Vegan Bun Rieu (Vietnamese Crab Noodle Soup)

This recipe has been adapted to use easy-to-find and affordable ingredients outside Asia. Traditionally, Bun Rieu chay includes perilla leaves, vegan shrimp paste, shaved morning glory, and other add-ins.

The first thing you encounter when you stumble on Bún Riêu Gánh is the colossal pot of red-orange crab broth simmering right there on the sidewalk. The name of the venue alludes to the gánh, or a wooden yoke traditionally used by street vendors to carry their goods, to which the pot is attached. From this pot, brimming with seafood and herbs, the shop’s owner, Mrs. Mai Thi Lien, ladles each bowl to order. 

A four-decade-old mainstay located near the bustling Ben Thanh Market, the restaurant’s namesake noodle soup, bún riêu, combines rice vermicelli noodles, or bún, with riêu, or a crab paste which is typically combined with pork, shrimp, and prawns to create a solid, meatloaf-like consistency. Also in the bowl are heaping chunks of tofu as well as huyet, or coagulated pork blood, while a side plate of herbs includes perilla leaves and basil. 

Though the dish is believed to have originated in northern Vietnam, it’s become one of the most popular noodle soups throughout the entire country. Here, Mrs. Lien serves her bún riêu with an accompanying dipping cup of tamarind fish sauce with sliced chili and pure shrimp paste. The use of tamarind is distinctly southern: twirl up the noodles with a piece of crab paste and dip it all into the sauce for a pop of tangy brightness.

it all started when i noticed that the star of fëanor on a red banner is literally the viet flag....

sometimes i like to think of lembas being like bánh nàm or bánh ít. lightweight, small, easy to make and eat, simple ingredients wrapped and steamed in fragrant banana leaves! i initially considered bánh chưng/tét for lembas bcs they’re super nutritious and filling but maybe too heavy for travelling? the extremely lenghty and labour heavy preparation and making process of them feels like something immortal beings would love though! 

in valinor lighter meals like summer rolls are popular in alqualondë and also seafood noodle soups like hủ tiếu and bún hến. tirion cuisine is consisting of hearty, flavory meals like phở bò / gà, various curries and also fried food like chả giò and bánh xèo. i also assign bún riêu to tirion even though it uses seafood ingredients but i feel like its heavy character fits more to tirion than alqualondë. i like to think that they use a lot of curcuma and ginger in the kitchen, too. the moriquendi sticked to the glutinous rice brought to middle earth by oromë and use it as a base for most of their dishes: dipped in roasted and ground peanuts + sesame seeds, steamed with peanuts, xôi gấc or eaten with curries and salads.

i would love to include a larger variety of trad viet clothing in my art but it's so complex and research-heavy and i'm just a simple story teller who has an offline life 😭 i will stick to variations of the basic áo dài and the collar for now😭

🎨 Favourite colour: hmm many. I guess it's more about the combination of colors. I definitely like black, pink and crimson on their own. But I like pastel and neon color combinations a lot. Other than that, I like ochre x purple, vermilion x green, ochre x white, pink x green, white x gold, etc. (artist occupational hazard of being into too many colors)

📖 Currently reading: I'm illiterate The Autobiography of a Flea (a very interesting Elizabethan erotica i found on tumblr), The time traveler's guide to medieval Europe, been trying to read Guns and Steel for about 10 years now lmao.

🎶 Last song: the lastest ones are Lana Del Rey's Siren old album because they are perfect to listen to on the road, I was on vacation when I answered this!

🎬 Last movie: Haven't been watching movies lately tho. But here goes. Bullet Train is the newest one. It's alright, I watch it for Sanada-sama, tho I hate that women got the end of the stick im that movie. Annihilation, the main cast is all women and the story is about sufferings. and I really like it. It's a depressing movie but it's very relatable.

📺 Last series: Dimension 20 does it count? But anyway I'm obsessed with this season. Other than that I watch Harley Quinn series. And rewatch Severance and Fleabag cos i like pain.

🍴Sweet, spicy, savory: spicy and savory. I like a spicy and sour drink too!

🤤 Craving: nem chua Thanh Hoá (fermented meat sticks) even though Im going there right now, mắm tép (fermented shrimp sauce), hamburger, bún riêu ốc (crab and snail noddle), bánh xèo (crispy shirmp fried cake), spicy orange tea.

☕ Tea or coffee: I'm a huge tea bitch. All sorts of teas, except all English teas. Oh i especially like drama tea 😏

🤓 Currently working on: Patreon page, timelapse videos, ideas for comic, finishing the last com of this month, some small illustration wips, picking up modding and vp in cp77 again, and final course work but i hate it so much haha.
