Apples in Caramel Bourbon Sauce
Want a delicious dessert? Want to up your game? Why not both? This recipe once literally got me laid, it’s that damn good, so use at your own discretion
Or not, I’m not your mother
Ingredients:
2 apples (gala or honeycrisp recommended)
1/2 cup - 3/4 cup sugar (depend on size of apples and thus the amount of sauce needed)
4 tablespoons butter (I use salted, if using unsalted I recommend a pinch of salt on the final step)
“A splash” of bourbon (couple tablespoons to a 1/4 cup)
1) core and cut apples. Peeling is optional. Smaller pieces will cook faster so I prefer cutting into 1/8 slices and cutting those slices I half, but theoretically you could just cut the apples in half. Just make them roughly the same size
2) have all your ingredients on hand. Seems silly to make this its own step? If you have to hunt down during the next step you risk burning and starting it over. Just have your stuff ready
3) in a dry frying pan, add sugar and heat on medium. DO NOT WALK AWAY! Heat until sugar is melted and caramelized. It’ll start to darken and at this stage it can go from perfect to burnt very quickly. Stir with wooden spoon if needed to prevent burning but it’ll likely clump. Just break up clumps and it’ll melt when it’s hot enough.
4) add the butter and stir to combine. At this point it’s a very rudimentary caramel sauce.
5) add apple. It’ll likely seem too thick and not coat the apples immediately but just let them cook, stirring occasionally until apples are tender. How long? Depends how big you made your apple chunks. Sauce will get thinner as it pulls out moisture from the apples 
6) fish out cooked apples once tender and set aside
7) reduce sauce for a minute or two
8) add splash of bourbon (not from the bottle directly) and cook until harsh alcohol taste is cooked off
Serve by itself or the recommended method of over a scoop of vanilla ice cream, still warm

What do they smell like?
Uhh.. E...everyone?
I tried to do all of them lol.
Sans: I'd say ketchup tbh lol
Papyrus: Hmmm maybe oil? I'm not all that sure. Most likely oil though. And sauce.
Blueberry: He smells like sauce! From cooking as well as oregano and a faint scent of berries.
Stretch: He smells like oranges! As well as honey.
Red: Mustard, oil, and ash for some reason.
Edge: I feel like he would smell like fancy cologne and strawberries. The strawberry one is a lot weaker. Oh! And sawdust
Axe: I would say… hmmm… you know, most likely the scent of dirt, cut grass, and strangely a strong scent of cinnamon.
Noodle: Rich patchouli, black pepper, and sandalwood blended with hints of vanilla.
Lord: Coffee, Lavender, and that's pretty much it.
Mutt: kumquats and oranges!
King: I would say… watermelon! Mixed with wine.
Alpha: It might be shocking, but he smells like clean clothes, and clean sheets and such.
Overlord: Smells like fancy soap, for some reason.
Pup: he would smell like sugarcookies and just those basic candies. Just really sugary.
Commander: I think pine trees? For some reason.
Hound: Honeycrisp apple cider.
Chief: He smells like coconut, lemon, and just a basic sweet scent.
Wolf: Dirt mostly lol and a few different woody scents.
Royal: he smells like gunpowder, and fire. As well as just... metal.
Fang: Dirt, soot, and a few other things from underground. He smells pretty nice.
Prince: jasmine, wild rose, and sandalwood!
Canine: Oh! Sweet creamy coconut, hints of vanilla, and hints of musk. He smells really nice.
Leader: fresh water with hints of floral notes. Think sorta like uhh… gain laundry detergent?
Beast: think STRAWBERRY and creme shampoo. Like the kind you can buy from the dollar tree.
Grandeur: He smells so much like really fancy cream.
Behemoth: Brownies, marshmallows, and caramel.
Tycoon: He smells like brown sugar for whatever reason.
Brute: He smells like herbs and flowers! Mostly like... really earthy.
Cloud: He smells like a fresh rainfall.
Bat: smells a lot like roasted marshmallow :)
Superior: Lavender, crisp lemon leaves, and fresh apple.
Exo: He smells like he rolls around in fallen leaves lol.
Brilliance: Lavender for sure. Plus hints of blackberry and lemon.

2 new cheesecakes for my first 2 clients.
Top is a Pumpkin Cheesecake. I thought the seeds would be a nice touch.
The bottom is my signature Maple Bacon Bourbon Cheesecake. That's homemade maple bourbon caramel sauce on top with double smoked bacon bits.
I have an apple pie cheesecake for my family for tomorrow.

Apollo's Amazing Autumn Apple Cider Recipe 🍂🍏🎃🍄🕯️
This recipe got me a boyfriend, use its power wisely.
Makes about 3.5 L, concentrated. Depending on how strong you like it, this could be around 14-28 servings.
Tools:
stockpot, 6-quart size
potato masher
fine mesh strainer
Optional: citrus juicer, zester, apple corer/peeler/slicer, cheesecloth
Ingredients:
6 apples (variety is up to you! I use half of a sweet variety like gala, and half sour like granny smith)
1 orange (navel is most common where I live, but any good juicing variety is fine)
6 oz fresh cranberries
6 slices fresh ginger
8 cinnamon sticks
1 Tbsp whole cloves
1 Tbsp allspice
1/2 Tbsp anise or fennel
1/2 Tbsp nutmeg
1/2 Tbsp cardamom
32 oz brown sugar
Optional: 1 box cinnamon imperial candies (aka Red Hots), baking soda and lemon juice/apple cider vinegar to correct acidity
Steps:
1. Core and slice apples and add to the pot. It's best if you peel them (and I like eating the peels lol), but not strictly necessary.
2. Zest the orange, if desired, and discard the pith. You can add zest to the cider for a more orangey "zing," but I prefer to use it in sorbet with raspberries and basil :) Juice the orange and add the juice to the pot.
3. Add the cranberries, ginger, and enough water to fully cover the ingredients. Bring to a boil.
4. Once the mixture is boiling, stir, reduce heat to low, and cover. Simmer 30 minutes, stirring occasionally.
5. Turn off the heat and mash the mixture with your potato masher. It doesn't need to be applesauce, but make sure all berries and apple chunks have been smushed at least once by your mighty hand. Revel in your power as the vindictive God of the Apples.
6. Add the spices and enough water to fill the pot with an inch of room. Bring to a boil, cover, and simmer for another 2 hours, stirring occasionally.
7. Turn off the heat. Add the sugar in 8 ounce increments, tasting as you go. I always use the full bag, but I like it sweet.
8. If you want more spice, I can't recommend cinnamon imperials enough. Cinnamaldehyde is the chemical in cinnamon that gives it that "kick," and cinnamon imperials are a cheap way to get your hands on lots of it. Add 5, let them fully dissolve, and taste before adding more. I usually add 10 total, but my spice tolerance is low.
9. If the mixture is too sour, you can add baking soda 1 tsp at a time. Make sure it stops bubbling completely, then stir, taste again, and add more if needed. Do the same with a 1/2 Tbsp of lemon juice or apple cider vinegar to make it more sour.
10. Strain the cider into a container. I strain once with just the mesh, then a second time with the cheesecloth over the mesh. That second step is optional; most mesh strainers will do a perfectly good job on their own.
11. Serve hot or cold, straight or diluted 1:1 with water (like I said, it's pretty concentrated). Store in the fridge.
Fun twists to add: ginger beer, caramel sauce, maple syrup, lemon juice, thyme/rosemary syrup, extra cinnamon imperials
Garnish suggestions: whole cloves, cinnamon sticks, star anise, allspice berries, apple slices, lemon/orange slices, zest, thyme/rosemary sprig, lemon balm/mint/basil leaves
Alcohol ideas: rum, bourbon, whiskey, applejack, triple sec, mojito fixings, moscow mule fixings, anything cinnamon or apple flavored, and my favorite: fireball 😁

Something Spooky This Way Comes
There is something in the air now that the days are getting shorter. School bells are ringing, the air has a small hint of crispness, and the stores are all gearing up for Pumpkin Spice everything. That doesn’t exclude Birds of Valhalla. We have Autumn in our studio ready to come directly to you.

{Ichabod’s chase cut soap: From the story by Washington Irving, set in Sleepy Hollow, New York, the studio isn’t all that far away. So there’s a bit of historical fiction in each bar you get. The olive oil based soap might even moisturize the Headless Horseman’s pumpkin!}
Ichabod Crane would surely know a thing about losing one’s head over something to die for. Luscious, luxurious soap scented in pumpkin, sandalwood, tonka, and oud brings Sleepy Hollow from the studio to your shower in Ichabod’s Chase. The Headless Horseman surely will stay beyond the bridge as you bathe in the autumn wonder. The swirling orange, black, and yellow remind us of the carved pumpkins we all see lining the porches of homes during October. Topped with a carnelian tumbled stone, this soap really says “Here comes Fall!”

{Cranapple Orchard: One of the easiest scents for fall is apples. Apple Harvest and Cranberry combine together in this scent-sational bar to dropkick you right into autumn and make you crave that pumpkin spice and sweater weather.}
An almond based soap is a bit of a change for Birds of Valhalla, so be careful if you have a tree nut allergy when ordering this next Fall soap. Cranapple Orchard, named by some awesome people on TikTok, combines two fall staples: cranberries and apples. The scent brings memories of cranberry sauce at Thanksgiving and apple pie. The red and green colors in this bar, done by ethical mica powders, swirl together to paint the picture of crushed cranberries and bright green apple skins. While the fruits may be a bit tart, this scent is sweet and alluring (just a little disclaimer to say that while the soap may be olive oil based, use food grade oils, and smell good enough to eat there is a song at Birds of Valhalla that says “Nope nope nope, don’t eat the soap!”. So please don’t eat the soaps, it’s very much NOT recommended.)

{How Do You Like Them Apples? Another soap with special ingredients? Oh boy! And of course it has to come with a pun. The orange, red, and green soap looks like it has fall leaves resting on the green grass as summer fades into autumn.}
“How Do You Like Them Apples?” is probably something you’ve yelled to someone before, or heard someone yell when they were maybe a bit peeved. Well, we’re sure you’re going to be asking someone about this when you let them use this soap in your kitchen or bathroom. But be careful if you have that tree nut allergy again, this soap does have almond oil again. It also has breast milk so it will be luscious on your skin and create that lather that everyone craves in their soaps. I’m not sure I know of anyone that can turn down caramel apple pie and some pumpkin pie too. This soap perfectly captures the fall dessert table with pumpkin, caramel, crisp apples, and a hint of bourbon. Grab your fall dessert bar right here!

This soap is a solid apple pie… you just can’t eat it. While you can’t eat it, you can smell good enough to eat.}
I know! Another dessert bar of soap is here on this lineup. With ground oatmeal in this nourishing bar of soap, the bar will help exfoliate your skin and leave you smelling divine! Someone just might want to gobble you up like you were a dessert. (And honestly, who wouldn’t want that compliment? We’re all snacks.) This bar of soap is topped with real oatmeal and ground nutmeg. I know, we all expect stones or ethical glitter on top of a Birds of Valhalla soap, but this time the soap doesn’t need it. This Applewood Bourbon soap brings us the feeling of an apple orchard and some applewood bourbon barrels. This soap is a limited supply and when it sells out, you probably won’t get your hands on another bar. Much like the rest of the soaps with Birds of Valhalla, this is one you’ll want to get more than one of. You can feel the authenticity in it and how every person who handled it before it was sent to you really likes what they do.

{Poe-Pourri: Potpourri is known for being a mix of fragrances and this soap mixes many fragrances. Over his lifetime, Edgar Allan Poe lived in many places so it makes sense that his soap would be colored with multiple pigments and have multiple scents.}
Edgar Allan Poe is known for his macabre stories and poems. Known for his titular piece The Raven, this bar is stamped with a raven stamp and has a crystal raven skull on top. Or another option you have, because this bar comes in three ways, is with a black heart to call back to the Tell-Tale Heart. On the top of the bar besides the crystals there are dried rose petals for Annabelle Lee. The scent of this bar is patchouli, vanilla, cardamom, berry pies, salt, cloves, and brings to mind the crisp autumn air by the sea. You can receive a fluorite skull, an obsidian heart, or both. These three options allow for versatility just like the beautiful coloration of the soap done with ethical mica and activated charcoal.

I have been a big admirer of Admiral Hotel Manila - MGallery ever since it opened its doors last year. The reimagined Admiral Hotel pays tribute to an early 1940s iconic landmark and relives the grandeur of the city's Golden Age. We had visited this beautiful hotel on our own a couple of times already for their Admiral Club Manila Bay weekend brunch on the top floor, but this time, The Hungry Kat was invited to sample their new Festive Afternoon Tea that is perfect for the holiday season.

Set along the sweeping Roxas Boulevard, the Admiral Hotel Manila - MGallery is a gorgeous hotel offering a storied legacy, a prime location, and lavish indulgences in many forms. You can immediately appreciate the hotel's aesthetics once you enter the lobby. Art and history come together at El Atrio lobby lounge. This is open from 6:00am to 11:00pm daily offering exclusive coffee and tea blends, cocktails, plus sumptuous patisseries from a local chocolatier.

For the month of December, guests can enjoy their luscious afternoon delights with the Festive Afternoon Tea at El Atrio. For P2,888 nett, this afternoon tea set is good for two to three persons and includes two rounds of coffee or tea.

Let's start with the savoury items on the top plate. You can find the Smoked Salmon Rillettes Choux with lumpfish caviar and the Seared Foie Gras with raspberry jelly on brioche toast. I love anything with foie gras so this was obviously one of my favorites.

On the middle plate you can find the Scallops Kilawin with mango salsa, Winter Root Vegetable Tartlet with whipped feta cheese, and the Black Truffle and Ham Croquette. The scallops kilawin was a surprising item, giving it a Filipino twist.

The bottom tier comes with sweet inspirations such as the Buche De Noel, Mille-Feuille with Christmas Spices including poached pear and salted caramel cream, Tatin Style Apple with breton cookie, plus the Milk and Dark Auro Chocolate Mousse. All of these bite-sized desserts are quite delightful.

Of course, the most important element of the afternoon tea is the tea itself. Guests can choose from a selection of TWG Teas which include flavors like English Breakfast, Vanilla Bourbon, Jasmine Queen Tea, Earl Grey Fortune, and Orange Blossom Oolong. Coffee lovers also have the option of having Vittoria Coffees including lattes, Americano, Cappussino, Macchiato, or the Bistro Pot Cafetiere by Nick Munro.

Instead of the traditional scones seen in British afternoon tea sets, Admiral Hotel Manila's Festive Afternoon Tea comes with the more savoury Vol-au-Vent Pork and Chicken Adobo that you can pair with liver sauce. This gives the set a more Filipino flavor that really blends well with the setting.

Another Filipino favorite is the Bibingka with coconut jam and sour cream that is also included in the set. You can really feel the Christmas spirit when you avail this festive afternoon tea set.

After enjoying our lovely merienda at El Atrio, we were given a short tour around the hotel led by Admiral Hotel Manila's Assistant Director of Marketing Communications, Katrina Nocom. Each boutique hotel in the MGallery collection tells a unique story, inviting guests to immerse themselves in tales of adventure, romance, history, and culture. For Admiral Hotel Manila, this location is right in front of the Manila Yacht Club so I'm sure there are plenty of stories to tell within these walls.

The Admiral Spa and the Fitness Center on the ground floor both offer health and wellness activities for guests. The spa has some promotions for couples this month so I'm thinking about getting some pampering done.

Then we went up to the rooftop level which houses the Admiral Club Manila Bay. This is a unique dining destination located on the top floor which comes with a stunning Manila Bay sunset and a catwalk table that will spice up your dining experience.

This is also where our family gathered together for a Sunday Brunch mini reunion earlier this year. The Admiral Club is a great venue for parties and events with its bright and colorful interiors.

Just outside is the pool area which is where you can enjoy the magnificent views of Manila Bay.

Guests can bask in the Sunset Hour at Coconut Grove with their unlimited cocktails paired with one savory platter from 6:00pm to 8:00pm for only P1,850 nett.

We wanted to stay longer to watch the Manila bay sunset, but we had one more very interesting place to explore downstairs. This was a room that we were curiously looking for during our last visit here but we just couldn't seem to find it. This time, we had Ms. Katrina to help us finally get inside.
