Tofu and Basil Bruschetta💕💕 This bruschetta features a protein-rich pesto.✌🏻️✌🏻️Make this creamy and crunchy pesto by adding tofu and walnuts. I'm not really a nut person but the only time you would see me crazy over nuts would be when they're mixed into something. We know that nuts give extra nutritional value especially flavour and texture. I also like to use pine nuts, like traditional pesto. Pine or cashew nuts give creaminess whereas walnuts add crunchiness to it. Of course, this recipe is also perfect for adding to pesto pasta. I can have #pesto all day long, anytime for #breakfast, #lunch, #dinner or even #snackingtime! so I'll see it. 💋💋💋💋 😘 😊 why don't you add this simple healthy dish to your home party or picnic this weekend?? ⠀ ■Pesto⠀ 200g (7oz) firm tofu or silken firm tofu⠀ 30g (1oz) basil, chopped roughly⠀ ½ teaspoon salt⠀ 1 tablespoon extra virgin olive oil⠀ 40g (1½oz) walnuts, crushed or chopped roughly⠀ ⠀ ■Garnish⠀ 4 pieces of wholemeal bread or gluten-free bread⠀ 6 to 8 cherry tomatoes, sliced ⠀ Freshly ground pepper⠀ ⠀ 1. Remove excess water from tofu by boiling or let stand with weight for 30 minutes.⠀ 2. Put the basil, tofu, salt and olive oil in a mini food processor and blend until smooth. Add walnuts and blend further. Please do not over blend, so you can enjoy a little crunchiness.⠀ 3. Toast the breads.⠀ 4. Spread the pesto on the toasted bread. Arrange the tomatoes on top.⠀ 5. Serve with freshly ground pepper.⠀ ⠀ ■Tip: This tofu basil pesto is great for pasta. To make enough pesto for pasta to serve 4 people, make three batches. [Quinoa Inari Sushi]⠀ ⠀ This recipe is much healthier than traditional inari sushi🇯🇵I add quinoa to make the rice light and nutritious💪🏻💕Traditional inari uses much more sugar and soy sauce, but I have cut it down to the bare minimum✌🏻️✌🏻️ but it still tastes nice because of one cooking tip 😉 most people put all seasoning to cook the pocket but, do my way ( add soy sauce later to let the sweetness absorb first) check the recipe from my cookbook #cookingwithsoy here 👍🏻👍🏻 [Quinoa Inari Sushi]⠀ (makes 10 pieces)⠀ Sushi rice⠀ ¾ cup white medium-grain rice⠀ ¼ cup quinoa⠀ 1 cup water⠀ 1 tablespoon white sesame seeds⠀ 1 tablespoon black sesame seeds⠀ 2½ tablespoons sushi vinegar (or use recipe below)⠀ Inari⠀ 5 slices aburaage (refer to ‘How to handle deepfried⠀ tofu’)⠀ 1 cup water⠀ 1 teaspoon instant dashi powder⠀ 2 tablespoons mirin⠀ 1 tablespoon unrefined sugar⠀ 1 tablespoon soy sauce⠀ Garnish⠀ Pickled ginger⠀ ⠀ 1. To make the rice, wash the rice in a small⠀ amount of water using a kneading-like action⠀ with the palm of the hand. Drain and repeat the⠀ process until the water is almost clear. Wash⠀ quinoa with running water. Place water and⠀ rice and quinoa in a saucepan or rice cooker⠀ and leave to stand for 20 to 30 minutes before⠀ cooking. Alternatively, cook the rice and quinoa⠀ using the absorption method if not using a rice⠀ cooker.⠀ 2. Toast the white sesame seeds in a dry frying⠀ pan on medium heat until golden. Set aside.⠀ Repeat with the black sesame seeds until they⠀ have a slightly glossy appearance. Keeping the⠀ black and white sesame seeds separate, grind⠀ the seeds or bruise with a knife.⠀ 3. When the rice is cooked and while still hot,⠀ slowly add the sushi vinegar and stir through⠀ well. Using a handheld fan, cool the rice as⠀ quickly as possible.⠀ 4. Spoon half the cooked rice into a separate⠀ bowl and mix in the toasted white sesame seeds.⠀ Combine the remaining cooked rice with the⠀ toasted black sesame seeds. Cover the rice with⠀ paper towel and set aside.⠀ ⠀
