat free refried beans in a pot with some salt, red pepper, paprika, chili powder, and taco sauce then add it to a low carb tortilla with fat free cheese. in total, it only comes out to be ≈200 (high estimate) per burrito PLUS 10g protein and 15g fiber (rough estimate) my favorite burrito place’s were over 500 c@ls per burrito… OH and these also make a lot so you can refrigerate and eat them later! however they can be high in sodium so drink tons of water. 👍
3. peanut butter powder - not a food BUT an amazing substitution for peanut butter when mixed with water! i use it to make pb&j (with keto bread and zero sugar preserves) and i also add it to my yogurt (with cocoa powder) and it’s super super yummy! 60 c@ls and 6g protein for 2 tbsp!
4. tomato soup - if you’re not already eating tomato soup WHAT ARE YOU DOING… 110 c@ls for a cup is insane! 😭 seriously one of my favorite foods ever.
5. two good smoothies - i buy these from walmart and i love them! 70 c@ls and 10g of protein for the whole bottle. although they’re small, i love the taste and will have one for lunch with some fruit and veggies.
drinks:
1. sparkling water - IT IS AN ADDICTION. sparkling ice has a bunch of good flavors! my favorites are cherry and strawberry starburst and classic lemonade! 5 c@ls with no sugar or carbs for the whole bottle… i was shocked.
2. zero sugar sweet tea - 0 c@ls and tastes just like regular sweet tea. 😋
3. coffee with zero sugar creamer - i cannot drink black coffee, it tastes terrible to me… i add a few tbsp of zero sugar creamer and it only ends up adding ≈45 cals.

The Ultimate Orange Muffins

Hello everyone! So, previously, there has been some discussion on this blog about trying out several different orange muffin recipes on the quest to find the best Art Heist, Baby! James (and Regulus Black approved) Orange Muffin™️ ever made. I am now ready to begin this journey and will document my research and discoveries along the way! Please feel free to follow along on this orange muffin journey!
Starting Information:
I will be working my way through orange muffin recipes at least once a month (maybe twice if I can manage and have people to pawn muffins off on! We will see!)
The goal is to try at least 10 different iterations of orange muffins which i will rank (1-5) on skill (how easy is it to make, how many/what types of ingredients/ special tools you need, how long it takes), orange and overall flavor (arbitrary but it's my muffin bracket so idc!), and texture (consistency, moisture, idk, like, crumble factor)
After giving each recipe an overall score, the top scoring muffin will be crowned The Art Heist, Baby! Orange Muffin (James' version).
If you wish for your orange muffins to be included in the running, please feel free to send along your recipe and I will add it to the docket to bake! 😋

All that being said...Here is the first recipe and rank for September's bake! ✨
Chai Orange Muffins!
Ingredients: 🍊 3/4 cup Oil 🍊 1 cup Sugar 🍊 2 Eggs 🍊 1 tsp. Vanilla 🍊 1/3 cup Chai tea latte concentrate (store bought or make your own!) 🍊 1 and 1/2 cups Flour 🍊 1 tsp. Salt 🍊 1 tsp. Baking soda 🍊 2 Tbsp. Orange zest, grated
Directions: Set oven to 350 degrees Fahrenheit. Line 12 muffin cups with paper liners. Combine oil, sugar, eggs, vanilla, and Chai Concentrate. In a separate bowl, stir together the flour, salt, baking soda and orange zest. Blend in the oil mixture and stir lightly. Pour into muffin cups. Bake for 15 to 25 minutes. Serves 12.
Extra: I also made a chai glaze to put on top of the muffins which is optional but here is the recipe for that as well!
🍊 1 cup of powdered sugar 🍊 2 tbsp of chai concentrate 🍊 1 tsp of vanilla 🍊 1 tsp of cinnamon
Directions: Stir until glaze consistency and add more chai concentrate as needed! Wait till muffins are cooled to add the glaze.

Ranking:
Skill: 4 (Super easy to make! Had all of the ingredients at home to make besides the chai concentrate! Just needed a bowl, a fork and a muffin tin really. Kinda hard to nail down a set bake time though. The recipe said 10-15 minutes mine needed like 25.) Flavor: 4.5 (The chai is so wonderful and it doesn't overpower the orange flavor. Muffins are good with or without the glaze. Can definitely taste the orange!) Texture: 4 (So yum. Not dry! bUT some cooked a little unevenly (that's on me ik but shush). Also they don't really have a good muffin top. They're more flat like a cupcake so I deducted some points for the aesthetic. Sorry!) FINAL RANKING: 4.2/5

Final Thoughts: The muffins are good! Almost more of a dessert muffin because they are very sweet! But they're a strong contender for my favorite already because I love chai, and the muffins made my entire house smell so lovely. A slay! (Would Regulus be able to stack several of these on his plate and save them for later though??? Kinda doubt it. So we continue on!) ✨ Tune in next time for my "Bakery Style Orange Muffin" Bake! Stir a little to prevent it from burning, then close the lid and cook over medium heat for 15 minutes! Then add all the chives, top with the marinade, braised onion and garlic, top with salmon, and steam for just 3 minutes! Then, the delicious salmon pot rice is done¨̮
> For braised onion garlic, add soy sauce 4, plum syrup 2, oyster sauce 1, sugar 1, 100 ml, stir-fry onion and garlic, add seasoning, and boil it down, and that's it!

Two Responses to both my Filipino Friend and my A-Pal

Normally to tell you guys that I like eating both those candies. When I was little, I wasn't a fan of eating M&Ms, and when I got into Kindergarten, I got used to eating Skittles and they taste really good. But now that I'm old enough to remember my taste buds, I can now eat both Skittles and M&Ms. But the only Skittles I like eating are Original, Dark Side, Wild Berry and Maybe Tropical. And for M&Ms, all I can eat is Milk Chocolate, Crispy, and Crunchy Cookie. Normally the Pretzel flavor is okay, but I don't like eating candy that tastes too Sweet and Salty, much like eating Sea Salt or making Pretzels in Animal Crossing New Horizons with Flour and sugar. But when my mom and I went to a Dollar store, my brother and I checked out the M&Ms Ice Cream Sandwiches. I like the normal vanilla alongside Cookies and Cream.

I also wanted to tell you guys that I also had Charley's before. I go to the mall all the time and their food tastes really good. Especially the Sandwiches and I had a Buffalo Spicy Chicken a couple of times. And their fries taste good as well. But I do like Cheese steaks too, but I usually eat my sandwiches without the onions. I'm not a big onion person. And what I did notice is that when I was at Walmart, some of their fast food places are different compared to what fast food places they got. They used to be just McDonald's, but I think Walmart stopped the agreement with McDonald's and that some McDonald's restaurants can stay, but all the Restaurants are Different when I was in my State, AZ. Say the one by my House still has a McDonald's as well as for Glendale and Peoria, and for Maryvale, they have a Dairy Queen, Christown has a Krispy Crunchy Chicken which I had before, and two Walmarts have a Subway including when my Sister just moved over to CO, they have a Subway at Walmart. And some Walmarts in AZ did bring in Mall Related Restaurants like Charley's and Wrestle Pretzels. But right now some of the Walmart all had Charley's and I do enjoy that restaurant ever since I was in Highschool. And that's all I remember since Charley's food is really good. 😋

Ingredients
For the Sourdough Starter:
1/2 cup lukewarm water
1 packet (2 1/4 tsp) active dry yeast
1 tsp sugar substitute (like erythritol or stevia)
1/2 cup almond flour
For the Bread Dough:
1 1/2 cups almond flour
1/4 cup coconut flour
1/4 cup psyllium husk powder
1 tsp baking powder
1/2 tsp salt
2 large eggs
1/4 cup apple cider vinegar
1/4 cup melted coconut oil
1/4 cup lukewarm water (for the dough)
Additional lukewarm water (as needed)

Instructions:
1. Create the Sourdough Starter:
In a small bowl, mix the lukewarm water, yeast, and sugar substitute. Allow it to sit for about 5-10 minutes until it becomes frothy.
Stir in the almond flour to form a thick paste. Cover the bowl loosely with a cloth or plastic wrap.
Let this mixture sit at room temperature for at least 12 hours or overnight. It should become bubbly and develop a slightly sour aroma.
2. Prepare the Bread Dough:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.
In another bowl, whisk the eggs, apple cider vinegar, melted coconut oil, and 1/4 cup lukewarm water.
Add the egg mixture to the dry ingredients and stir until a dough forms.
Gradually add lukewarm water, one tablespoon at a time, until you achieve a smooth and pliable dough. The amount of water needed may vary, so be cautious not to add too much.
3. Combine the Starter and Dough:
Add the sourdough starter to the dough mixture and combine thoroughly.
If the dough is too dry or stiff, you can add a little more lukewarm water to reach the desired consistency.
4. Shape and Bake:
Shape the dough into a loaf and place it in a greased or parchment paper-lined bread pan.
Optionally, you can sprinkle some sesame seeds or other keto-friendly toppings on top of the loaf.
Bake in the preheated oven for about 50-60 minutes, or until the bread is firm, golden brown, and sounds hollow when tapped on the bottom.
Let the bread cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
Enjoy your keto-friendly sourdough bread! Keep in mind that this bread will have a different texture and flavor compared to traditional sourdough due to the absence of wheat flour, but it’s a great low-carb alternative.

Tried a new breakfast. Milky collagen and inulin coffee with apple, cinnamon and chia seed pudding with strawberries and cacao.
Not loving the pudding. But always ready to try something different. I wish I'd stuck to my usual walnuts, though 😅
Only 12hrs "fast", after serious low blood sugar shenanigans about an hour before bedtime last night. It messed me up, and I went into "panic bunge mode". Ate way too much.
Then it was a high level rebound situation, which I was fully expecting, all through the night. A few insulin correction doses, but it stayed high.
I had an online training session booked in for 7am, which I honoured of course, but oh how I wanted to just stay in bed! I just went very low effort on the workout myself, but made sure I worked our fabulous Alison hard!
I'm now doing that whole "listening to my body" thing. And today it's saying "YOU NEED TO REST!!". Who am I to argue? 🤔😋.

Strong collagen coffee, (boring instant) with full fat milk. Roasted and salted macadamia and walnuts.
Feet up. Book.
My nurture time from yesterday has had to be extended by another day.
So I'm seriously considering a 36hr "fat fast" starting after dinner.
Get this "curl up in a ball, eating all the things" phase out of my system, then throw myself a curveball.
Mucus no better. Waiting for intolerance results (might be days yet). Diabetes drama kicked my butt last night. Rough night. Sluggish, a little burned out and just......Ugh.
So yeah, as it is now written, so shall it be done.....

Hey all!
I’ve been gone a while, but I return with food 😋
I have a Ninja Creami, that I’ve used to make ice cream a few times. But I didn’t like that all the “official” ice cream recipes call for cream cheese…which is a weird ingredient I think.
Also ever had frozen milk? That gross texture, was how my ice cream turned out.
Barf.
So I trolled around online, and found a recipe for coffee ice cream that looked promising. Except for the fact that I HATE coffee lol
Instead, I brewed some strong black tea that I love.
It’s butterscotch. ‘Nuff said.
And it turned out AMAZING!!

But it needed a little something more…something like caramel!
I had some I’d bought from the store, pre low waste journey, but it soon ran out.
And by now my hunger for butterscotch black tea ice cream was insatiable.
So what was a gal to do?
Simple! I’ll just make my own caramel.
For the first time…
It’ll be fine right?
And it WAS!

So proud of me, making low waste ice cream and caramel sauce 💖
*tea is loose leaf, and is composted after brewing. The milk/cream I used for ice cream is purchased in recyclable containers. Only the lids themselves are garbage. Sugar, salt, and vanilla extract are purchased from my local bulk foods store-in reusable bulk bags, and one small glass container I reuse for the vanilla.

I've already answered this one, but on top of that I will say I'm a bloody good cook!

1. My son. He's been non-verbal up until recently, and while his speech is now prominently echolalia, hearing him say "I love you" is the best thing in the universe 💖
2. My husband. We've been together 18 years now (married for 10 of them!) and he's my absolute rock
3. My home. We live by the sea, moved down here about 7 years ago and I can't imagine ever going back to city life.
4. Driving while listening to Absolute Radio 90s. We'll be in the car, and a song will come on.
Me: omg, I LOVE this song.
Husband: you say that about every track they play
I mean... yeah, he's not wrong, but that's why I listen to that station only 😅
5. Getting comments on fics. It really is some of the greatest validation and feels AMAZING when you see a review has come in from someone who loved a story you wrote. Absolutely wonderful 😊
56. Favourite foods
Oooh, you're in for it now. I LOVE food. As long as it's vegan there's basically nothing I won’t eat.
Our absolute favourite meal, which we could happily have all the time, we call "food bullets." I guess it's loosely based on fajitas, but I wouldn't want to upset anyone culturally, so food bullets it is.
You need: tortilla wraps, guacamole, oatly creme fraiche, tomatoes, onions, garlic, coriander (cilantro to those of you stateside) acv, sweet potatoes, peppers, and fajita style spices. Slice the sweet potato into chips, and throw them in a roasting dish with sliced peppers and onions, some olive oil, and loads of spices. (We like ours hot, so we go heavy on the chilli and cayenne, and add lots of smoked paprika, cumin, ground coriander, salt and pepper, oregano, and a pinch of sugar) roast it all up until everything's browning at the edges.
Meanwhile finely dice a raw onion and lots of garlic, and add a little acv to them to "cook" them, then dice up a load of tomatoes (baby plum work best here) and add the coriander/cilantro.
Then just heap as much of everything as you physically can inside a wrap, add a little salad for health, and devour it. Eat another then veg out in front of the TV.
If it's a takeaway, it has to be Indian. We tend to order at least 4 or 5 dishes, and have a little of each, and we'll have it again the next day. We always get a veg dhansak, a jalfrezi, and a shatkorawala, and then we alternate the remaining dish(es) depending on how we feel.
I apologise, i genuinely could go on about food forever. I'm hungry now 😋

Mix the roux with the soup, stirring constantly over medium heat until the soup thickens and simmers about ~5-7 min Season to taste with salt, rosemary, pepper. Topped with Mozzarella cheese and croutons… and a little HEREFORD corned beef
ALSATIAN FUSILLI SALAD WITH CORNED BEEF, PANCETTA, APPLE 🍏 AND PLUM Ingredients: fusilli pasta, escarole lettuce, red cabbage, HEREFORD corned beef, pancetta, apple 🍏, plum Dressing: Irish butter, olive oil, garlic, onion, chopped tomato 🍅, HELLMANN'S mayonnaise, plum sauce, basil, white vinegar, salt… season to taste. Cook the pasta ~10-12 min… drain with cold water. Apple 🍏 compote. Stir-fry garlic and onion with Irish butter… add chopped tomato 🍅 Mix dressing ingredients… set aside. Mix well dressing with pasta, corned beef and pancetta… toss to combine.

Pancake Breakfast! 🥞

Pancakes are part of a traditional southern breakfast and I was craving them today.
Theyre sweet and nostalgic, reminding me of grandma's house the most and some breakfasts spent at Cracker Barrel with her when I was little.
One part of learning to cook is the magic that is finding out how my favorite foods dont take magic to make! As in, most of what pertains a meal or even an entré is so simple its suprising to me.
Pancakes, to be a bit reductive here, are just fried batter patties! The most simple consisting of what I made this morning (or rather afternoon lol): flour, oil, water, sugar, and leavening agents.
Here I experimented with my own batter making skills with a vegan twist:
all purpose wheat flour
water
olive oil
salt
brown sugar
honey.
I dont have baking powder but since I understand its purpose in a recipe as a leavening agent, I tried to substitute it with baking soda and apple cider vinegar, which kindaaaa worked? Lol I was gonna use lemon for the acid part, but I didnt want a bright citrus taste for these pancakes. Too experimental and not familiar lol.

With a little reassurance from a skim of internet recipies, what I made turned out not bad! And I was soooo excited when I saw the batter frying and then flipped the cake. Looked just like the Real Thing mama's make!

I wanted to get a lil experimental and add some trail mix inside. I added them a lil too late for my first pancake (sprinkled some ontop of the raw side of the cake i had frying in the pan yikes), so the texture was a bit grainy. Plus the nuts and fruit burned and the cake on that side didnt look as appetizing lol. But since that was my experimental cake, and was also my first try, I gave myself some grace and focused on the overall experience of eating the entire pancake. And all my efforts proved worth it! It wasnt half bad. :-)

I just cant imagine eating pancakes without having two, and I also had wayyy too much leftover batter for just one anyway, so I made another and added the trail mix into the batter bowl before pouring it all in, which proved to be a better choice lol. Since I didnt want to waste all the batter I made, and only intended to make one more pancake, i added it all to the pan for a huge one lol.

It turned out very good, though I do admit I might have to actually buy baking powder for more fluffiness (though the baking soda and acid/cider trick kinda worked! i'll just have to get my proportions down). Also I always over estimate how much oil i need in any given recipie! So it was a bit dense and greasy. But as with all learning experiences, mistakes are inevitable yet valuable!
The rest of my breakfast consisted of a fried egg, baby carrots, a banana, and steamed spinach. Brwakfast wouldnt have sufficed without vegetable elements for me, so I was literally craving vegetable sides rather than just a breakfast of wheat and animal products.
The carrots had a great texture and sweetness, and althought I definitely could have salted the spinachand a egg wayyyy less, the flavors together were supurb. One day I'll have to experiment with making omlets with spinach and vegan cheez bc the flavors are so compatible! 😋

I found this recipe online of how to improve my vegan pancake making skills for another hearty breakfast. This one also calls for baking powder but i think my baking soda and acid workaround could still work.
I'll def update this post when I try this particular recipe!

Smoked salmon
I have started cooking this recipe in 2018 and have tested many variations. The proposed recipe is the result of my experience in smoking salmon.
The recipe is for salmon between 800g and 1.5kg
For the organization, I first salt the salmon in the morning (1), then I dry it from the evening (2), before smoking it the next evening all night (3) and finally it is matured (4) ànd tasting (5 ).

1) Salting
Mix 200 g of brown cane sugar with 1 kg of coarse salt in a bowl. In a container holding the salmon, put a little of the sugar and salt mixture at the bottom, then place the salmon and cover it with the rest of the salt-sugar mixture. Put it in the fridge for 8 to 10 hours.
The purpose of salting is to prevent the bacterial growth, to harden the flesh and to intensify the smoky taste. Concretely, it dries the salmon by absorbing water. The sugar and salt mixture absorbs more efficiently than salt alone. And this will not sweeten the salmon. For salt, I don't use basic or first price salt. I prefer coarse salt from Guérande, Île de Ré or Camargue. Some add herbs or slices of citrus fruits to the salting. Personally I didn't see any difference in the final taste by adding aromatics during this phase. Finally for the container, I use a 40cm fish poacher which is very practical because its size allows it to be put in the fridge.

2) Drying
After the salting period, remove the salt, and wash the salmon under cold water for at least 5 minutes because you need to fully remove all the salt, after dry the salmon carefully. Finally put the salmon in the fridge for at least 24 hours so that it can dry.
The drying is important because it provides a great texture to salmon. Some recipes suggest submerging the salmon in cold water for 2 hours to thoroughly desalinate it. Personally I didn't see any difference by adding this phase. Hence submerge the salmon in water for a long period if it is too salty when the salting period exceeds 12h because you forget it.

3) Cold smoking.
After drying, remove the salmon from the fridge and smoke it cold, i.e. at a temperature below 25°C. You therefore need a smoker that can be purchased on Amazon . You fill it with beech sawdust. It is necessary to initiate the ignition of the sawdust to ensure that it burns completely. I do it with a blowtorch, an alternative is to put a small candle underneath at the end of the smoker. The combustion follows the smoker coil from its exterior to its center. Smoking is achieved in a Weber like BBQ with a lid. Close the fins below, adjust the lid opening to a third (see Photo), and cover the BBQ. Smoking is finished when all the sawdust has been consumed.
I smoke the salmon at night because it must be smoked at low temperatures since the temperature must not exceed 25°C. This is why smoking salmon is better in winter, but the smoking is feasible at any season when it is smoked at night.

4) Maturation
If you taste the salmon after the smoking, you will find it very dry, over smoked, a raw taste. It must be matured to get more flavor and refines its taste. The salmon will be oiled with a brush to become less dry. After oiling, put it back in the refrigerator for 3 days before tasting. 3 days of maturation is a minimum but this period can be extended to 5 days to make its taste even more subtle.
You can use whatever oil you want, but a flavored oil will give an interesting taste to the salmon. I tested different oils: sesame, avocado, hazelnut, Argan, or olive. Personally , I prefer sesame oil. I also pepper the salmon to spice it up. If you do this, choose a quality pepper, such as Kampot pepper or Madagascar voatsiperifery pepper without grinding it. I keep the salmon vacuum packed during this phase. However, you can also put it back in its container without vacuuming it.

5) Degustation
At the end of the maturation, you can taste your smoked salmon. You will notice that its quality is exceptional, worthy of the greatest caterers. Enjoy! 😋 Smoked salmon can be kept 15 days in the fridge.
There are two possible cuts for salmon: sliced ​​or Russian style. My experiments with slicing have never been satisfactory. The slices were either too big or too small because the cutting finished too soon. Therefore I choose the Russian slicing style.
